Layered Pumpkin Pie Toffee Cheesecake

 It's Pumpkin Time, Y'all! And that means delicious treats like this cheesecake that's topped with a layer of pumpkin pie!

Y'all. I don't think I could be any more in love with a cheesecake recipe than I am with this one. It's got pumpkin pie. A literal layer of pumpkin pie, but it's also cheesecake. It's my favorite. I don't like pie crust, but I do love pumpkin pie (I usually just don't eat the outside rim of crust). But this is the best of both worlds because there is graham cracker crust - yum! - and cheesecake - another yum! - AND PUMPKIN PIE. Oh and throw some toffee on that too. Also, it's my 32nd birthday today and if I wasn't having a carrot cake cheesecake, I'd definitely have this cheesecake for my birthday cake.

Amazing Pecan Cobbler

Pecan pie has nothing on this Amazing Pecan Cobbler!


I have never really liked pecan pie. I think it's way too much sugar and that's coming from someone who loves sweets. However, it's my husband's favorite pie and that means every once in a while I will make him one because I love him. Sometimes he'll make a compromise and we pick out a dessert that is similar to what he wants but something I will eat. Because he definitely won't eat a dessert all by himself! Our compromise last year for the holidays was this pecan cobbler. It has the flavors of pecan pie but without being so overly sugary. I personally love cobbler and it's one of my favorite types of dessert, so I knew I would love this recipe. We ended up loving it so much that I made it for Thanksgiving AND Christmas.

The month of February has a ton of foodie holidays. It is national cherry month, potato lover's month, canned food month, and most importantly celebration of chocolate month. To celebrate chocolate with our monthly food fight, our February Food Fight theme is CHOCOLATE COVERED TREATS. I love treats dunked and covered in chocolate and thought that even though it is now past Valentine's Day, it would still be a great theme with lots of variety!

For my treat, I decided to share these chocolate-dipped sugar cookies that are also topped with more chocolate and some toffee bits too! Because chocolate-covered cookies just sound like the best cookies, right?! While I do love chocolate chip cookies a ton, you can't beat a good sugar cookie. The sugar cookie recipe is fantastic and the little touch of chocolate and toffee is impeccable. After making the monster cookie dough ice cream, I wanted to make more cookie dough ice cream because it's one of my all-time favorites. I actually had not had cookie dough ice cream until I was in 6th grade. I don't know why I never tried it, but my math teacher in 6th grade took a poll on our favorite ice cream for an example of something or another and the majority chose chocolate chip cookie dough ice cream. I begged my mom to get some at the store and that's when my love affair started. I get the craving every once in a while and I go crazy and buy all kinds of cookie dough ice cream, but this time I wanted to make my own. The monster cookie dough ice cream is a no churn recipe, whereas this one requires an ice cream machine.

I used two different recipes and put them together. The biscoff cookie dough comes from Sweet Twist of Blogging and the ice cream base is from Julie's Eat and Treats. They went together perfectly and honestly...the cookie dough bites would be fantastic on their own. I didn't use all of them in the ice cream and snacked on them throughout the process :)

Pralines & Cream Fudge

I had a bit of trouble this month. I had just made a Rocky Road fudge a couple months ago and I had chosen a mint chocolate fudge because I figured everyone would be making peppermint or candy cane for Christmas. I had all my stuff to make the fudge and realized that it didn't come from a blog. Shame on me! Luckily, the same exact day, Ashton from Something Swanky posted her pralines & cream fudge. I can't remember how I found her blog, but I am a very new follower. I saw her first page of recipes and immediately subscribed in every which way that I could. I still have yet to find the time to go through all her blog's recipes, but I am very excited to!
