Cheesy Pizza Dip - CEiMB QED

I was baking cookies very happily and felt a rush of hunger.  Sitting on my kitchen table was Ellie Krieger's, latest book, so I did what comes naturally and looked through the pages until, I came to this cheesy dip, made from a simple Marinara sauce and mozzarella and Parmesan.  To make up for the fat in the cheese, I dipped cucumbers in it and it was scrumptious. You can find the recipe for this here.   If you are really, in a hurry, take out a bottle of marinara sauce, ready made and mix with the cheese and then microwave and you have a snack in minutes. Craving Ellie in My Belly - CEiMB Margaret of Tea and Scones   Tuscan Roasted Chicken and Veggies When I saw this was picked and who selected it, I knew, this was going to be a winner.  Margaret is someone I admire a great deal and trust whatever she chooses, to be delicious.  Check out her blog and you will understand why I say this. Ellie has come through, in the past, with her meat and poultry recipes and I was looking forward to eating this one.  I was not disappointed.  She highlighted tomatoes and zucchini as her vegetables of note.  As tomato lovers, this was fine. I actually have made this twice already.  That means, it is a successful recipe and I think it is one that most people would enjoy.  It is not elegant or elaborate.  It is simply good food with good flavor. Apple Pecan Muffins CEiMB

Craving Ellie in My Belly-CEiMB Apple-Pecan Muffins  Joanne of Apple Crumbles chose these delicious muffins for us to bake. I  was thrilled when I saw that we were baking Apple Pecan Muffins, this week, in CEiMB because these are a favorite of my husband's.  Muffins are quick and easy to make and these were healthy, using applesauce and only 1/4 cup Canola oil.  Everything said, "good" about his recipe. I had all my ingredients out except for the pecans and was raring to go. Alas, the pecans had disappeared.  I keep my packages of nuts in one place and that is one food item, I do not have difficulty locating.  Normally, it is sitting on the nut shelf but not today.  There were walnuts, almonds, pistachios and cashews along side of pine nuts and several different dried fruits.  There were ground nuts, chopped nuts and whole nuts.  There was even coconut.  The only item missing was my container of pecans.   One thing, I was sur...

Spicy Egg and Avocado Wrap Marthe of  baking blue finger CEiMB This recipe should have been doomed from day 1 but it wasn't.  It was a series of events that kept me saying, "I will skip this one." First, I didn't get to see it until late . Then, I could not locate the recipe and I still have not. I did find something online with the ingredients and I put them together and hoped this is what Ellie wanted. Then, I could not locate corn meal wraps. I knew I did have an avocado but that seemed to be missing. I didn't have a cucumber. Does this sound like a game to you.  It felt like one.  Each time, I took a step forward, something else went awry. Hubby rescued me and brought home from work, tonight, my cucumber and wraps.  I found the avocado. In the meanwhile, not knowing if hubby was going to find what I needed, I made another dinner, a delicious corn-potato soup and sole in an orange/honey-mustard sauce.  In the end, we ate the fish with the wrap and finish...

Peach Pie Smoothie

Photo: Peach Pie Smoothie Recipe Food Network photo I saw the name Peach Pie Smoothie and had to make it.  I am sure if this had been called a peach smoothie, the recipe would have been the same and I would have passed it by.  I am sure, I am not the only one who is attracted by the name of a recipe or the ingredients.  So, because of the word, "pie", we are drinking healthy and delicious peach drinks.  I have a feeling, next time, I make this, I will add almond flavoring and blueberries to the peaches for a variation. Spaghetti with Roasted Tomato and Almond Pesto - CEiMB

This week, at Craving Ellie in My Belly, Ellie selected the recipe of the week.  This is exciting for all of us.  In the end, I almost did not make it because of my schedule and I was disappointed and then tonight, I realized, I could fit it in.  I am glad, I did.  Ellie's recipes are generally well accepted in our home and this one also was. I was sure, my husband, was not going to like this since he is not a great fan of roasted tomatoes but mixed with the Parmesan, basil and almonds, it turned into something much better and he even commented of the fine flavor of the dish.  Ellie has another success. This called for wheat spaghetti and I, of course, used brown rice pasta, to accommodate the needs of my husband.  I don't know, anymore, if food tastes better if it has gluten.  Of course, I do eat at outside events but I am not seeing a difference in the food.  I also did not use the garlic but used garlic rice vinegar in place of the wine vinega...

Asian Noodle Bowl ----- CEiMB

Since, I have closed down Chaya's Comfy Cook, I am moving my group recipes from Craving Ellie in My Belly  (CEiMB) .  For those of you, who are new to this group, we are cooking Ellie Krieger recipes from her two books, So Easy and The Food You Crave.  Ellie known for healthy eating and the group has found that most of her recipes are easy and delicious.  We make everything from main dishes, sides, salads, soup, to desserts, baked goods and drinks and anything I may have left out.  You might want to join in with us and if so, stop by the site and sign up.   The group is composed of the nicest people and there is an active core.
