Korean Beef Bowls with Veggies
I LOVE little bowls like this that have loads of veggies and are over rice or quinoa. This one has this amazing sauce that really sets it apart from other recipes that I've had. Nothing else really holds a candle. You can vary the vegetables to your liking but I really liked the red bell pepper, zucchini, and carrot combo. Such a colorful and delicious meal!

Ratatouille Pasta
The classic French vegetable dish turned into an amazing sauce for a meatless pasta meal!
I have never had ratatouille but I really wanted to try it and I took the opportunity to try it when Nick was away for army training because it's meatless. The kids were not the biggest fans of it because they don't like eggplant and only Cami likes zucchini. I, however, enjoyed it a ton because it's a pasta dish with a bunch of fresh veggies. I definitely want to try actually ratatouille at some point, so if anyone has a tried and true recipe for it - point me to it!!

Italian Vegetable Soup
This hearty soup is full of vegetables and a little bit of Italian sausage.
This vegetable soup reminds me a lot of minestrone soup but I do like it because yes to all the veggies! I love the straight up crazy amount of vegetables in the soup. I do like that it has a little bit of meat in it and that it's a tomato-y broth with Italian seasonings. I mean honestly I can't ask for anything more. As a kid, I hated the canned vegetable soups, so it's nice to find something so great.

Mexican Meatball Soup
If you've ever wanted tacos in soup form with all the toppings, this soup is for you!
In these recipes, I can find the ingredients list a little overwhelming. However, what I like to do for prep is get all the spices measured and mixed together in a bowl. I like to get all my ingredients out and separated by where in the recipe I need them. It makes it so much more efficient when all is said and done to make the recipe when a little bit of preparation is done. I love how packed full of veggies this recipe is and I think the toppings work together with the soup so well too. It's like tacos but in soup form and I love it!

Zucchini & Bacon Three Cheese Lasagna
This lasagna is easy to throw together and has zucchini and bacon which is way better than regular lasagna in my opinion.
My family is not really largely amazed by lasagna. We rarely eat it. However, because I know that a good recipe can turn me into a fan of foods I previously did not like, I have a few saved to try. This one seemed like it could be a keeper because of the lack of ricotta cheese. I think, personally, that is the reason why we don't like lasagna. I can't say that zucchini and bacon weren't also selling points for this recipe. It was a pretty easy recipe to throw together and did not take hours like some lasagnas can. It seems like everyone really enjoyed it too.

Zucchini Pizza Bites
A bite of pizza atop zucchini slices is the perfect low carb snack.
Nick did the keto diet last summer and when we decided to have a junk food/fried food night, I was at a loss for what to make that wasn't breaded. This was an easy pick that fit the low carb category and was relatively inexpensive to make. I love zucchini, so I was game for this recipe. No, these aren't bagel bites, however, they are still delicious little pizza treats.

Bolognese Stuffed Zucchini with Pesto
Summertime means time for zucchini and these zucchini boats are stuffed with delicious bolognese and topped with pesto.
I finally have had luck with finding zucchini in the summertime. For years, it seems like zucchini...which is a summer squash...was completely MIA in the summer. I like to plan lots of zucchini recipes when it's available because it is my favorite veggie. This recipe was high on my list because I adore bolognese and pesto is my life blood (as I have stated many-a-time). It was everything that I could have wanted and it's the perfect summer dish!

One Pot Pesto Chicken Alfredo Zoodles
This low carb one pot meal can be ready in under 30 minutes and is a lovely summer meal!
Early last summer, Nick decided to do the keto diet. He had broken his foot and wasn't able to hit the gym and did not want to gain weight since he is still in the Reserves. The only plus side to this diet from my point-of-view (I love carbs) was that Nick started eating loads of zucchini which is probably my favorite vegetable. The kids and I did not follow the keto diet, but there were nights that I fixed a keto-friendly meal so I wasn't make a variation of whatever we were eating (which could be a bit annoying at times...zucchini carbonara did not turn out well haha). This recipe is basically everything delicious - zucchini, pesto, alfredo. YUM! It's a one pot meal and can be cooked in under 30 minutes. It's a win all around!

