Banana Pudding Pancakes #FantasticalFoodFight

This month's Fantastical Food Fight theme is BANANA. Apparently, there is this thing called the International Banana Festival that takes place in the month of September (in Kentucky, I think?). That was all I needed to go ahead and make our September Food Fight all about bananas. I left it up for whatever my blogging friends wanted to do - sweet or savory - anything banana goes!

My birthday was this past Sunday and I decided that even though last month, waiting until the last weekend before the Wednesday to post ended in fiasco, I would risk it. This month, I had a magical recipe in mind and I wanted it on my birthday. I am ridiculously excited to share these gorgeous little pancakes today. What a decadent way to start my 30th year, right?!

It has all the best elements of banana pudding and then you get pancakes too! The sauce honestly seems pretty close to vanilla pudding to me. I'm fairly certain it is pretty much just a homemade pudding and I didn't even realize it when I was making it. Pudding makes me nervous haha. But alas, no hollandaise-esque disaster. Everything went perfectly and my birthday breakfast was FANTASTIC! It was awesome!

What you need:
For the pancakes:
  • 1 cup all-purpose flour
  • 1/3 cup vanilla wafer crumbs
  • 1 Tbsp. granulated sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg
  • 2 Tbsp. unsalted butter, melted
  • 1 ripe banana, mashed
  • 1/2 tsp. vanilla extract
  • 1 1/4 cups milk 
For the vanilla pudding sauce:
  • 2 Tbsp. cornstarch
  • 1/2 cup granulated sugar
  • Pinch of salt
  • 2 egg yolks
  • 1 cup half and half
  • 1 cup milk 
  • 1 banana, thinly sliced
For serving:
  • Whipped cream
  • 1/2 cup crushed vanilla wafers
  • Sliced bananas
Directions:
  1. For the pancakes: in a large bowl, whisk together flour, vanilla wafers crumbs, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together egg, melted butter, mashed banana, vanilla extract, and milk.
  3. Add wet ingredients to try and mix until just combined.
  4. Heat a griddle or nonstick skillet and cook 1/4 cup batter per each pancake until bubbles appear, flip, and cook until golden brown on other side.
  5. For the sauce: in a small saucepan, whisk together cornstarch, sugar, and salt.
  6. Add egg yolks, half and half, and milk and whisk.
  7. Heat slowly while whisking to a boil. Boil for 1 minute.
  8. Stir in vanilla and remove from heat. Add banana slices.
  9. Serve the pancakes with pudding between pancakes and topped with whipped cream, more pudding, bananas, and vanilla wafer crumbs.
