Cheese makes everything better plus these brussels are smashed and roasted. Absolutely fantastic!
Let's talk about these brussels...I personally love brussels any which way I can get them. However, my family is a little skeptical when they are whole and I thought what better way to make them than covered in cheese?! That's the trick, right? Kids don't like a veggie, add cheese. I really love the element of blanching and then smashing and roasting the brussels. It just makes for such a good side dish. I think it works so well as a side for chicken or pork.
What you need:
- 2 lb. brussels sprouts
- 2 Tbsp. extra virgin olive oil
- 2 cloves minced garlic
- 1 tsp. freshly chopped thyme
- Kosher salt
- Freshly ground black pepper
- 1 cup shredded mozzarella
- 1/4 cup shredded Parmesan
- Freshly chopped parsley for garnish
Directions:
- Bring a large pot of salted water to a boil. Add brussels sprouts and cook until bright green and tender, about 8 to 10 minutes.
- Using a slotted spoon, remove brussels to an ice bath to cool. Then drain.
- On a large baking sheet lined with parchment paper, toss brussels with oil, garlic, and thyme.
- Then take a mason jar or drinking glass and smash to flatten. Season each with salt and pepper.
- Sprinkle with mozzarella and Parmesan.
- Bake in a preheated 425 degree oven for about 20 to 25 minutes until cheese has melted and golden.
- Garnish with parsley.