Greek Chicken Souvlaki with Lemon Rice
These chicken kabobs are perfect for spring and summer with lots of bright lemony flavor and a side of the most delicious lemon rice you'll ever have in your life!
I've been attempting to use the grill more often and that means I've been making loads of kabobs because apparently I have tons of kabob recipes saved. I was looking forward to this particular recipe due to the amount of lemon in it. I am hooked on lemon in savory dishes. I have tried it again in sweets and I'm still not a fan of just straight lemon desserts. It is what it is.
But bring on the lemon savory dishes! Especially this lemon rice recipe. I have made it multiple times outside of this particular recipe because I love it so much! I went very simple with our kabobs and did a few zucchini skewers and then I served the whole thing up with some diced tomatoes. Honestly, I wish I had had some tzatziki sauce because it would have been a perfect pairing!

I have trouble finding simple chicken recipes that I really enjoy. Sometimes I feel like the ones I really really like are complicated and time consuming. This recipe, however, is simple and is very lovely with butter, garlic, and herbs. Plus it also has zucchini and I love recipes with zucchini. I ended up also tossing in some broccoli I had on hand too and it turned out perfectly. I love how quick this recipe was without sacrificing great flavors!

Italian Noodle Casserole
This casserole is like baked ziti with lighter Greek yogurt and zucchini in it!
I have made this recipe two or three times now trying to get a good picture and it's just not going to happen. It ALWAYS photographs orange. Don't let that deter you from how absolutely delicious this recipe is. It reminds me a lot of baked ziti but lighter. You use Greek yogurt instead of sour cream or ricotta and there is zucchini in it. Any pasta recipe with zucchini ends up being on my favorites list. I'm sure that's merely a coincidence but all the pasta with zucchini recipes are always so great!

My entire family is obsessed with anime and manga. We watch anything and everything - and read it too! We particularly love Naruto and ramen is featured a lot in the original series (I have yet to watch Shippuden). So this means we have been trying a ton of ramen recipes lately. I think this one is not only the tastiest, but it's the easiest and I think it is everyone's favorite. I absolutely love it because it's buttery and garlicky with fresh ginger and zucchini. That's just plain heavenly if you ask me. Plus it has basil too! I mean this recipe was made for me, I tell you what! The original recipe does not have any meat, but when I first made this (I've made it a few times now and it's already on the meal plan for November), I decided to saute up some pork cut into strips in a little skillet while making the ramen. Yes, I did end up with another dirty pan, but it didn't take any longer to make the recipe and it was such a wonderful addition to it. I know we will eat this recipe often :)

Honey Garlic Chicken Stir Fry
Quick stir frys are the best kind of dinners to use up some fresh veggies!
I was so excited to try this stir fry because I am used to stir frys being broccoli, carrots, and bell peppers. I rarely see squash in them and that made me such a happy camper. I love squash. I will happily eat all the squash and all the recipes with squash. This recipe is especially wonderful because the honey garlic sauce is mouthwateringly good! It's the perfect balance of salty and sweet and savory to compliment the veggies and chicken. The best thing, of course, about stir frys is that they are quick. This one can be made in under 30 minutes!

Sheet Pan Sausage and Veggies

I know, I know, where's the sheet pan? Well, I lost that picture. Story of the blog lately. But that is what happens with a hard drive failure. It doesn't take away from just how fabulous this recipe is. Kielbasa is another food that I didn't like as a child. I should say one of the few things I tried and didn't like as a child. But something changed when I became an adult and I love it now. I love all these veggies and I really love the seasonings for the recipe. It all comes together wonderfully and I know I will make it time and time again.

