Blueberry Pie Yogurt Parfaits
I pretty much eat yogurt for breakfast every day and have for a good while now. When I have the opportunity, I love making parfaits. There's something so satisfying about the different layers in the cup. I don't particularly care for blueberry pie - it's okay - but I love the elements of the pie in this yogurt parfait. I mean grahams and yogurts with fresh blueberries - YUM!

Blueberry Cornbread Muffins
These perfect little cornbread muffins are sweetened with maple and each bite has a burst of juicy blueberry!
I've only made homemade cornbread a handful of times but I do enjoy it quite a bit. I wanted to make these because they were cornbread with blueberry and I had never had that. Not necessarily what you might think of having with a chili, but we did and it was great! I wasn't sure if I'd like them with the maple but it wasn't a very strong flavor in it.

Better Than Bakery Blueberry Streusel Muffins
These streusel topped muffins are packed with blueberries - fresh blueberries AND a blueberry sauce swirl!
My husband, Nick, often says that the only muffins he'll eat are topped with streusel otherwise they are just a sad, unfrosted cupcake. I'm not that biased, but I do have to admit that I love a streusel-topped muffin so dang much. While I don't find these better than my favorite bakery muffin (that's basically a cupcake), I do enjoy these gorgeous muffins topped with streusel.

Berry Avocado Summer Salad
The best summer salad with fresh berries and avocado topped with sweet poppyseed dressing!
Berries in salad is something I discovered when I volunteered in the Family Readiness Group in my husband's unit back at Fort Drum years and years ago now. The battalion commander's wife made a salad with strawberries and blueberries in it and I was blown away. It seems so silly to not add fresh fruit to salad, but I had never thought about doing that. Poppyseed dressing was something my mother-in-law introduced me to and I love the combination of berries poppyseed dressing. This summer salad is awesome because you get walnuts, avocado, and feta with it too. My picture does not show those because I forgot the walnuts and feta until I was halfway through eating it -_- But you definitely don't want to forget those!

Quinoa Berry Parfaits
The perfect filling breakfast or snack with just 3 ingredients!
When I was in the hospital after giving birth to my third child a little over 5 years ago, I was given the option to have oatmeal for breakfast. I jumped on it because 1) it's supposed to be good for breastfeeding moms and 2) it's oatmeal. Heck yeah! When they brought it up, it was completely unseasoned and I only had one packet of sugar (which was going to the coffee). I had a yogurt as well and on a whim, I threw my yogurt into the oatmeal to flavor it and sweeten it. I became obsessed and still eat yogurt with my oatmeal to this day.
Why am I talking about oatmeal on a quinoa post? Because this recipe reminded me of that but a fancier version and a slightly lighter version too. I loved the fresh fruit with it too. This is so easy to make in advance or with little prep the day of. Bonus because it can be portable if you need to grab breakfast on the go!

Blueberry Pancake Muffins
Pancakes on the go! These blueberry pancake muffins are the portable breakfast of your dreams - they even have maple syrup without the mess!
I'm going to be super upfront with y'all and tell you that I did not anticipate liking these. I'm weird when it comes to maple syrup. I like the fake kind and I like very very little of it. I'm not 100% sure why I don't love it, but I will tell you that I will only eat it on pancakes, waffles, and french toast in just enough amount to taste but not enough to where I will have any excess on the plate. I despise the smell of maple. But some breakfast foods are not the same without it! I kept my mind slightly open and figured if I didn't care for these muffins, someone in my family would eat them. But I was pleasantly surprised when they were the perfect amount of maple flavor and tasted like a delicious blueberry pancake all in one. It was great!

Blueberry Cheesecake Oatmeal
This oatmeal is sweetened with honey and who doesn't want a little hint of cheesecake in the morning?!
I have always loved oatmeal but I go through spurts where it's all I want for breakfast and snack...every single day. When I was in the hospital after having my third child, I was given plain oatmeal for breakfast one morning with no sugar packets or anything. I was also given strawberry yogurt, so I decided to mix the two together and see what happened and it was SO good. Maybe it was because I was starving, but it quickly became my go-to meal. I got oatmeal-ed out eventually and took some time off eating it. When I started back up, I tried to find some new recipes to try and out and this is one of my top favorites. There is honey for a little sweetness and cinnamon too. The cream cheese is sweetened and is the perfect combination and definitely gives it that cheesecake flavor. It's just a few more steps than making regular oatmeal via the package instructions and really really makes all the difference.

