Banana Pudding Pancakes #FantasticalFoodFight

Welcome to another Food Fight! Fantastical Food Fight is a group of food bloggers who will get a theme or ingredient each month and make some sort of variation for it. It could be traditional or nontraditional and can be found in a cookbook, on a blog, or be a blogger's own creation! For more details, check out this page.

This month's Fantastical Food Fight theme is BANANA. Apparently, there is this thing called the International Banana Festival that takes place in the month of September (in Kentucky, I think?). That was all I needed to go ahead and make our September Food Fight all about bananas. I left it up for whatever my blogging friends wanted to do - sweet or savory - anything banana goes!

My birthday was this past Sunday and I decided that even though last month, waiting until the last weekend before the Wednesday to post ended in fiasco, I would risk it. This month, I had a magical recipe in mind and I wanted it on my birthday. I am ridiculously excited to share these gorgeous little pancakes today. What a decadent way to start my 30th year, right?!

It has all the best elements of banana pudding and then you get pancakes too! The sauce honestly seems pretty close to vanilla pudding to me. I'm fairly certain it is pretty much just a homemade pudding and I didn't even realize it when I was making it. Pudding makes me nervous haha. But alas, no hollandaise-esque disaster. Everything went perfectly and my birthday breakfast was FANTASTIC! It was awesome!

Banana Split Trifles

The perfect summertime treat that can be portable in lovely individual servings!

I love desserts that can be portioned individually and I love them even more when they can be portable, like in this recipe for these delish trifles. They take a little bit of time to make, but they truly aren't too bad. The cake is made from a box mix and is light and fluffy. The pudding is homemade which was a first, if I'm remembering correctly, for me. It was super simple and quick. Then it's just a matter of building your trifles into mason jars and you've got a great dessert for a cookout in the summertime. The fresh fruit was simply perfect in this - absolutely reminiscent of a banana split sundae.

Candy Bar Pudding

Candy Bar Pudding | Homemade chocolate pudding that can be paired with your favorite candy bar! #dessert #recipe #chocolate #pudding

I have never made homemade pudding - like no box mix. I actually think the amount of times I've actually made box mix pudding as an adult is only 1 or 2. I digress... I saw this pudding and thought it looked amazing. I made it with Butterfingers (which if I remember correctly is how the original blogger did), but really you could pair it with any candy bar - Baby Ruths, Twix bars, Milky Ways, Reese's cups - nom nom! I used fresh whipped cream, but I definitely think I'll go the Cool Whip route next time.

Secret Recipe Club: Thai Banana Pudding

My August assignment was Krista of The Double Dipped Life. Krista is a married mom of three and her blog is full of delicious looking recipes. She has a menu plan tab - yes! I love seeing menu planning because it's such a big part of how I do things in my house - that includes weekly plans where you can download a shopping list and recipes. Krista also does Double Dipped Sweets as a hobby on the side - gourmet popcorn, caramel apples, and dipped treats, oh my!

This month I decided right of the bat that I would do a sweet recipe because I've been hitting up main courses the last few SRC assignments. I noticed that Krista had a whole section devoted to Thai food and was curious about it, as I've never had it. In her Intro to Thai post, she explained that it all started when her husband took her out to Thai restaurant when they were dating. How sweet, right?! So I thought it'd be a good idea to make something that is meaningful to her :)

I decided upon the Thai Banana Pudding - which was the Thai dessert she had on her recipe index. It also looked like a relatively easy recipe and a baby step into Thai cuisine. It cooked quickly and it was so delicious. It was like banana pudding mixed with tapioca pudding. It's a little more runny than regular pudding, but that didn't bother us in the least bit. It was the perfect dessert!

Cookie Salad

Picture Updated 12/13/2013

This is a family recipe - my mom makes it very rarely. Pretty much only at Christmas time and it is my very very favorite dessert of all-time. It doesn't LOOK that appetizing, by looks are deceiving. It's very rich and very delicious. I just used very about 8 billion times :)
