lemon pizza


It's been two weeks since I had the best pizza of my life.  Last night I was craving Pizzeria Limone really bad so I decided instead of trying to figure out a way to get back 2,400 miles away to Utah, I would just have to do something at home as similar as I could.  

Lemon Pizza:

Crust

2 1/4 teaspoon yeast
1/4 cup brown sugar
1 and 1/2 cup warm water

combine in a bowl and let proof for 10 minutes

using dough hook then add

1/2 cup wheat germ
1/2 cup flax seed
2 and 1/2 cups whole wheat flour
2 tablespoons coconut oil
1/2 teaspoon salt

Let it rise in oiled bowl covered for an hour

Punch down, roll out on to corn mealed pizza stone, then add toppings.

For the Toppings:

Drizzle coconut oil on top of rolled out crust
add garlic salt
thinly sliced lemons
blackberries
thinly sliced ham
pineapple
and shredded pepperjack cheese
Top with a light dusting of garlic salt

bake at 450 for 18 minutes




It wasn't an exact replica that's for sure, but it was a delicious close second!

cauliflower crust pizza


 Many of you asked about the recipie for this Cauliflower Crust Pizza.  I'm sure you could find many recipies all over the Internet but I based mine off of Paula Deens recipie.  I made one small change though.  Which I'll share down below.

Ever since my sister inlaw visited back in January and introduced me to Cauliflower rice, I always keep a head of cauliflower on hand.  We make the rice about once a week and use it for a side with meals or we put it in to a whole wheat tortilla with fresh sliced peppers, pepper jack cheese, and some light ranch.   So since I was feeding the missionaries last week and I had a head of cauliflower I needed to use up I decided to try an experiment and make cauliflower crust pizza.  Besides, who better to try out food experiments on than hungry 19 year old boys.  Plus they have to eat whatever you fix, I'm pretty sure that's a mission rule.  

It turned out great! I actually really loved it and it is such a better alternative when those pizza cravings hit.  We topped ours with turkey pepperoni, roasted squash, zucchini, and yellow and red peppers.

Cauliflower Crust

Process 1 medium size cauliflower head in food processor until finely grated.

Microwave for 6 minutes.

Let it cool for about 10 minutes then stir in 1 egg, 1 cup shredded mozzarella, and 2 tablespoons Parmesan cheese. Add salt and pepper to taste.  I also added 1 tablespoon milled flax seed.

Spread crust out on a baking sheet and pre cook at 425 without toppings for 12 minutes.  Take it out and add your sauce cheese and toppings and then cook again until cheese is melted and bubbly.

I've made this two times. The second time I didn't let the cauliflower cool all the way from when I microwaved it and it was definitely a fork pizza.  The first time I made the pizza when it cooled from coming out of the oven we were able to eat it by picking it up.  All in all it was an experiment gone well!

time

Last night I told John it seems like time is speeding up.  
He said "Its because time wants Evaleigh to get here".
Its true, but lets give it another 15 weeks emkay?



Last night Mr. Murphy came home from playing bball in an explosively happy mood.  He had a million things to tell me about what he had learned about Bob Dylan yesterday while watching a documentary on Netflix.  He was on fire and excited to show me new music and to play some of it for me.

I was on fire for something too...pizza.

So, he showered up and we ventured off to Kroger to satisfy a craving.  The whole way there he chatted with me like a giddy school girl.  He gets so excited about music.  I am so happy to have a companion who loves music as much as I do, we are the perfect fit.

Did you know that Like a Rolling Stone's organ part was just some one messing around in the back ground while they were recording and it is actually an eighth note off beat for the whole song?  But Bob loved it so much that they left it.  Cool right?  He is a genius.

We got French Berry Soda and a Stuffed Crust Digiorno. 







Its romantic simple evenings like this that I want time to just go a little slower for a while.  I am soaking in these last months where "we" are still only a little family of 2.

Wknd


1. Green Apple Jones (it literally tastes like you are biting in to an apple) and homemade Pizza for girls night.
2. My gorgey new navy blues that my mommy bought me on Friday.
3.  Erin, my new little sister.  She is one heck of a sous chef in the kitchen.
4.  Two brother in laws and their fortress of a fire.
5.  Jumbomallow.  Most fantastic for s'more making.  They are the size of a full grown kiwi.  I'd like to see someone play "chubby bunny" with those suckers.  You get an automatic win if you can fit 2 in your mouth.
6.  My super Jones Soda bottle-cap fortune.  Thanks Jones, I needed that.
7.  Lindsay, my 2nd new little sis.  I'm obsessed with her straight across bangs.
8.  Mr. Murphy and I trying not to burn up from our bon-bon fire.
9.  My real little sister, Bek.  I love her and her tender heart to pieces.


Weekends are so heavenly.  And this one was full of:

singing
making music with Mr. Murphy
new shirts with bows
making friends
making pizza
making fart noises
and no laundry...because that would be offensive to weekends.