Homemade Blueberry Lemon Danishes
These homemade danishes use Bisquick mix and have a delicious filling, crumble, and glaze!
I have seen a lot of easy recipes for danishes utilizing refrigerated crescent rolls but when I wanted to try something a little different, I was drawn to this recipe from Inside BruCrew Life. This recipe uses Bisquick to make the base of the danishes and they are so lovely. The base is the perfect amount of soft and crunch. I love the crumble and the glaze. But really it is the combination of blueberry and lemon that really makes these little breakfast pastries so wonderful.

Ultimate Summer Salad
The best part of summer is all the fresh fruits and vegetables you can combine to make a delicious salad!
The first time I saw fruit in a salad, I was a little skeptical, but decided to try it. I am fully a fruit in savory salad supporter now. Honestly, just throw a bunch of veggies and fruits my way and I'm a happy camper. This particular salad has blueberries, strawberries, avocado, cucumbers, carrots, tomatoes, red onions, and radishes. I think it was the first time my family had had radishes, which is something I ate a lot as a kid because we had them in our garden. I served my salad up with an apple cider vinaigrette, but I'm sure you could use a wide variety of dressings and it would still be fantastic. I also served mine up with some grilled chicken to make it a main dish. Without protein, it would be a wonderful side salad.

Blueberry Nut Bread
This beautiful blueberry nut bread is the perfect spring breakfast or snack.
I used to make banana bread all the time years ago and fell out of that habit. I saved lots of fruit bread recipes back then because I adore banana bread so much and felt that other fruits had to be pretty dang good too. I was really excited about this blueberry nut bread and a little intrigued by the maple syrup aspect of it. It wasn't strongly maple flavored, which I did like, but it did have a hint of maple enough to remind me of blueberry pancakes and that made me so happy.

Simple Yogurt Parfaits
This is the perfect recipe for a parfait beginner - and also a wonderful recipe for kids to get involved in making a well-balanced breakfast or snack!
Sure it's not the most mindblowing recipe in the world, but it's a great thing to have a base recipe to work off of. I, for one, can get pretty overwhelmed trying to come up with stuff and that's why I appreciate this parfait recipe. It's simple and it's a stepping stone for more complicated parfaits. The possibilities are definitely endless. There are tons of different granolas that can be paired with fruits and different flavors of yogurt. I personally am a huge fan of strawberry and strawberry banana yogurt and I love to eat it with cashew butter and cacao nib granola because you almost get a pb&j flavor profile with a chocolate covered strawberry flavor profile. I hope you all enjoy this super easy parfait recipe. It's also a great beginner recipe if you have kids who are interested in helping in the kitchen! My kids love parfaits and love being able to pick their toppings, so this is a hit with them too.

I've been wanting to jump on the smoothie bowl bandwagon for forever, but I'll be honest..I hate pulling out my blender so much. I don't have it out on the counter (although I would love to) and I also hate cleaning my blender. But I finally decided it was time to try one and it was super wonderful. Probably still not something I'll make all the time, but definitely a nice treat when you're craving berries in particular. I topped ours with blueberries, blackberries, banana, honey, coconut, almonds, and granola (cashew butter and cocoa nibs).

This month's Fantastical Food Fight theme is SALAD. I'm ridiculously excited about this month's theme. It was chosen due to May being National Salad Month (in the US) and what a more perfect time than when loads of fresh produce is in season! I decided to share this salad that is easy to throw together and has blueberries, strawberries, and mandarin oranges inside it.
The chicken can be seasoned how you wish and then it's a matter of throwing the ingredients together with poppy seed dressing and your meal is ready to go.

Double Blueberry Muffins
These muffins are such a treat with DOUBLE the blueberries and a yummy sugar topping!
I feel like the only time I eat blueberries is if I make muffins or pancakes, even though I love them. I adore these blueberry muffins because there is double the amount of blueberries and a delicious sugary topping. If you are in the mood for a delicious breakfast, I highly suggest making these muffins!

