Have your cookie as a cake, and eat it too!
I love sugar cookies and I love bundt cakes, so I figured I couldn't go wrong making this delicious dessert that combines the two. I also am right most of the time, so, of course, no big surprise when this bundt cake turned out wonderfully. I wish I still had the picture evidence, but I brought this to my mother-in-law's for Sunday family dinner and Nick put it in the car. And buckled it in the front passenger seat! It was the funniest thing ever. I guess I just risk going up and down hills and curves and chance that my cake will be okay. This tastes just like a sugar cookie would in cake form and the frosting was sweet sweet sweet!

What you need:
For the cake:
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 1 tsp. salt
- 4 large eggs
- 2 tsp. baking powder
- 3 cups all-purpose flour
- 1 cup half and half
- 1 tsp. vanilla extract
- 1 pkg. (8 oz.) cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 1/2 cups powdered sugar
- Pinch of salt
- 3 tsp. half and half
- 1/4 to 1/2 cup sprinkles
- For the cake: in a stand mixer, beat together butter and sugar until light and fluffy.
- Add salt. Then add eggs, one at a time, mixing until each egg is incorporated. Add baking powder.
- Then alternate adding flour with half and half, starting and ending with the flour, mix until just combined. Add vanilla.
- Pour batter into a greased bundt pan and smooth with a spatula.
- Bake in a preheated 350 degree oven for 55 to 60 minutes or until a toothpick inserted comes out clean.
- Let cool in pan for 5 minutes. Then turn cake out onto a wire rack and cool completely.
- Once cake is almost cooled, make frosting by beating cream cheese with butter until smooth and creamy.
- Add powdered sugar 1 cup at a time. Then add half and half until you reach spreadable consistency.
- Move cake to a serving platter and then spread frosting on top gently. Top with sprinkles.
