Gluten free (almost Paleo) Christmas cracker candy

     I stumbled across a recipe for a Christmas candy made with just saltine crackers, brown sugar, butter, and chocolate chips on the web. It sounded like something that I wanted to try but we now eat 100% gluten free and about 80% Paleo since we discovered that the hubby has some major sensitivity to gluten and corn. He is also sensitive to butter. The Paleo diet overall makes us feel better and controls some health issues for us. But every now and again, we like a treat. So I set out the make this "crack" candy (as some call it) in a version we could eat. It took some trial and error. Just FYI, coconut sugar and ghee do not mix well. Since the purpose of the brown sugar and butter was to make a caramel like substance, I made myself some caramel sauce following this recipe and proceeded with my Christmas cracker candy. The sauce recipe only make a little bit so it was necessary to double the ingredients. Here is my final version: 1 box Organ rice crackers 1/2

Cookies for breakfast

It's back to school here for the kids in my town this week, and I'm sure it is or will be soon for many of you. That means you may have a little less time for getting healthy breakfasts, so here are seven healthy breakfast cookies recipes that you can make ahead. And it should certainly appeal to the kids- who wouldn't want cookies for breakfast? You don't have to tell them they are healthy. Sunbutter energy bites

  These energy bites are irresistible! When I make them, more go in my mouth than into the dish. They are the perfect little pick me up and touch of sweetness. They are also "no bake" so you don't have to heat up the oven during the hot summer. Most people make them with peanut butter, but if you have a nut allergy or just want to try something different, try Sun Butter  (affiliate link here).   Like I said, I have a hard time not eating them all at once, so I doubled the recipe I was using. Here's my double version (you can get 3-4 dozen this way, depending on the size you make them).   2 cups dry gluten free oats 1 cup chocolate chips 1 cup sun butter 1 cup flax seed meal 2/3 cup honey-(you can cut back a bit on this but use enough to make them stick together)   Just mix it all together and put it in the fridge to set a few minutes. Paleo lemon brownies

  On Monday I shared ten paleo lemon treats ( cookies, cakes, and bars) and today I wanted to share one more that has quicky become my favorite. I found this recipe for Paleo lemon brownies through pinterest. I modified it a little to make it dairy free because my husband doesn't tolerate butter. Below are the ingredients I used: Ingredients 1/4 cup almond flour 1/4 cup tapioca flour 1/4 cup coconut flour 1/3 cup honey 1/4 teaspoon salt 1/2 cup coconut oil melted 2 eggs 2 1/2 teaspoons lemon zest 2 Tablespoons lemon juice (juice of half a lemon) For the glaze 2 Tablespoons coconut oil 2 Tablespoons honey 1 teaspoon lemon juice 1 teaspoon lemon zest Pinch of salt I followed the directions in the original recipe with the exception of one thing: I did not use my food processor or electric mixer. I stirred everything by hand. They still came out great! (I find it easier to wash a spoon than the mixers or blades to the processor and I could use the exerc

Even though lemons can be in season year round, something about spring and summer makes me want lemon flavored goodies this time of year. Before our diet change, one of my favorite candies was Lemon heads. Gluten free Paleo apricot power bars

  Today I'm sharing another yummy Paleo treat we enjoy- apricot power bars. These are so easy to make, I sometimes make two pans at once and freeze a batch.   These are from Elana's Pantry .