Blueberry Pancakes
Perfect homemade blueberry pancakes that are buttery and have a hint of lemon to brighten them up.
I really love making homemade pancakes because they really aren't too many more steps than making them from a box. I personally love all sorts of pancakes including plain ones and fruit pancakes and dessert pancakes. I was excited to try these pancakes. They aren't fluffy like some of the other homemade pancakes I have made, but that isn't a bad thing. They are so buttery and remind me of pancakes I used to get with my mom from our hometown diner when I was a kid. They just kind of melt in your mouth. I love the little zip you get from the lemon zest. It really ties it all together.

Blueberry Breakfast Quinoa
Oatmeal who? This breakfast quinoa has blueberries almonds and is sweetened with a drizzle of honey.
I have fallen in love with quinoa, but I've only made it with a savory dish. I decided it was well overdue for quinoa to appear in a breakfast recipe. Looking at this, it reminded me a lot of oatmeal, so I was confident that I would enjoy it and I was correct. I typically don't like honey, but it was the perfect way to sweeten up this little bowl of goodness - no grittiness from granulated sugar.

Lemon Blueberry Pound Cake
This pound cake is incredibly moist and has such a lovely brightness from the citrus. Perfect for summer!
I have always loved loaf cakes. I used to buy them from Kroger when I worked there as a teen. My favorites were the double chocolate, blueberry, and pumpkin flavors. It honestly kind of blows my mind that lemon blueberry is something I have made and eaten because years ago, I wouldn't have tried it. After Nick's third deployment, he wanted lemon with everything because that is how he made his food tolerable in Afghanistan. I started making savory books with lemon first and I still think I enjoy savory lemon dishes, but I do love lemon with something else in a dessert. Any berry with lemon is delicious. This pound/loaf cake is super moist. The glaze is so yummy. I just loved this cake so much.

PB&J Crumble Yogurt Parfait #FantasticalFoodFight

This month's theme is PB&J -- peanut butter and jelly. Why? Because not only is March National Peanut Month, but it's also National Peanut Lover's Day today! And peanut butter and jelly is such an iconic and classic combination that I thought would fit perfectly. Today, you find recipes containing peanut or peanut butter and fruit (not necessarily jelly or jam). I chose this amazing breakfast parfait that I couldn't get enough of: PB&J Crumble Yogurt Parfait.
Technically speaking, it's actually peanut butter crumble yogurt parfait with fruit, but since I did add the fruit, I renamed it PB&J Crumble Yogurt Parfait. The peanut butter crumble is fantastic. I could and did eat it by the handful. Nick did too. I have eaten it with fresh fruit (the first picture) and frozen fruit that had been slightly heated up.
Everything about these parfaits makes me such a happy camper. But I cannot wait to see what other pb&j treats my blogging pals have to share!

Raspberry Lemonade Cheesecake Parfaits
These parfaits are refreshing and decadent - truly the perfect treat for warm weather.
I am finally obsessed with lemon in everything, so all my years of not being a fan means I have very few recipes saved up and I'm still not completely sold on full-on lemon desserts like lemon cookies or bars. I am sure I will work my way up to them, but I am loving experimenting in the meantime. This sweet dessert had the perfect amount of lemon in it. These little babies were so addictive. I made them way back in 2015 for the Fourth of July (with the addition of blueberries) since they were very festive and the citrus was perfect for summer.
What I really loved was the element of crunch that the almonds added. The nuttiness was just so perfect with the grahams and lemon cheesecake filling and berries. Heaven in a mason jar, folks.
I also found out the hard way that late summertime afternoons do not shed very much natural light at my mom-in-law's, so I used her breezeway as my backdrop LOL. Except the one picture from my kitchen island.

Triple Berry Crisp
This crisp is the perfect thing to whip up with berries with or without ice cream on top.
We had family in town last summer and we scraped together a quick meal to serve a crowd. I needed a quick summery dessert that wasn't really heavy and didn't take many ingredients or time to make. I had already pulled together the 30-Minute Shepherd's Pie and I knew I wanted to do something with berries. I hunted in one of my favorite cookbooks: Sally's Baking Addiction. I found this berry crisp recipe and I had everything on hand to make it. I ate mine without ice cream because it's incredible without it.
