Cabbage Casserole

I have been trying with a minimum of success to share with you the recipes I made for the jewish holidays.  I look at my photos and unfortunately, in some cases, I have no idea what they are.  Kugels and casseroles have similar looks.  I am guessing, this is a cabbage casserole but I am not sure.   What I am sure of is that it was delicious and went quickly.  I am finding more and more ways to make cabbage.  It is a versatile vegetable and mixes with many other ingredients.  Forget only using it for cole slaw.  It is a multi-"talented" veggie. Potato, Zucchini, Goat Cheese and Cheddar Gratin

POTATO------I love potatoes.   To me, potato is the ultimate comfort food.  Bake it, boil it, fry it, grill it, all are wonderful.  I had to make this recipe and of course, I love the dish.  Oh yes, I love goat cheese too. Potato, Zucchini, Goat Cheese and Cheddar Gratin Ingredients: 1 medium zucchini, sliced thin 4 medium potatoes, sliced thin 1 red onion, sliced thin 1 tablespoon olive oil 4 ounces plain goat cheese 2/3 cup white cheddar cheese 1/2 cup Italian Dressing Method: Preheat oven to 400°F. Pour olive oil in a casserole dish and spread to cover bottom. Layer potato, zucchini, red onion, goat cheese. Pour half of the dressing over this. Repeat layer. I had enough for a third layer of potatoes so put on another layer and cover that with Cheddar. Bake for 30 minutes.  Cover and bake for another 15-20 minutes. Eat and enjoy. Potato Cabbage Sausage Dinner

This is the first meal of my experiment to actively show you how I use what is in the house, ready to leave this world, if I don't save it. My biggie was the bag of shredded cabbage, I had planned to used on the Sabbath, and then just didn't bother with it.  The other was a package of Italian sausages with only two left.  Potatoes, carrots, onions and apples are usually on hand. Although I did add black pepper, this does not need much in the way of spices.  The sausage is strong enough to permeate the vegetable.  The crispy apple adds the crunch (slight) but it makes a difference. Ingredients: 2 Sweet Italian Sausages. sliced 1 huge onion (Costco style), rough chopped 3 large potatoes, rough diced 2 large carrots, sliced 12 ounces of cabbage 1 - 3 apples, rough chopped in 1 teaspoon brown sugar 2 cups organic vegetable soup water or additional soup if necessary Method: Spray a large skillet with cooking oil (olive) Brown the sausage and chopped...

  I am back to making new lunches for myself, once again.  I wish, I could share with you, the feelings, I have about this.  It has taken the "eh" quality out of lunch and makes each time, I make it, into a mini occasion.  I have to think about it.  I have to purchase items for the recipes rather than work around what I have, on hand.  I want it to have some interest for you and I don't want it to be silly, like sharing how I put cheese on bread. In one way, this is easy because it is more fun than simply grabbing a slice of cheese and it is challenging because I am attempting to make a variety of food for the interest dimension. Tomato Casserole

I have been doing a lot of my cooking based on what is in the house.  I have some beautiful tomatoes, big and juicy, but nothing special to do with them.  I looked up recipes, on the Internet for a tomato casserole.  I came up with a few interesting ideas.  I made one from group recipes.  It turned out to have an interesting taste, flavorful but not sharp, as tomatoes can be.  In my opinion, this makes a great salsa rather than a casserole but we ate it as a side.  I wouldn't mind having this, on hand, to be used at will.  I see this with rice or pasta, with beans and bell peppers.  Mix in cheese and spread on toast.  Tomato Casserole/Salsa Ingredients: 2 Tablespoons olive oil 1 onion, chopped  1/2 cup chopped yellow bell pepper ...

Breafast Casserole

I was visiting Honey From Rock and came across a delicious looking recipe for a salmon      quiche with potato and dill.  An hour later, hubby and I were eating a variation of the recipe and it was as delicious as it looked on her blog.  Go to her blog to see the quiche recipe and I will share my version of a casserole with all that goodness. This is the kind of meal, I like, for breakfast, lunch or dinner.  It is food, I simply love and I could eat it, every week, with ease.  I want to try it with sliced tomatoes or with spinach.  I think that would give a nice variation.  If I had plain yogurt, I would have used that instead of the sour cream and plan to do so, in the future. We both enjoyed this immensely.  There is a small piece left and I am wondering which of us will get to it, first. Serve this with a salad of greens for a counterpoint to the casserole.  Yum.
