Meatloaf and pizza come together in this delicious dinner recipe with pepperoni inside and cheese and pizza sauce on top!
I found two recipes for pizza meatloaf and made both with varying levels of success - aka the consistency and baking time weren't always the most accurate. I messed with the recipes until I reached one that really worked for me. I have had horrible luck with stuffing my meatloaf with cheese, so cheese is on top. Instead of using whole pepperonis and chopping them, I opted for mini pepperonis. They are way less of a headache. One of the recipes called for 4 eggs and sauce in the meatloaf mixture, I went with 2 eggs and no sauce in the mixture. The final result was definitely a keeper and the whole family truly loves this variation on meatloaf. All the elements of pizza are there and who wouldn't love meatloaf that tastes like pizza!

What you need:
- 1 lb. ground beef
- 1/2 lb. Italian sausage
- 1/4 cup mini pepperonis
- 2/3 cup pizza or spaghetti sauce
- 1/2 cup Panko
- 2 eggs, lightly beaten
- 1 tsp. oregano
- 2 Tbsp. dried parsley
- 1/2 tsp. salt
- 1/4 cup shredded Parmesan cheese
- 8 oz. sliced mozzarella or Provolone, divided
- Mix together beef, sausage, pepperoni, Panko, eggs, oregano, parsley, salt, and Parmesan.
- Place mixture into a loaf pan and top with sauce and slices of cheese.
- Bake in a preheated 375 degree oven for 1 hour or until cooked through.
- If your cheese isn't browned, you can broil it on low for a couple minutes.
Grumpy's Honeybunch's Jalapeno Cheddar Meatloaf sounds like it'll taste like a jalapeno popper and I am all about that. I cannot wait to try it. I love making foods that aren't pizza have pizza flavors. These Italian Pizza Burgers are one of our favorite burgers.
