Copycat McDonald's Pancakes
When I was a kid, we had Dairy Queen and Burger King and that was about it in the area I grew up in. Occasionally we went to the bigger town almost an hour away and would get Arby's. It was pretty exciting when we got a McDonald's and we ate there a bit more when it was new. I personally loved getting the pancakes for breakfast. I like getting the frozen Eggo kind because they remind me so much of McDonald's pancakes (let's be honest, I wouldn't be surprised if they are the same thing or close to), so, of course, I jumped at the opportunity to try a copycat. I love copycats. These definitely aren't exact but they are close and they were great!

Copycat Cracker Barrel Pancakes
This classic buttermilk pancake recipe is something you want to have in your recipe arsenal!
I love going to Cracker Barrel and eating from their breakfast menu. I honestly cannot think of a time that I got an actual main dish/lunch/supper recipe there. It's always breakfast! I love their pancakes and wanted to try out this copycat at home. I have to admit, it's missing something, but it's still a perfectly solid classic pancake recipe.

Lemon Raspberry Dutch Baby Pancake
Breakfast has never been better with this huge, airy pancake with tart lemon curd and raspberries!
I tried Chrissy Teigen's Dutch Baby Pancakes recipe and posted it a few months ago (I even mentioned this recipe in the bottom of the post!) - I've kind of had them on my mind since then and really wanted to make a recipe with berries (as I mentioned in that post). I have never in my life had lemon curd and wasn't sure how I would feel about it. It was SO good. The kind I got was very tart - honestly reminded me a little of a Warhead but without the bitterness. This dutch baby was insanely good. The raspberry and lemon curd combo was killer. I cannot wait to make more of these with different flavor profiles - and try more recipes with lemon curd.

Dutch Baby Pancakes
A traditional puffed pancake breakfast that is light and fluffy with bits of crisp crust too!
I have been wanting to make a dutch pancake for so long. I thought they looked so unique and my curiosity was peaked. We were not able to keep berries long enough to use them in this recipe, but it was wonderful with powdered sugar and syrup. I definitely want to make some again soon and do berries on top. My only complaint is that I literally want to eat the whole thing! I'm not 100% sure if I have the right recipe because this is from the Cravings cookbook - unfortunately I packed mine up and so I won't be able to get to it until later this week. Then I'll see if the person who reposted Chrissy's recipe did it with no modifications. :)

Peppermint Hot Cocoa Pancakes
These pancakes are perfect for the winter season - and especially Christmas morning!
For the first time in a long time, I don't have a plan for Christmas morning breakfast. Sometimes I wake up really early and make cinnamon rolls. I've made donuts and casseroles. Last year, I made these pancakes. They were a huge hit and super quick. The kids enjoyed them after opening presents and I have to say that they were pretty fantastic. All the elements work together so well!

Banana Pudding Pancakes #FantasticalFoodFight
Welcome to another Food Fight! Fantastical Food Fight is a group of food bloggers who will get a theme or ingredient each month and make some sort of variation for it. It could be traditional or nontraditional and can be found in a cookbook, on a blog, or be a blogger's own creation! For more details, check out this page.
This month's Fantastical Food Fight theme is BANANA. Apparently, there is this thing called the International Banana Festival that takes place in the month of September (in Kentucky, I think?). That was all I needed to go ahead and make our September Food Fight all about bananas. I left it up for whatever my blogging friends wanted to do - sweet or savory - anything banana goes!My birthday was this past Sunday and I decided that even though last month, waiting until the last weekend before the Wednesday to post ended in fiasco, I would risk it. This month, I had a magical recipe in mind and I wanted it on my birthday. I am ridiculously excited to share these gorgeous little pancakes today. What a decadent way to start my 30th year, right?!
It has all the best elements of banana pudding and then you get pancakes too! The sauce honestly seems pretty close to vanilla pudding to me. I'm fairly certain it is pretty much just a homemade pudding and I didn't even realize it when I was making it. Pudding makes me nervous haha. But alas, no hollandaise-esque disaster. Everything went perfectly and my birthday breakfast was FANTASTIC! It was awesome!

