Vegetarian skewers with mint yogurt sauce




A while ago we were touring into the countryside, in Uruguay, in  Rocha. We walked a lot and ate very well. Fresh vegetables from the farm and still with a bit of the hearth in which they grew up. More fresh than that, is impossible.
Many salad with assorted vegetables were our main meals.






 So I hung up the apron, and ate fresh and wonderful things, like salads as I show you down, A  pink variation of the classic cole slaw and a cooked vegetables covered with a golden garlic.


It was great to relax watching the beautiful prairies and animals. By the way, did you know that an rhea egg is equivalent to a dozen chicken eggs?  My grandmother bakes a great sponge cake with a single rhea egg.





We strolled around the narrow streets of the small town of  Rocha where I found beautiful ironwork noticed some French-inspired homes of early last century. We walked by small businesses with beautiful props and it seemed that life in that city was  very tranquil. And as well the peopñe are very friendly and peaceful









We find in a small street market  very fresh   rose new  potatoes and that inspired me to make these vegetarian skewers  whit  mint yogurt sauce .





Vegetarian skewers  with  mint yogurth sauce 



Ingredients



  • 1 eggplant
  • 2 small red onions
  • Half butternut squash
  • 4 new potatoes
  • Olive oil to drizzle


For the dressing



  • 200 ml of yogurt
  • Fourth  fresh mint leaves
  • 4 tablespoons  cream 
  • juice of half  lemon
  • 1/2 teaspoon of salt
  • pink pepper minced



Method:


  • Cut into vegetables into dices , add salt and pepper and roast .
  • Bake until they are cooked and soft
  • Remove and place on skewer sticks and brown on all sides on a grill.

    For the dressing


      • Put all ingredient on a blender and mix well, serve chilled

      Summer days, ask for citrus


      With the heat I left aside complicated  dishes, which moreover are not my thing. I love easy meals, simple and tasty.




      It's time to go outside and enjoy the weather. Chatting with friends or taking walks and it´s time to drink some refreshment and cooking light meals, as well




      And to these days nothing more refreshing than a lemonade and citrus-based desserts.


      I always have a wildcard in the refrigerator that inspires me to make the most delicious and refreshing dessert. Lemon curd.




      With it you can let loose the imagination and do something like this.


      Press in papaya wafers , topping with lemon curd, fresh fruits, whipped cream and chocolate chips. 


      It is very useful to have at home some lemon curd, and remember it can always be stored for up to two weeks in the refrigerator.








                                                             Lemon curd

      Ingredients




      • 5 egg yolks
      • 1 cup sugar refined
      • 3  washed lemons (juice and zest)
      • 100g butter









        Method :
        • Mix the egg yolks with the sugar.Beat well until pale and add lemon  juice and zest .
        • Meanwhile put water to boil in large saucepan.
        • Take the egg mixture to cook in a double boiler, stirring constantly until thickened, and adhere the spoon. Remove from heat and add the butter into pieces and stir until melted, repeat until all the butter finish.
        • Place cold  in a glass pot and cover with film. Refrigerate and use when needed.
