Rich chicken alfredo flavors served up with sundried tomatoes, parmesan, and spinach on a hamburger bun.
I really liked this recipe but I did modify it slightly because I feel like the storebought alfredo sauce got watered down with the slow cooking. I drained off the little excess liquid and tossed the cooked chicken with more alfredo sauce. You can do sundried tomatoes or roasted grape tomatoes. I think I'd prefer adding parmesan to the actual end product rather than serving it on top. All-in-all, a really good recipe that you can adjust to your liking.What you need:
- 5 to 6 boneless, skinless chicken breasts
- 2 1/2 cups alfredo sauce, divided
- 1/4 cup fresh basil, chopped
- 1/4 cup diced yellow onion
- 1 tsp. garlic powder
- 1/4 cup finely diced sundried tomatoes
- Salt and pepper to taste
- 1/2 cup shaved Parmesan cheese
- Baby spinach
- Hamburger buns
Directions:
- Reserve 1 cup alfredo sauce and add the remaining ingredients except Parmesan, baby spinach, and hamburger buns into a crockpot. Stir well to make sure chicken is coated.
- Cook on LOW for 6 to 7 minutes or on HIGH for 3 to 4 hours.
- Remove chicken and shred with two forks.
- Return to crockpot and add additional alfredo sauce and heat through.
- Serve on hamburger buns with shaved Parmesan cheese and spinach.
Crockpot meals are the best especially in the summer and these Slow Cooker Melt-in-Your-Mouth BBQ Chicken recipe is so yummy. I don't think I've had too many crockpot alfredo recipes but I'd love to try this Slow Cooker Chicken Alfredo recipe from No.2 Pencil.
