Slow Cooker Creamy Vegetable Soup

A little bit of prep work and into the slow cooker and you'll have a great meatless meal on a chilly night!


As a child, I pretty much hated vegetable soup. Not because of the vegetables, but because we ate canned soup and the vegetable soup is tomato-based. It seems a bit odd given how much I love anything tomato-based, but it was just too tomato-ey. If you know, you know. I thought I'd try this recipe because it's pretty similar to potato soup but just loaded up with some extra stuff. It turned out really well and was super delicious. Highly recommend.

Italian Vegetable Soup

This hearty soup is full of vegetables and a little bit of Italian sausage.

This vegetable soup reminds me a lot of minestrone soup but I do like it because yes to all the veggies! I love the straight up crazy amount of vegetables in the soup. I do like that it has a little bit of meat in it and that it's a tomato-y broth with Italian seasonings. I mean honestly I can't ask for anything more. As a kid, I hated the canned vegetable soups, so it's nice to find something so great.

Mexican Meatball Soup

If you've ever wanted tacos in soup form with all the toppings, this soup is for you!

In these recipes, I can find the ingredients list a little overwhelming. However, what I like to do for prep is get all the spices measured and mixed together in a bowl. I like to get all my ingredients out and separated by where in the recipe I need them. It makes it so much more efficient when all is said and done to make the recipe when a little bit of preparation is done. I love how packed full of veggies this recipe is and I think the toppings work together with the soup so well too. It's like tacos but in soup form and I love it!

Colcannon Soup

Classic colcannon flavors of cabbage, cheddar, and potatoes in a tasty soup!


We enjoy our weekly soup nights and have begun to run out of new soup recipes to try, so it's always nice to find something different. I was somewhat aware of colcannon because I've made colcannon mashed potatoes before and loved them so dang much. I don't really get to make a lot of foods with cabbage or leeks, so I really was excited and looking forward to this one and was not disappointed at all. It's also made in one pot and takes less than 30 minutes.

One Pot Cauliflower Chowder

 This one pot soup recipe is slow cooked on the stove for under an hour - you get the best of both worlds, an easy soup that doesn't take too long to make but tastes like you've had it simmering all day!


I'm sure at this point most of my chowders are very similar recipes, but nonetheless, here is another cauliflower chowder recipe. You could omit the bacon or use vegan bacon (that's a thing, I think?) and use vegetable broth for a completely meatless, vegetarian-friendly soup. I enjoy that this recipe is not exactly a quick recipe, but is not a slow cooker, crockpot recipe either.

Hashbrown Potato Soup

No peeling and cutting potatoes for this soup recipe - the work is done for you!


New soup recipes are a little far and few between now that I have been making them every week for years. We do a lot of repeats. We do a lot of similar recipes. I have never made a soup with hashbrowns before and I was definitely intrigued. I love the shredded carrots that get sauteed. It reminds me a little of a chowder and with a milk-based soup with cheese melted into it, I really like to put a little hot sauce into it. It just does a little something something to it.

Mexican Street Corn Soup

Classic street food turned into the tastiest, most perfect soup ever!


I had this recipe saved and knew I'd get around to it eventually, but then my sister-in-law made it and I immediately threw it on the meal plan. It was everything I wanted and more - from someone who has yet to have Mexican street corn (which is also a recipe I have saved to get to eventually). This was perfectly spicy and the bacon and cotija cheese was the perfect amount of saltiness that was needed to balance it all out.

Beer Cheese and Macaroni Soup

This creamy, cheesy beer soup with bacon and veggies is just what is needed on a cold night!


I am a person who does not enjoy beer as a beverage. Not in the slightest. I've tried many different kinds, but it's really just not my thing. I, however, do enjoy beer in soups and stews and savory dishes. I'm actually going to be using beer in a dessert recipe later in the year and I'm curious to see how I'll like that. Beer cheese is one of those things that I can't explain why I like. It tastes like beer. I don't like beer. But I like beer cheese. I knew this recipe would be such a quintessential cold weather kind of food. I think of it as a really good fall dish, but I also think it isn't limited to just fall :)

Chicken Pot Pie Noodle Soup

All the flavors of pot pie turned into a hearty soup that is ready in under 30 minutes!


I'm sure I've talked about it briefly over the years here and there, but I don't really care for pies - including pot pie. However, Nick and the big kids do like pot pie. So about as far as I get for compromising is making pot pie-like recipes without the pie crust like this soup. You can absolutely get away with canned chicken OR rotisserie chicken if you'd like - rotisserie chicken especially in the lemon pepper variety, I think, would make a fantastic substitute. This is totally comfort food and it pairs perfectly with a good hearty buttermilk biscuit.

Spicy Pepperoncini Chicken Noodle Soup

This chicken noodle soup will knock your socks off with its little kick from the pepperoncinis!


Since I figured out that I liked chicken noodle soup as long as it is homemade, I've been more willing to try out new recipes. We really enjoy pepperoncinis as a family, so I figured this recipe would be a keeper for sure. We all really enjoyed the heat and the little bit of pickley flavor to chicken noodle soup :)

White Bean and Collards Soup

This soup has greens and beans...and barbecue sauce - it's a little sweet with a smoky flavor and oh so good!


I was all over this recipe when I found it because ham/bacon and bean soup is my favorite soup and this one has COLLARD GREENS. I was born and raised in Minnesota. So I did not grow up eating Southern food at all. The first time I had greens was in New York when we did a Thanksgiving dinner with my husband's battles from his unit and I'm obsessed. I love collard greens so much. I was intrigued by the barbecue sauce and I believe I used the spicy kind from Sweet Baby Rays. It adds a little sweetness and some smokiness to the soup which I found to be very satisfying. All-in-all this soup was definitely a keeper!

