Another Surprise Visit...For Mother's Day...and a yummy soup recipe!!!

We had a lovely unexpected surprise visit from our Son on Mother's Day weekend...

and for a treat he took me out for a Mother's Day dinner the night before to one of our favourite Restaurants...On The Pier

Marinated Olives with Feta and Grisini...

Oysters...

Prawns and Fat Chips...

Persian Salad...

Beef...

Salmon...

Ice Cream...

My favourite...Creme Brulee

Hot Chocolate...

And here we are at the end of the evening...

Thank You so much dear James!!!

A few weeks ago we used up the last of the Summer tomatoes

and Basil...

and made this easy peasy Basil and Tomato Soup...

so very tasty!!!

~Progress on Quilt and Cook Up With Vicki No 9~

Before getting into the Cook Up here is the surprise quilt for Mr Armchair that I'm working on...coming along now and have slowly begun to quilt with my machine...It's all trial and error with it as I learn to master In The Ditch!!!Hopefully it will be all done by next week!!!

This cook up with Vicki is from Donna Hay magazine October/November 2010 issue...

Tonight's menu...Herb Crumbed Schnapper

and Honey Custard Meringue Tarts...

Schnapper served atop Mashed Potato...

Steamed Cabbage with Honey Glazed Garlic Carrots...

Herbs used are Flat Leaf Parsley...

Dill and Baby Rocket (Arugula) leaves...

all from our first little herb garden here YAY!!!

Sweet shortcrust gluten free pastry by Rick Grant...

All done!!!

Am loving this pastry and experimenting with it...

Start of the little herb patch 20th October...

8th November...

and 5th December!!!

It's so handy having it not too far from the back door and I try and pick something each night from it!!!

This weekend with JoJo I plan to make a Steamed Pudding and a Boiled Fruit Cake...recipe for the Fruit Cake I got from Fee...

Now it's back to wrapping...card writing...making lists...etc, etc etc!!!

Hello, my name is Dzintra Ingrid ... have been known as Ingrid and since our Sea Change I have started to use Dzintra ... pronounced without the D ... (but still known as Ingrid, I know, it's confusing ...)

'Welcome to Holland'

I am often asked to describe the experience of raising a child with a disability - to try to help people who have not shared that unique experience to understand it, to imagine how it would feel. It's like this ...

When you're going to have a baby, it's like planning a fabulous trip - to Italy. You buy a bunch of guidebooks and make your wonderful plans. The Colosseum, Michelangelo's David - the gondolas of Venice. You may learn some handy phrases in Italian. It's all very exciting.

After months of eager anticipation the day finally arrives. You pack your bags and off you go. Several hours later the plane lands. The stewardess comes in and says, 'Welcome to Holland'.

'Holland'? You say. 'What do you mean Holland? I signed up for Italy! I'm supposed to be in Italy. All my life I've dreamed of going to Italy'.

But there has been a change in the flight plan. They have landed in Holland, and there you must stay.

The important thing is that they haven't taken you to a horrible, filthy place, full of famine and disease. It's just a different place. So you must buy new guidebooks. And you must learn a whole new language. And you will meet a whole new group of people you would never have met.

It's just a different place. It's slower paced than Italy, less flashy than Italy. But after you've been there for a while, you look around, and you begin to notice that Holland has windmills, Holland has tulips, Holland even has Rembrandts.

But everyone you know is busy coming and going from Italy, and they are all bragging about what a wonderful time they had there. And for the rest of your life, you will say, 'Yes, that's where I was supposed to go. That is what I had planned'.

The pain of that will never go away, because the loss of a dream is a very significant loss. But if you spend your life mourning the fact that you didn't get to Italy, you may never be free to enjoy the very special, the very lovely things about Holland.
