This month's Fantastical Food Fight theme is SOURDOUGH. I had this on my list of potential themes for a long time because I wasn't using my sourdough starter. I ended up starting a new starter and have high hopes that this one will go a little better. I think mine went south due to not using it and it needed to be cut down and fed instead of just fed alone. When I have sourdough on hand, it is used almost exclusively for the family recipe for sourdough coffee cake. I have found that it is actually quite similar to many recipes online, so I decided to make and share one that is similar, but not the same. To keep the family secret...well, secret.This is definitely the very best coffee cake there is. Nothing to date has lived up to how good sourdough coffee cake is. I highly highly recommend trying it out for yourself, you will not be disappointed!

What you need:
For the cake:
- 1 cup sourdough starter
- 1/3 cup vegetable oil
- 1 egg
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. cinnamon
- 1/2 cup brown sugar
- 2 Tbsp. unsalted butter
- 1 Tbsp. all-purpose flour
- For the cake: In a small bowl, combine sourdough, vegetable oil, and egg.
- In a medium bowl, combine flour, sugar, salt, baking soda, and cinnamon.
- Add wet ingredients to dry and stir until just combined.
- Pour into a greased 9-inch square pan.
- For the topping: combine ingredients with a pastry cutter or fork until pea-sized crumbs form.
- Sprinkle topping over the top of the batter.
- Bake in a preheated 350 degree oven for 35 minutes or until a toothpick inserted into the center comes out clean.