Butterbeer Pancakes
For all the Potterheads in your life (or butterscotch lovers), these Butterbeer Pancakes will be their new favorite breakfast. Always.
Happee birthdae, Harry and Jo! Today's recipe is in celebration of the wizarding world's most fantastical treat: butterbeer. I know I would totally love these Butterbeer Pancakes on my birthday, so totally fitting for me to share today :) These are a little bit of a labor of love, as you make pancake batter, butter syrup, and whipped cream. But it honestly doesn't take too long and the end result is amazing. I love all the butterscotch-y goodness AND the whipped cream is honestly good on its own. I would take a bowl full of it by itself. I don't like butterscotch ice cream topping and wanted to find something with better flavor and discovered this Mrs. Richardson's topping that is butterscotch caramel. It was so luscious and the perfect consistency for these pancakes!

Blueberry Pancakes
Perfect homemade blueberry pancakes that are buttery and have a hint of lemon to brighten them up.
I really love making homemade pancakes because they really aren't too many more steps than making them from a box. I personally love all sorts of pancakes including plain ones and fruit pancakes and dessert pancakes. I was excited to try these pancakes. They aren't fluffy like some of the other homemade pancakes I have made, but that isn't a bad thing. They are so buttery and remind me of pancakes I used to get with my mom from our hometown diner when I was a kid. They just kind of melt in your mouth. I love the little zip you get from the lemon zest. It really ties it all together.

Pumpkin Cinnamon Roll Pancakes
Pancakes have never been better with a good helping of pumpkin and cinnamon sugar swirl.
Cinnamon roll pancakes are one of the best things to have ever been invented. The cinnamon sugar swirl in a fluffy pancake and cream cheese frosting on top?! YES! When I saw a recipe that also incorporated pumpkin into it, I was 100% sold on making it. I really loved the way Lori explained how to do the cinnamon sugar filling properly. I remember the first time I attempted plain cinnamon roll pancakes and my cinnamon roll filling was way too liquidy and it was such a mess. It definitely has to have a particular consistency to come out correctly. These pancakes are the perfect fall breakfast. Although it may seem complicated, they are much less difficult to make than regular cinnamon rolls and only slightly more difficult than regular pancakes.

Hazelnut Pancakes
Who knew that an ingredient many have on hand could make pancakes as delicious as these?
These pancakes have a special ingredient that add the lovely hazelnut flavor: coffee creamer! The coffee creamer of choice is hazelnut which is one of our personal favorites. There is definitely room to experiment with all flavors of coffee creamer, syrups, and toppings. But today is about the simple hazelnut pancakes and they are wonderful. They really remind me of diner pancakes - they aren't these huge puffy fluffy pancakes, but they are still incredibly delicious!

Cinnamon Pecan Banana Pancakes
When I was younger, I was very accustomed to eating pineapple pancakes. They were my absolute favorite and it wasn't until we went through the elimination diet with Matthew, my oldest, that I branched out and tried banana pancakes. We had to eliminate basically everything but fresh fruits and veggies and meat. He couldn't have any rice, flour, corn, soy, dairy, egg, spices, etc. We slowly added things back into his diet and I had found a banana pancakes recipe in a food allergy book.
I honestly can say that I'm not big on bananas if they aren't mushed up into something. I love banana cake, banana bread, banana muffins....but I won't sit down and eat a plain old banana. I hate the texture. I had my reservations about the banana pancake recipe in the food allergy book, but Matthew had always loved the banana baby food and, like a good momma, I was gonna make something that my baby man (or lady) liked. And it turns out...we all love banana pancakes!
I received Jess's blog for Secret Recipe Club a few months ago and made a delicious chowder recipe and this recipe for banana pancakes. I posted the chowder for my reveal day post and, obviously, just now am getting around to sharing the pancake recipe. Because of the cinnamon and pecans, this breakfast treat is very reminiscent of fall. They are nice, thick pancakes. Add some maple syrup and you're good to go!

Sweet Zucchini Pancakes
I like to mix it up a bit with pancakes every once in a while and thought the idea of zucchini pancakes sounded very good. They are sweetened with honey, which is perfectly fine and all, but I definitely missed the cinnamon that usually pairs with zucchini in dishes like zucchini bread. So when I make these again, cinnamon will definitely go in them. I really liked the griddle-taste that they took on :) Reminds me of the pancakes my mom and I would get at our local diner when I was little.

