Fresh figs cake



I was preparing this post to publish on last Tuesday . I had the pictures and just had to write the recipe.In the early hours of Friday my mother called  to tell me the sadder news, that my father had passed away, it was tranquil from a sleep to another. I like dedicate this post to him, I inherited  my artistic inspiration. He was a great art director and even a short time ago, he gave me lighting tips and how  should be my photos. He also loved sweets and know he would like this cake.

Apple and candied ginger cake






I wanted to make some snacks , something with autumn flavour. On my last visit to Chinatown, I bought candied ginger and had not used until yesterday.







I decided then, to bake this apple cake, because I'm still looking for the taste of ONE apple cake that I ate in college, is not the same,of course, but it was delicious, moist and spongy and I hope you enjoy









Ingredients



  • 150 g butter
  • 175g brown sugar
  • 2 tablespoons sugar
  • 2 tablespoons molasses
  • 2 tablespoons chopped candied ginger
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • A pinch of salt
  • 150 ml of milk
  • 1 beaten egg
  • 2 apples peeled, grated
  • 1 tablespoon lemon juice

Method:
  • Heat the oven at 170 ° C
  • Grease and flour a 9x13-inch baking pan or spray with baking spray with flour.
  • Melt the butter with sugar and molasses. Leave to cool
  •   Sift flour with baking powder, salt and baking soda
  • Add the mixture of melted butter with the beaten egg and milk
  • Mix well and put the grated apples and  chopped ginger
  • Bake for 35-40 minutes or until golden brown

  • Makes 12 servings
