Because it is the time of year when people give yummy goodies and family and friends gather together and eat a bunch of good food, I thought it would be appropriate to share a couple of new favorite treats that I've been given recently.
Cowboy Cavier
1 can corn - drained
1 can black beans - drained
1 can of rotel w/ cilantro - drained
6 green onions finely chopped
Dump all into big bowl and refrigate until ready to serve.
Then add shredded fiesta mixed cheese into it right before you serve.
Best to eat with the scoop type tortilla chips.
I had this at a get together with some friends. This is yummy and pretty dang healthy for you too! Can't get better than that.
Fingerprint Cookies
2 C. flour
3/4 C. powdered sugar
1 C. finely chopped nuts
1 C. butter or margarine, softened
1 t. vanilla
raspberry jam or red currant jelly
In a mixing bowl combine flour, sugar, and 1/2 C. nuts. With a fork cut in butter until well distributed with dry ingredients. Sprinkle with vanilla and mix dough with hands until smooth. Shape into 1 inch balls. Roll balls in the remaining 1/2 C. of nuts. Place 1 inch apart on a greased cookie sheet. Indent the center or each ball with your thumb and fill with jam.
Bake at 325 for 15-18 minutes.
My visiting teacher brought these by to me this week. They were amazing! I'm not kidding! You have got to try them!
Me and my family are getting things ready to leave for our big trip this Friday. We are can't wait to be there. We will be back into Tulsa January 4th or 5th depending on how the weather is for driving. I will be posting lots of fun pics from our Christmas in Wyoming after that!
