Baked Potatoes with Yogurt and Sour Cream

I love potatoes, all kinds of potatoes, made in a variety of ways.  My least favorite is potato salad because I like my potatoes hot.  Bake them, boil the, fry them or roast them, I love potatoes.   I grew up on potatoes and sour cream.  In our home, it was a comfort food.  It always appealed to me and I loved when Mom made it.  I also liked when she put both into borscht. This is a super easy dish to make but it tastes like a million dollars. It is almost embarrassing to post this but it tastes so good.  The plus is that it is made with half yogurt and half sour cream, cutting the calories.  I would guess, you could make it, totally with yogurt. We are big fans of smoked salmon so I knew, we would like this, which we did. I made this, the day after Passover ended and I had not shopped yet so I am missing capers and of all things, lemons. That is what happens after the holiday. I made do with lemon juice but I am sure the zest would have turned this into a more flavorful dish. This is a throw together dish and took little time to make. Mashed Potatoes and Parsnips

It is potato month at Thumbs Up.  Please look at the bottom of this post for information. Not that long ago, I used parsnips in my chicken soup and no where else.  I could not imagine parsnips having a value of their own.  Of course, I really had not tasted parsnip.  In the soup, it had melded with other wonderful vegetables and of course, chicken. One day, I came across roasted vegetables with parsnips included.  I figured, I had nothing to lose with all those vegetables that I knew would be good.  That is when I discovered that parsnips have a life of their own.  Now when I see parsnips in a recipe I want to make it immediately. I have made this particular recipe before but I don't remember posting it and it is as simple as can be and has a subtle taste.  If you like mashed potatoes, I think you will like this dish. Broccoli and Cheese Quiche

This is a recipe from Eating Well .  The original recipe has ham in it but we do not eat ham, nor do we mix dairy and meat.  It was simple to adjust this to make it kosher, just ignore the ham. I am wondering how many bloggers make adjustments for food because of health issues or religious reasons.  I am guessing that the answer would be, "quite a few."  In these days, people tend to be on different diets, not simply to lose weight but to build bodies, to avoid toxic substances (specific to them). What I discovered is that it is not particularly difficult to deal with many of these issues.  Gluten-free has become commonplace in the markets.  My  husband noted, the other day, he saw items that mentioned having gluten.  Not only do we have gluten-free, we now have notification of the presence of gluten.  I have to say that hubby does not have a serious reaction to gluten which does make it easier.  We don't have to worry about h...

I admit it.  This did not call my name.  While, apples are marvelous, hash does not have enough oomph to its name.  When one thinks about it though, hash should be delicious.  Oops, I guess it depends on which definition you use. This is from Your Dictionary to chop (meat or vegetables) into small pieces for cooking INFORMAL  to make a mess or botch of; bungle Origin: Fr  hacher , to chop, mince: see  hachure noun a chopped mixture of cooked meat and vegetables, usually baked or browned a mixture, as of things used before in different forms; rehash a hodgepodge; muddle; mess I would prefer the chopped mixture to the muddle or mess.  Looking at it though, it does look messy.  The taste is far from messy and is a delight to taste.  This would make a good topping for salmon or chicken.  It would enhance rice or quinoa.
