I have Parent Teacher Conferences today and simply don't have time to justice to this post.  I am skipping my recipe and posting two fabulous soup recipes from last week's linkys.  Bear with me. I think these will make up for my lacking. Loaded Potato Soup by Organizer By Day . Can you imagine a cold winter night, snuggled up, in front of the fireplace with this bowl, in front of you?  Yummy delicious. Roasted Tomato Gazpacho - Donna Hay

This week, in our Donna Hay group, we are making my choice of a recipe.  I tend to gravitate to soups because we love them.  I am not sure if I ever had gazpacho but if I did, it was not memorable.  This gazpacho, at least to me, is memorable and I hope to make it often.   Not only, did I have soup, last night but I have been drinking it, all day.  OK, that is an exaggeration but I did have a number of mugs of this delicious soup. The cucumbers were perfect to float on top.  Even, my husband commented on this.  The crunch and subtle flavor was a balance to the stronger tasting soup. Since hubby tends to get sick from garlic, I roasted an onion and then blended it with the other ingredients.  I miss garlic but the onion did fill in the gap. My Love Affair with Karl Kabocha

I fell in love with Karl Kabocha the first time I met him.  Yes, love at first sight.  I bet you did not believe it happens but I am here to tell you that it certainly does.  While other look across a crowded room and their eyes meet, I tasted kabocha and my life changed. Karl must be in the house, at all times.  Who knows when I will crave kabocha?  What is especially good about Karl Kobacha is that he is willing to change for the occasion.  If I need a side dish, he is mashed.  If I want soup, he is liquified.  Other "men" have to be dressed up in a suit and bow tie or a pair of jeans and turtleneck.  Not Mr. Kobacha.  He is delicious plain. When I am done with Karl, I think, I will be able to write a book.  Will the book start with today's lunch, Roasted Kabocha Soup with Caramelized Onions?  Hmmm, it could. Here comes Tuesday, when Chaya lets me scout around, searching for good recipes and tempting photos.  Bizzy the Explorer (that's me) is searching for soup.  Isn't soup wonderful when the weather is cold and trust me, it is cold here.   Coming home to soup, bubbling away, on the stove, is a dream come true.  That would be for my husband.  I come home and the stove is cold and the soup is still that dream. Tonight, I made a Broccoli Cheddar Soup from Ellie Krieger's latest book, "Comfort Food Fix."  The book is filled with healthy recipes that are easy to make and tasty.  I have liked Ellie for a long time and cooked a share of her previous book.  My husband, without knowing, always likes her recipes, a lot.
