Rush Hour Chili - Ellie Krieger

This dish is in prep for the cold weather that will surely come our way in the near future although that is hard to believe, at the moment, with the sun shining down upon us with such a strong force. This is the perfect dish to come home to, after work, when I am tired and want to warm up.  It can be made ahead of time and it can be served with noodles, rice, quinoa or vegetables. Rush Hour Chili was selected by Gaye and is found on page 101  in Weeknight Wonders by Ellie Krieger.  This book gets closer to my heart and tummy with each recipe I make.  This is another easy to make meal that fills you mouth with flavor.  I would gladly make this again.  Thanks Gaye. I shouldn't like chili because I don't usually like mixed meat and vegetable dished but this chili was very good.  I went back for seconds. Turkey Chili Ingredients: 1 pound lean ground turkey (lean) 28-ounce can no-salt-added crushed tomatoes 2 cups water 2 large onions, chopped 1 tablespoons chili powder 1 teaspoon paprika 1/4 teaspoon ground black pepper 1/2 teaspoon ground cumin 1 teaspoon dried oregano 1/8 teaspoon ground red pepper (or more to taste) 2 teaspoons brown rice flour one 15-ounce can no-salt-added black beans, drained and rinsed 2 cups frozen corn kernels  Method: In a large skillet over medium-high heat, brown the turkey, stirring to break up the meat.  Drain the fat. My turkey had almost no fat. Add the tomatoes, water, onions, chili powder, paprika, black pepper, cumin, oregano, and red pepper. Mix thoroughly. Darcy's Veggie Chili Soup

The idea of a chili soup is quite appealing, if you like chili, which we do.  We had this last week when the weather was North Pole style.  Going outside was a challenge if you were not bundled up from the tip of your head to your toes.  The wind was galloping to the point that it moved me a foot down the street.  Winter certainly arrived with a full force. This soup was just right.  It was warm and it was filled with goodies. Turkey Chili compliments of Hubby

This was the best chili we have had and hubby proudly made it.  It was light with the turkey and zucchini as major players.  The original recipe was to be more spicy but according to the chef, it should not be that way so out went the chilies and garlic. It is unusual for me to take a second plate but I did.  I was not full after one dish; it was really light.  the original recipe called for bulgar and we chose brown rice in place of this.  Hubby made it separately from the rest of the chili. This is a great dish for the colder weather and my reaction to hubby was, you can make this once a week, for the rest of the cool and cold weather. Chicken Chili - Ina Garten

This is the first Friday of the month and that means, INA FRIDAYS.......Wow!  This month is main dishes and I looked through many of Ina's delicious recipes until I came upon this Chili.  I had just baked some cutlets and wanted to make a sauce for them but it was more fun turning them into chili. You can make this as spicy as you want.  Since hubby does not enjoy spicy, I used a mild salsa.  Go ahead and choose a spicy one.  Add more red pepper flakes or cayenne.  Follow your instincts on this one. Maple Glazed Chicken - Donna Hay

Easy Entertaining is the them of the I Heart Cooking Club - Donna Hay recipes for this week.  I would love to do this one, every week, since Donna makes classy recipes that are easy to make and that is what I want.  After years, of cooking, I faced the truth, I like an immediate response and that is why I look for recipes that are done quickly with a limited amount of effort but with good flavor.  This is the perfect example.  The combination of the chili and pure maple syrup makes this chicken special and I would serve it to guests as well as eat it, like we did on a normal evening. What Dinner Looks Like the Week Before Passover

For me, this week, one week before the holiday is the most disorganized week of the year and repeats itself, annually.  At this point, my kitchen is ready to be used and I can actually cook again. Last night was another story.  I was still in the middle of the Pesach transformation.  A few hours of scrubbing and washing pots and pans and I was ready to go.  In those few hours, we really had to eat something and I made a delicious dinner without cooking.   It was hot and steamy and well seasoned.  I had a package of chili (Ellie Krieger's recipe) in the freezer.  I had defrosted it and added in some cut-up tomatoes.  In the microwave, I baked some potatoes, heated the chili and that was dinner, served on a plastic plate with plastic flatware.  As I looked down at my plate, there was an empty space where the green vegetable was to go.  Oops, I forgot.  This is a hit and miss week and happily, we are making the best of it.