Beef Stroganoff Soup

This version of beef stroganoff in soup form is lovely when you're feeling beef stroganoff but want something to sit lighter in your belly.


So yes, this is beef stroganoff soup, but also it does not have any mushrooms in it because the only person who eats them is Cami. I will eat them and won't make too much of a fuss, but I prefer to omit them if I am making something that calls for mushrooms. I love this soup because it's a lighter version of beef stroganoff and that's really nice sometimes when you don't want something to sit something so heavy.

Philly Cheesesteak Soup

The creamiest, most comforting soup with all the goodness of a Philly cheesesteak sandwich!


It's crazy to me to think that when I met my husband, even up into the first few years of our marriage, I didn't really care for Philly cheesesteaks or soup. And now here we are 15 years later and I'm eating a combination of the two and loving it. This is a thicker, stick-to-your-ribs kinda soup and although I don't like eating them all the time, I definitely crave them from time to time. There's really not a whole lot that can be said about this soup - if you like Philly cheesesteak, you're gonna like this soup. It's so creamy and comforting!

Ham & Corn Chowder

Hello, hello! If you notice that some of my posts are a little behind, that's due to me being in the tail-end of my bachelor's degree program. I am down to 2 classes. I'm in a self-paced program, so I usually work on 1 class at a time, but I get to work on the final 2 together. I'm really excited. I should be done by Halloween if I can keep my quick pacing up. I decided since I have to wait on approval for those next 2 classes to work on this week's posts so they aren't late :)

This soup is potato soup with ham and corn. It's a very simple recipe but you don't need something extravagant for it to be a great tasting meal. The bit of thyme, onion, and garlic really make this soup a fantastic one.

Just when I think I've made all the soups, I discover a new one that I just have to have. This egg roll soup is the bomb dot com. Like, who doesn't want an egg roll in soup form?! There is none of the hassle (not really sure it's that much of a hassle, but maybe time-consuming) of filling and rolling and cooking egg rolls, but you get all the flavors of it. The meat can be switched as per your liking - I went with the ground pork that the original recipe called for, but turkey, chicken, pork, etc. are all totally fine too. Or maybe you want to go with meatless. It's up to you! The wonton strips can be made homemade or if you are lazy like me, just buy them! We went with the garlic ginger flavored ones because they are SO good!

I must confess, I've never eaten any of the soups at Olive Garden. Don't shun me! I happen to adore their eggplant parmiagiana and get it every time I go because the rest of my family doesn't care for eggplant and so I don't get to eat it very often. I have heard that their soups are wonderful. Funny enough, I've made copycat recipes for all 4 of the current Olive Garden soups. Don't ask me how I've  made the recipes but never eaten the authentic thing - I have no clue. This is definitely my favorite chicken soup recipe and my favorite gnocchi recipe.

Happy New Year! This year I will be posting less often due to being a full college student and having a lot on my plate (pun intended) with 3 kids, school, extra curricular activities, etc. I have definitely been struggling to get my posts up on time the last few months, so I'm removing that stressor. I will be posting my Menu Plan Monday posts each week because I love being able to share the recipes I'm making and sharing the blog love because they are often from different food bloggers. I will also be posting two recipes each week - Wednesday and Friday postings. I have tons of recipes that I have made and have yet to share, so I'm not worried about running out of recipes. However, I don't have near as much time to type things up as I used to. So a little bit of a schedule change and dropping Throwback Thursdays and Fantastical Fridays, but still plenty of awesome recipes in store for y'all!

I am excited for a whole new year of new recipes to try. Last year, I tried quite a few new foods including egg drop soup. I figured if I could make carbonara and enjoy it and not worry about undercooked eggs happening (says the person who eats raw cookie dough), then egg drop soup was definitely something I could make. This was incredibly quick and easy with very inexpensive ingredients to boot.  Definitely something I could see making sure I have the frozen veggies and wonton strips for in case a rare snow day happens and we can't get down the hill to the grocery store!

Italian Sausage Soup

Do you ever eat something and it reminds you of a nostalgic food but you can't put your finger on it? That is this Italian sausage soup for me. I think, in part, the nostalgia is due to the frozen egg noodles. The thing is...I can't remember who it was that made the recipe with frozen egg noodles. I feel like it was my mother-in-law but it very well could be my grandma. Who knows! What I do know is that you cannot go wrong with a sausage soup with red bell and spinach in it. The nostalgic noodles were just a bonus :)

I have never been a huge fan of lasagna. In fact, I haven't really been a little bit of a fan of it either. I do have a few non-ricotta recipes for lasagna that I like every once in a while, but for the most part, lasagna is a no-go for me. Nick and the big kids feel the same way I do. However, all of a sudden, we've been discovering all these new recipes that are more of an alfredo sauce base for lasagna and that has made all the difference. Honestly, this soup only really has lasagna noodles, and, therefore, is basically a favorite for the whole family. It is rich and savory and it is so hard to have just one bowl. It's definitely a food I can't get enough of. I love all the different veggies in it too!

I have posted tons of bean soups on my blog over the years because they are honestly just one of my favorite types of soup. I do adore soup with pasta, but I don't think anything will top bean and bacon soup. I grew up eating bean and bacon soup frequently and love trying new recipes of my childhood favorite. This soup is more tomato-y than the recipes I've tried before and it was awesome to try something new. The original recipe called for soaking beans, but that is not my strong suit, so I just used canned beans. Because there are precooked beans, you don't have to cook the soup for a long time, but I did simmer mine for a while to help that bay leaf meld with the soup. It's even better the day after!
