When you're craving cookies but just one, but maybe more than one, make a GIANT cookie just for you!
Desserts for one/two are some of my favorites because I've been known to slam some cookies and having fewer in the house is better. Because I will eat way too many cookies. I wish I had thought to post the dough ball next to a banana for size reference but it was heavy and as big as my palm - it was crazy. My husband knew I was making cookies but didn't realize it was just one. His face when he walked in when I had this giant cookie was priceless. We ended up splitting it four ways and it was awesome!What you need:
- 1/2 cup all purpose flour
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 2 Tbsp. unsalted butter, room temperature
- 2 Tbsp. granulated sugar
- 2 Tbsp. brown sugar
- 2 Tbsp. beaten egg (crack an egg, beat it, and use 2 Tbsp.)
- 1/2 tsp. vanilla extract
- 2 Tbsp. creamy peanut butter
- 1/4 cup Reese's Pieces, plus some for on top
- 1/4 cup semisweet chocolate chips
Directions:
- In a large mixing bowl, beat together butter with sugars until light and fluffy.
- Add egg and vanilla and mix until well combined. Stir in peanut butter.
- Then add flour, baking soda, and salt. Mix until just combined.
- Fold in Reese's Pieces and chocolate chips.
- Scoop the dough into a ball that is tall onto a parchment paper or silicone mat lined baking sheet and then add a few Reese's Pieces on top.
- Bake in a preheated 350 degree oven for 17 to 19 minutes or until edges are golden brown.
- Let cool on the baking sheet for 10 minutes.
Giant Reese's Pieces Cookie
Ingredients
