today, tomorrow, this weekend


Today I went to work and got to come home a couple hours early, it was great.  Then mom and I went to Target with Evaleigh.  She was smiling so much when we got out of the car, she must have known we were having a girls date.  I got a hat, EJ a bathing suit, and mom got a pool for this summer.

Tomorrow I am going to go grocery shopping and I am getting a few things to make some homemade summer pudding pops.  The blueberries are coming in beautifully in the orchard in the front yard.  I love that in a couple weeks we will be able to wake up and grab a handful of berries off the bushes and bring them straight inside and drop them in our cereal, or make a pie, or Blueberry Lemon Cheesecake Pops. Yummy.

This weekend is mine and John's two year anniversary.  We are being romantic and going to Savannah and getting a hotel overlooking the river.  I am so giddy over our plans.  I am looking forward to spanish moss, cobblestone walkways, ferry boats, and maybe an Elvis.

Plump and Juicy

This week I resumed some much needed baking.
Baking is like therapy to me.
Not to get all Julie and Julia here, but I love knowing that If I grab the right spatula its going to do exactly the thing that I want it to.
If I add a dash of vanilla to anything, it will instantly be delicious.
I love that the sound of the Kitchen-aid gearing up sends my heart pumping.
I love creating something outside of myself and then watching other people enjoy it.

Friday I went with my dear friend Lisa to pick berries at Adam's Farm. We went for the blackberries, which I came home with.  In addition to the 5 pints of blackberries I also got 6 pints of blueberries, local blueberry syrup and sweet and hot vidalia onion chow-chow!  I don't even know what it is but it looked snazzy, so I grabbed a jar.

As I was sitting underneath one of the blueberry trees with my berry filled bucket I was dreaming of jams, pies, homemade blueberry pancakes,and the look on John's face when I presented each of these items to him.

The farm was a magical place.  When the wind blew it carried sweet aromas of berries to my nose.  Although I must say, it felt like I was soaking in the fresh smell through every pore on my body.  It was early in the morning and the blueberry trees were still covered in their chalky white dew.  It was a dear time to me and I was taught something there in the blueberry trees.  

I had never seen the way that a blueberry tree was harvested before.  Each tiny berry had a stem of it's own and each tiny berry had to be picked on its own. I had always wondered why the price of berries was so high.  Its because each berry requires tenderness, caution, and individual care when it is plucked from the tree.  If not, they can be crushed when plucked in a bunch.  If not, they can fall to the ground when plucked in a bunch.  There was no fast and easy way for it to be done.  

It reminded me of the human soul.

We likewise, require so much personal love and attention.  We are all individuals that need to feel special.  We need to feel important.  Our price is so high because we are worth so much.  We have so much potential and promise.  I am so grateful for that lesson I learned there at Adam's Farm.

So, when I got home I decided to start with the Blueberry Pie since it wouldn't be my first rodeo with that.  I started making it last night around 9 o'clock and it wasn't finished til a bit after midnight.


I used this tutorial to do the lattice crust.  Next time I'll cut thicker strips but I still think it turned out great!



Speaking of plump and juicy, husband has been just that lately.  No, that's not a fat joke.  Since I have been preggs he has been an unusually and fantastically stellar hubs. Its amazing how our love continues to grow deeper and deeper.  I love marriage so much.  And blueberry pie...

Jam Sesh Scheme

John and I have started a tradition. We like to lure our friends to our home with promises of being fed and then we like to make them sit and play music with us for hours.

Our normal crew is Jenna Kimble, Belen Albanes (not pictured down below), and Tim Olsen. Tim, our most peculiar friend, has brought us the most random but wonderful gifts everytime he has come. The first time he brought us a bag of cotton candy...thats a normal house warming gift right? Then he brought us Becky. Becky is a bottle of intense organic chili pepper. Becky is used in a lot of our food. (That's Tim behind Becky)



So here is how the night goes...

Friends come over
We feed them dinner
We laugh and share stories
We feed them dessert
(Normally something delicious like pie in a teacup)

We pile all of the dishes in the sink for later
We light the candles in the fireplace



Turn off most lights
Take out our instruments and our voices
And let inspiration come.

Play for hours

What the *bleep* is cornstarch?!


Why did it take me 4 trips to the grocery to find





THIS?!?

Frustration.


What is it anyway? All I know is that I had a blueberry pie to make and I needed it.


Maybe this comes with being a new wife/homemaker but there are still some major things I am
learning about cooking and cleaning (john taught me to clean out the lent trap in the dryer and how to use dryer sheets. It's a wonder my clothes have made
it all these years.) Anyway, a few weeks ago I wanted to make a beef dish that called for cornstarch so I went to Walmart and it was no where to be found. I stood in front the flour and sugar for 15 minutes and stared and stared. I just knew that it had to be there somewhere! I called my mother...

"What the *bleep* is cornstarch???

She told me that I was in the right place and it would be near the flour. WRONG! So, I just assumed that they were out an I would just try again.

Kroger. No luck.

Kroger again. No luck.

Kroger again again!! Success!

All I had to do was turn around, it is NOT with the flour.

So, I got to do what I wanted to do, and here it is...


Blueberry Filling:
4 cups (570 grams) fresh blueberries
1/2 cup (100 grams) granulated white sugar
2 tablespoons (20 grams) cornstarch (corn flour)
2 tablespoons lemon juice
1 tablespoon lemon zest

*I tried to make my own crust first but then I burnt it so I had to start all over and just went with a Pillsbury crust. But here's the recipe anyway...

Short Crust Pastry:
2 1/2 cups (350 grams) all-purpose flour
2 tablespoon (30 grams) granulated white sugar
1 cup (226 grams) unsalted butter, chilled, and cut into 1 inch (2.54 cm) pieces
1/4 to 1/2 cup (60 - 120 ml) ice water
The crust was amazing, I just don't know why it burnt in our oven.
Here is the demolished lemon which yielded a lovely zest.
