Simple Yogurt Parfaits

This is the perfect recipe for a parfait beginner - and also a wonderful recipe for kids to get involved in making a well-balanced breakfast or snack!

Simple Yogurt Parfait #breakfast #parfait #granola #yogurt #snack #recipe

Sure it's not the most mindblowing recipe in the world, but it's a great thing to have a base recipe to work off of. I, for one, can get pretty overwhelmed trying to come up with stuff and that's why I appreciate this parfait recipe. It's simple and it's a stepping stone for more complicated parfaits. The possibilities are definitely endless. There are tons of different granolas that can be paired with fruits and different flavors of yogurt. I personally am a huge fan of strawberry and strawberry banana yogurt and I love to eat it with cashew butter and cacao nib granola because you almost get a pb&j flavor profile with a chocolate covered strawberry flavor profile. I hope you all enjoy this super easy parfait recipe. It's also a great beginner recipe if you have kids who are interested in helping in the kitchen! My kids love parfaits and love being able to pick their toppings, so this is a hit with them too.

Berrylicious Smoothie Bowls

Start your day with this berrylicious recipe - loads of berries plus whatever toppings you want!

I've been wanting to jump on the smoothie bowl bandwagon for forever, but I'll be honest..I hate pulling out my blender so much. I don't have it out on the counter (although I would love to) and I also hate cleaning my blender. But I finally decided it was time to try one and it was super wonderful. Probably still not something I'll make all the time, but definitely a nice treat when you're craving berries in particular. I topped ours with blueberries, blackberries, banana, honey, coconut, almonds, and granola (cashew butter and cocoa nibs).

Strawberry Almond Chicken Salad #FantasticalFoodFight

Welcome to another Food Fight! Fantastical Food Fight is a group of food bloggers who will get a theme or ingredient each month and make some sort of variation for it. It could be traditional or nontraditional and can be found in a cookbook, on a blog, or be a blogger's own creation! For more details, check out this page.

This month's Fantastical Food Fight theme is SALAD. I'm ridiculously excited about this month's theme. It was chosen due to May being National Salad Month (in the US) and what a more perfect time than when loads of fresh produce is in season! I decided to share this salad that is easy to throw together and has blueberries, strawberries, and mandarin oranges inside it.

The chicken can be seasoned how you wish and then it's a matter of throwing the ingredients together with poppy seed dressing and your meal is ready to go.

Blueberry Breakfast Quinoa

Oatmeal who? This breakfast quinoa has blueberries almonds and is sweetened with a drizzle of honey.

I have fallen in love with quinoa, but I've only made it with a savory dish. I decided it was well overdue for quinoa to appear in a breakfast recipe. Looking at this, it reminded me a lot of oatmeal, so I was confident that I would enjoy it and I was correct. I typically don't like honey, but it was the perfect way to sweeten up this little bowl of goodness - no grittiness from granulated sugar.

Raspberry Lemonade Cheesecake Parfaits

These parfaits are refreshing and decadent - truly the perfect treat for warm weather.

I am finally obsessed with lemon in everything, so all my years of not being a fan means I have very few recipes saved up and I'm still not completely sold on full-on lemon desserts like lemon cookies or bars. I am sure I will work my way up to them, but I am loving experimenting in the meantime. This sweet dessert had the perfect amount of lemon in it. These little babies were so addictive. I made them way back in 2015 for the Fourth of July (with the addition of blueberries) since they were very festive and the citrus was perfect for summer.

What I really loved was the element of crunch that the almonds added. The nuttiness was just so perfect with the grahams and lemon cheesecake filling and berries. Heaven in a mason jar, folks.

I also found out the hard way that late summertime afternoons do not shed very much natural light at my mom-in-law's, so I used her breezeway as my backdrop LOL. Except the one picture from my kitchen island.

Broccoli & Cheese Omelet

Broccoli and Cheese Omelet | A lovely way to start the day with broccoli sweet peppers, and almonds #recipe #omelet #broccoli

I love trying recipes from fellow Secret Recipe Club members and sharing them here on the blog. I, of course, do that once a month for my reveal day post, but I also love to peruse other groups' blogs other than my group, Group D. This recipe comes from Cindy of Hun...What's For Dinner? who is in Group A. I modified it to using 2 whole eggs, instead of 1 egg and 2 egg whites, but otherwise I kept it pretty much how Cindy made it. I have always loved broccoli and loved eating cheese on broccoli, so I knew I would love this recipe. I adore the almonds in the omelet. They add a nice crunchy texture that is otherwise missing in this omelet, but they don't overwhelm it with an unpleasantness by any means. I was very skeptical about adding them, but I wanted to be a teensy bit adventurous and I am very glad that I was. Thanks, Cindy, for a wonderful recipe!

Spiced Maple Roasted Nuts

Spiced Maple Roasted Nuts | Walnuts, pecans, and almonds with maple and notes of cinnamon and ginger #snacks #maple #autumn #fall #recipe

I made these nuts for New Year's Eve for a snack during the prep of the other foods - and for Nick, in particular. Nick snacks like crazy during the holiday food prep and if you want any food to make it to the table, there has to at least be a cheese tray for him to stay out of the main course. On NYE, we like to do just appetizers for "dinner" and we kind of spread it out over the course of about 8 hours - from 4pm to midnight. I'm not really sure if that's the norm for everyone else, but I love it! We usually do some kind of cheese dip, wings, and meatballs. We dig into the buckeyes and potato candy that my mom-in-law makes each year. This past NYE, I also made strawberry salsa with cinnamon tortilla chips and s'mores dip (that we dipped fresh fruit and grahams into). But again, it's always a good idea to have a snack around.

This recipe makes a pretty decent size batch and I sent some home with my mom-in-law because not only did we love them, she did too. They are one of those things that you have to hide before you devour all of them! I personally don't care for maple syrup or honey (which this recipe has) and figured that I wouldn't like the nuts at all, but I was totally wrong. I loved them! They taste like fall, first of all, and the little cayenne really adds dimension to the flavor. You get a little bit of that heat as an end note, but it isn't overwhelming!

*Update 12/28/15 - found my recipe, so I updated the quantities I used!
