Chocolate, Banana and Coconut Muffins --- Donna Hay

This is a dessert week for the WwDH bakers.  We made  Chocolate, Banana, and Coconut Muffins.  I skipped the coconut because my grandchildren were visiting and they don't like coconut.  Instead, chocolate chips made a major difference to them. These were easy to make and my little granddaughter loves them.  She took one bite and gave a sigh of satisfaction.  The older grandkids enjoyed them as well. Banana - Chocolate Chip Bread Pudding

The idea for this recipe came from the latest Rachel Ray magazine which I altered.  The original recipe called for 10 eggs as starters so the amount was my first change.  I made a topping of sour cream and brown sugar which is not in the Rachel's recipe. I grew up, eating sour cream and bananas, topped with sugar and when I saw this recipe, I could taste that childhood favorite as if I was truly eating it.  This is something, I had completely forgotten about.  If asked what my favorites from the past were, I would not have come close to anything like this.  Actually, I don't like plain bananas although I do like them baked or cooked. Banana Mini Bundts

These bundts are not the small ones but the ones that are the size of muffins.  I used a recipe for muffins and the time for baking was a bit too long for this size. Everyday Baking is a book for everyone's library.  Many recipes take no longer than 30 minutes baking time.  If you are like me, time is of the essence and knowing something will be ready in a short time, means last minute guests can get a yummy treat. The selection of bakes is well rounded and appealing. I have not come across a recipe in which I didn't have the ingredients.  It is an accessible cookbook.  There is a chewy cherry chocolate chip cookie that is on my list and I am giving this serious thought for my grandkids.  After that, I have plans for an easy caramel banana galette followed by lemon scented blueberry cupcakes.  Yes, I could go on and on.  You will have to trust that there are recipes for everyone. It is Donna Hay time again and I selected this week's recipe, this interesting bread.  I have to be honest, I made this weeks ago and I have completely forgotten what it is like.  I hope, I can find the photos.  I hope the other bakers liked it.  I will learn NOT to be so organized. I hope this is the bread. banana, hazelnut and chocolate bread  (adapted) 125g butter, softened 1 cup  brown sugar 1 teaspoon vanilla extract 2 eggs 2 cups mashed banana ½ cup  toasted hazelnuts, chopped 1 cup  chopped dark chocolate 1¾ cups  plain (all-purpose) flour, sifted 1 teaspoon baking powder, sifted 1 teaspoon baking soda 1 teaspoon ground cinnamon ⅓ cup  maple syrup Preheat oven to 160°C (325°F). Banana Nut Bread - Taste of Home

I have come to the conclusion, one either loves bananas or hates bananas, at least in my family.  There are those like hubby who eats bananas daily and then there are my daughters who make the most unsophisticated sounds, if they hear the word banana.  Shame on you girls. I like bananas in a fruit salad or in a loaf with chocolate chips.  I don't enjoy a plain banana.  Actually, I grew up on bananas and sour cream.  Yummy. When there are always bananas in the house, one is apt to find some really ripe ones, somewhere.  I say this because this was the Case of the Missing Bananas.  My husband kept insisting that there were more bananas somewhere.  He was so strong about this , I suggested looking under the bed, in the attic and in the car.  Ok, that is a bit extreme.   In the meanwhile, I bought bananas and hubby was happy.  Then one day, I heard him proudly exclaiming, "I knew, we had more bananas."  Yes, he found...

Mango Nut Muffins

I am attempting to use up my nut supply.  I buy nuts in large Costco bags and freeze some of them, while I make hubby happy with nutty baked goods.  This week, I made him two nutty desserts, both muffin recipes but one as a coffee cake.  I doubled the nuts in both recipes so if you make this and don't adore nuts, cut them in half and you are back to the original recipe. I was excited about this recipe because it has mangoes and I leave some of the mango attached to the pit, for me.  Mango is such a treat.  This also has banana, my husband's favorite fruit but one he does not like in baked goods.  I used a banana that was not overly ripe, hoping it would not be so filled with flavor.  I think it worked since he did not pick up the banana flavor and it served its purpose in the batter.