Root Beer Pancakes
I'm not sure if I've ever posted anything with root beer in it, however, it is my favorite soda. We rarely drink or buy soda and if we do, it's root beer or Sprite. But root beer is the reason why I haven't given it up completely. It's just so delicious.
The butter and vanilla in these fluffy pancakes really just compliments the root beer so much. They are one of the fluffiest most delicious pancakes I've ever had!

Lemon Berry Twist Pancakes
When I was younger, I had a real aversion to lemons. It continued until Nick's return from his second deployment when he was obsessed with lemon on everything. Because I am an awesome wife (tooting my own horn here) I started to gather up lemony recipes to make for him. Then his magical "making-me-like-foods-I-don't-like" powers took over and I am loving lemony recipes! It's fun to get a whole new slew of things to eat because of my new found love of lemon :)
These pancakes are really simple to make and really refreshing!

Secret Recipe Club: Elvis Pancakes
It's time for yet another Secret Recipe Club reveal day. For those of you wondering, Secret Recipe Club is a group of a couple hundred food bloggers separated into 4 groups. Each month, each blogger gets assigned to a different blog in the group secretly and they make a recipe or two for reveal day. Each group posts on a different Monday - today is Group D's day to reveal what blogs we had and what we made.
This month, I was assigned Emily from Life on Food - luckily enough I happen to save recipes from fellow Group D members' blogs and had Emily's Elvis Pancakes on the menu the week assignments went out, so there was no contest! But just for the heck of it, Emily also has some other amazing recipes I've saved from her blog too: Blueberry Banana Bread, Danish, and Maple Pecan Granola. Clearly, I was on a breakfast kick when I looked through Emily's blog :)
We have brinner every once in a while, so we actually had these for dinner and they were great! Fluffy pancakes, salty crunchy bacon, smooth peanut butter, and sweet bananas - I mean what else could you ask for?!

Copycat IHOP Pumpkin Pancakes
I think this is the last pumpkin recipe I have to share for the season. I personally cannot get enough pumpkin. I try to have it all year round, so I don't binge once October hits. These pancakes are perfectly fluffy and every bit as good as they sound and look! I've never had a stack of IHOP's pumpkin pancakes due to the fact that the closest IHOP is over an hour away. Let's face it, for someone who hates mornings, I'm not driving an hour to get breakfast I can make at home!

Cherry Cheesecake Pancakes
Once upon a time, I avoided pancakes. Most of the time was sans griddle. My first one worked for a month and then abruptly quit. If I don't make pancakes in a griddle, I mess them up. All sorts of messed up. I'm not even sure why. My pans are nonstick and I know how to make pancakes. Now that I have a working griddle (that hasn't died on me - I swear I'm just not good with kitchen appliances), I've been exploring many variations of pancakes.
These cherry cheesecake pancakes are extremely decadent. If you're looking for a good breakfast, these fluffy pancakes with pieces of real cheesecake inside topped with a cream cheese frosting & more than one cherry on top - are IT!

S'mores Stacker Pancakes
When I made these s'mores pancakes...I thought they were the best pancakes I had ever had. When I saw these, my mom side saw how they looked a little more tidy than the other version. These are a much simpler version that are just as amazing as the other version. You get a little more control over the quality of ingredients with the other one, but this one is quicker to make.
It's also way more aesthetically pleasing :)

Tasty Thursday #82: Apple Butter Hotcakes
Welcome back to Tasty Thursday!!
The original recipe also had a recipe for flavored butter and a warm cherry sauce. I used leftover TX Roadhouse butter and just did syrup. It's totally up to you what you would like. I personally thought that the cherry sauce may take away from the fall-feel to this breakfast. The cinnamon honey butter was the perfect touch though!

What you need:
- 1 1/2 cup pancake mix
- 3/4 cup milk
- 2 tbsp. cooking oil
- 2 eggs, lightly beaten
- 1/2 cup apple butter
Stir together all ingredients until just moistened.
Add about 1/4 cup batter to heated griddle.
Flip when top is bubbly and then cook until golden brown on each side.
