This no-bake dessert is so easy to throw together and can feed a crowd! It's truly a delight
I love no-bake desserts that mimic cheesecake and I love any time I can get a cherry recipe because I don't have cherries enough. I think on the rare occasion I do, it's atop a sundae or milkshake. I don't think I have ever made anything from fresh cherries, so that's definitely on my foodie bucket list. But for now, I have to share this wonderful dessert that is no-bake and uses canned cherries. You can absolutely bake the crust for more sturdiness, but I actually like it better unbaked. This really reminds me of the Jell-O cherry cheesecake but a littler heartier.

What you need:
For the crust:
- 2 1/2 cups graham cracker crumbs
- 2 Tbsp. granulated sugar
- 3/4 cup unsalted butter, melted
- 2 pkg. (8 oz. each) cream cheese, softened
- 1 tub (8 oz.) Cool Whip
- 1 cup powdered sugar
- 2 tsp. vanilla extract
- 2 cans (21 oz. each) cherry pie filling
- For the crust: stir together ingredients in a large bowl.
- Press in an aluminum foil lined 13x9-inch baking pan.
- Optional: bake crust in a preheated 375 degree oven for 10 minutes for a sturdier crust. If you do, make sure it is completely cooled before adding filling.
- For the filling: beat cream cheese with an electric mixer until smooth.
- Add vanilla and powdered sugar and mix for 2 minutes.
- Then add Cool Whip in two additions and stir with a spatula just until combined.
- Top crust with filling and then refrigerate for at least 2 hours to set.
- Top filling with cans of pie filling.
- Cut into squares and serve!
- Store any leftover dessert in the refrigerator.
