Prosciutto

Prosciutto


Prosciutto is a product of the meat that gets processed by the parts of beef, mutton or pork salted, smoked and dried prior to final use. There are different recipes for preparing prosciutto but due to special conditions needed for its preparation can not make it in every household.

ProsciuttoIt can be made of thigh, flank and back, where the bones are removed after cooling. The meat is cleaned of coarse, connective tissue and fat and cut into big pieces.

Prepared pieces are hand-salted then stacked in the appropriate containers for 15 to 20 days, depending on size. Followed by rinsing in cold water by keeping for a few hours. Then each piece at one end is drilled by the needle and tied with rope on a stick. Hanged pieces are strained in the same room about 10 hours and then refer to a room where smoking, drying and ripening,
takes place which takes about 25 to 35 days.

It is clear that this is not a recipe for preparing a prosciutto, but only information on how to get a product that is one of the most important ingredients of many easy recipes.

Croquettes of Smoked Meat



It is necessary:

200 g cooked smoked meat,
50 g of soy flakes,
1 slice of brown bread,
3 cooked potatoes,
1 onion,
2 cloves garlic,
1 egg
1 tablespoon flour
salt,
Pepper,
blend of spices with vegetables,
oil,
breadcrumbs,
sesame seeds.

Preparation:

Grind smoked meat.
Soybean flakes sprinkle spice mixture of vegetables, pour water and let sit for half an hour.
Black bread Pour water and wring out well and crumble.
Peel potatoes and mash.
In the oil fry finely chopped onion, add the mashed garlic and filtered soybean flakes and fry until juice has evaporated.
Remove from heat, add all other ingredients and form croquettes.
Roll them in bread crumbs and sesame mixture and fry in oil.
