Peanut Butter Brownie Squares

The proof that this was a yummy dessert is that it disappeared quickly.  Do people like peanut butter as much as chocolate? Peanut butter is an interesting spread.  I put some on a cracker for my granddaughter who pushed it away.  Then, I gave her a spoonful of peanut butter which she loved and wanted more.  I happen to agree with her.  There is nothing like a spoonful of peanut butter, rich and creamy and delicious. I grew up on cream cheese and jelly sandwiches but I have a feeling others went the peanut butter and jelly route.  Did I miss out? Childhood memories of strange and delicious foods.  I used to take a sandwich maker which was a metal mold on the end of a long pole that you put in a sandwich and hold over the fire.  I used to put apple sauce between two pieces of white bread and "cook" it and it was out of this world.  Who would have thought....? Paula's Fudgy Brownies

No, this is not Paula Deen but these are certainly Paula's Brownies, Paula Shoyer, the Kosher Baker. While kosher baking is really no different than  your regular baking, there is an issue that does pop up. Briefly, an aspect of being kosher means not eating milk and meat together or for a period of time, afterwards (milk following meat).  That means having dairy baked goods is not practical. Picture it.  You just had a barbecue with hamburgers and hot dogs and your dessert is cheesecake.  No go.....you can't serve it.  That applies to cakes that have milk or butter in them and that explains why I usually use margarine or oil, rather than butter.  I use Rice Dream or another non dairy drink in place of milk or cream. Paula Shoyer wrote a book that is dairy free.  All her recipes, are what we call, pareve, neither dairy, nor meat.  Any of these can be eaten after a meat meal. Those who belong to the Secret Recipe Club  have a lot of fun.  I know that, each month, I look forward to finding out who my secret blogger is.  Then, there is the experience of exploring a new blog or one we have visited.  Most of us face a bit of frustration trying to narrow down all the recipes to just one.   I would be very disappointed if I didn't find one waiting for me, when the reveal came about. One blogger did not find any post for her, this month. Many of us felt badly about this, knowing how much fun, it is to see what someone has done to one of our recipes as well as what the blogger selected.  Our dear organizer, Amanda came up with a wonderful idea and asked us, if we had time, with about 18 hours left, to make something from the blog, Connors' Cooking . Peanut Butter Swirl Brownies

I am baking for Father's day.  The main dessert is going to be, I hope, a Chocolate Mousse Cake.  I have the cake part finished and it has to be frozen.  In the morning, I plan to make the mousse and ganache.  Since a few of my kids and their kids are coming, I have been thinking about child-like desserts, eaten by all, but loved by children. One must have brownies.  I thought, it was time to try out the Family Baking Book, once again.  I am happier with these than the last recipe, I made, from the book.   These are called Lunchbox Brownies and I chose a variation, making them Peanut Butter Swirl Brownies.  I was concerned because they used plain peanut butter for the swirl.  Other recipes, I have seen, mix the peanut butter with other ingredients such as cream cheese.  This time, it did not need anything else.  The strength of the flavor, standing alone, worked. Passover Baking - Brownies

rownies, PPassover starts the evening of the 19th - Monday night.  Our cooking for eight days is quite different in certain areas.  We do not use any leavened products.  What we buy must have a mark that tells us, it is made especially for the holiday. Meat and fruit and vegetables remain basically the same.  We just can't use any prohibited products.  To cut down on meat, I plan to have a lot of veggie meals for the middle days.  There are 4 days of the holiday, 1 Sabbath day and three additional days which we call Chol Ha Moed, and these are half holidays. Until, I prepare my kitchen, I can't cook anything for Passover, also called Pesach.  I don't want to wait until then to share some recipes for you, the readers.  Whether you are observing the holiday or not, you might enjoy some, if not all of the recipes. Brrrr.....ownies -- Baking With Dorie -- BWD

Find BWD on Facebook This week in BWD, we made Brrrr....ownies, leading us to a mint tinged brownie.  I didn't take photos and I am using the ones from a post, I did, in My Sweet and Savory.     This week,  Jen chose yummy brownies with a second flavor of mint.  A powerful and likable combination for us to enjoy and easily bake.  I made the batter with the raspberry mint patties which left a mint flavor that was an integral part of the brownie. This is a successful choice for mint lovers.  You will find this recipe on page 103 of  Baking From My Home to Yours by Dorie Greenspan. 

Brownie Buttons - Baking With Dorie - BWD

This week is a special week for the ladies of Baking With Dorie .  Many of us have been together for one full year.  We have shared the joys and challenges of baking old and new recipes.  We have bonded and made new friends.  We found success and possibly a little failure.  All of it helped us grow in our baking. Together, we chose Brownie Buttons for the big occasion.  These cute little brownies adorned with frosting are simply adorable.  I had some chocolate ganache left over so I did not make the frosting, Dorie specified.  Hopefully, the other gals made it so you can see what it is like. The more I bake from Baking From My Home to Yours, the more I understand why Dorie is my "go to" baker and her books sits, worn in my kitchen.  I can always find something, I want to make, and I can't say this about some other baking books.
