Express Yourself: Favourite Family Recipe

The Express Yourself Weekly Meme is hosted  Bouquet Of Books  and  Entertaining Interests .  This week's topic is: what's your favourite family recipe/meal? This was a hard one for me to choose because I love so many things but in the end I went with the first thing that had come to my mind when I read the question and that was lasagna rolls.  I think my mom first got this recipe from one of those mail subscription recipe clubs back in the early nineties, you know, they sent you a box and then recipes every month to fill it up? Does stuff like that still exist or is it all Pinterest and food bloggers?  Anyway, these things are just to die for.  They are probably a million calories but they are quicker than lasagna and they are made with Alfredo sauce so Ace will eat them.  (he won't do red sauce) Blah! B is for Banana Bread

My favorite recipe for Banana bread comes from my mother and I have it written on at least twenty little scraps of paper scattered all over my house.  I lose them constantly and it seems like I have to call her at least every second time I wanted to make it.  I think it drives her insane.   The bananas should be well ripened but I have taken to always keeping some in my freezer so they are always good to make bread with (always good for smoothies too). Ingredients: 3 ripe bananas well mashed (I use a potato masher) 2 eggs well beaten 2 cups flour 3/4 cups sugar 1 teaspoon baking soda Directions: Preheat oven to 350 degrees F.  Grease bread pan.  Mix bananas and eggs together.  Stir in the flour, sugar, salt and baking soda.  Pour into pan and tap on solid surface.  Bake for 1 hour. That's it.  Simple, easy and oh so delicious.  And now I won't lose it.