Italian Mozzarella Chicken Foil Packets
This fantastic meal is everything you need all in a foil packet - cook it on the grill or in the oven.
I'm all about the foil packets right now. I have made one particular foil packet dinner for years and years and years (Hobo Dinner) and branched out recently with different proteins and vegetables in these recipes. This particular foil packet recipe is marinated chicken with zucchini, carrots, onion, and potatoes. I love that there was an option for grilling or baking in the oven. I opted for oven baking personally because I love how easy it is to just open the packets and get nice browned and bubbly cheese on top with the help of my broiler.
The marinade is fabulous with lemon, balsamic vinegar, and a variety of spices. It's a great summertime meal for sure.

Summer Grilled Veggie Pasta Primavera
All the summer veggies grilled up in one perfect pasta dish!
Any sort of recipe with loads of veggies in it is sure to make my meal plan. I was initially intrigued by the grilled veggie part of the recipe because I recently acquired a cast iron grill pan. I decided to cut my zucchini in spears and grill it in the cast iron. Not only was I able to get these gorgeous grill marks on each piece and side, but the zucchini itself is absolutely addictive. I had a few extra zucchini that I grilled up and ate for a snack the next day. Just A+ in my opinion. You can grill and roast as many of the veggies as you'd like, but in the end, the simple flavors work so well together in this summer pasta dish!

Pesto Zucchini Boats
This simple stuffed zucchini recipe is the perfect meal in the summertime!
I love stuffed zucchini (and peppers) and wish I could have the more often. BUT every time I put it on the menu because our store has had zucchini, it ends up being gone and I have to quickly find an alternative. It really bums me out. Zucchini is my favorite vegetable and I would eat it literally all year round. It's just so fantastic. The original recipe did not contain any meat, but I have a bunch of complainers in the house if a meal doesn't have meat. So I opted to add sausage because I felt it would pair with pesto better than another meat.

One Pan Crispy Garlic Parmesan Chicken with Veggies
Crispy chicken along with some of that delicious crunch on the veggies makes for a delicious meal.
The best kinds of recipes are ones that you can throw into a pan and bake. I am easily thrilled when a recipe contains zucchini and/or squash. I cannot get enough of these veggies and would eat them with every meal. I have had zucchini in spaghetti and bbq pulled chicken. Just give me all the zucchini! I love that this recipe took the excess coating for the chicken and tossed it with the veggies, so that nothing went to waste.

Kung Pao Chicken with Zoodles
Who needs noodles when you can have zoodles?! This Kung Pao Chicken is amazing and the zoodles compliment it perfectly.
I have been eyeing every blogger and their brother's posts with vegetable noodles. I generally try to NOT get more kitchen tools, gadgets, and appliances because I am running out of room. However, when I was grocery shopping and saw a relatively inexpensive spiralizer that was also fairly small, I had to pick it up. I am not necessarily concerned with making "healthy" foods and no one in my house is on a special diet. I don't go out of my way to make fat-laden food either. I really just focus on making a variety of foods and always serve up veggies alongside most meals. I didn't want a spiralizer to make veggie noodles that replaced regular pasta. I just wanted a spiralizer for the option to make veggie noodles instead of regular pasta for a dish.
I am a self-proclaimed veggieaholic and there are very few vegetables I won't eat. I especially love zucchini and really wanted to try zoodles. I was impressed with how easy it was to make them AND how great they were in this recipe. Just a little tidbit, we added sriracha to our individual servings for some heat. We're new to the sriracha bandwagon too, but we love it.

Chicken and Zucchini Alfredo
The perfect summertime alfredo dish that is quick and easy to make!
Once summer hits, I want to eat all the zucchini I can because I know once August is over, the pickings are slim and I'm not going to find zucchini as much. This summer, zucchini just seems to have disappeared off the face of the earth at my local grocery store and it really bums me out. I keep trying to plan stuffed zucchini and then get to the grocery store and have to sub a different recipe for the week in for stuffed zucchini.
I really like this particular recipe because I don't think I have had zucchini in alfredo. It was a pretty simple recipe and it didn't take long to make. I like how the sauce is cooked in the same skillet as the zucchini and chicken and gets all that goodness that is leftover into the sauce.
