Marshmallow Salads Oreo and Strawberry Recipes

Hola Amigos! Happy First Day of Summer 2013!!!! Let the good times roll!!! Today I'm ending my series of Deli Salads with one seeing everywhere...the marshmallow salads...they must be good because they are in every single deli counter I've been. As it has been happening so far, I tried some...and some where too sweet   (to the point of  giving me a headache) yikes, some had nothing but marshmallows and no fluff and some others were just right but too many calories. Here is my version of the 2 most popular ones, chocolate and strawberry, I think I managed to keep them "waist friendly" but just in case I made only small batches!

Oreo Marshmallow Salad

1 1/2 Cups Mini Marshmallows
1/2 Container Fat Free Whipped Topping
1 (4 oz ) "Whips" Chocolate yogurt
6 Oreo Cookies Crushed, plus 4 for garnishing
1 1/2 TBSP French Vanilla Creamer
1 TBSP Chocolate Syrup

Mix all the ingredients, saving 4 Oreo cookies for garnishing. Chill and serve after 2 hours.

Strawberry Marshmallow Salad

1 1/2 Cups Mini Marshmallows
1/2 Container Fat Free Whipped Topping
1 (.3oz) envelope Sugar Free Jello
1 (4 oz) "Whips" Strawberry yogurt
1 mandarin orange in segments
4 Strawberries chopped
2 TBSP shredded coconut
Maraschino cherries for salad and garnish

Mix all the ingredients saving some Cherries for garnish. Chill and serve after 2 hours.

Pretty Tasty I should say and definitely a treat for kids and summer!

It's on the sweet side, so I'm glad I made small batches so it won't be tempted.

I don't think there's any way of making this salad light...I tried though, but with the marshmallows...forget about it, lol

Broccoli Salad Recipe with Baked Vidalia Onion Dressing

Hola Amigos! Another installment of the Deli Salad Series here for your consideration. Today I'm sharing with you my version of a very pretty salad but to be honest, sometimes you can't have more than the first bite. Again Thank Goodness for those little samples!!! Broccoli Salad! The problem (at least to me for health reasons) uncooked broccoli, too dry, too soggy and the worstof them all....smells like broccoli..you know, that smell...can't even describe it, but if you've had them before, you know what I'm talking about.
In my version of this salad I quickly steamed and  blanched the broccoli and instead of mayo for dressing I used a sweet, creamy but light Baked Vidalia Onion Dressing, easy to make and in my humble opinion,  not as packed with calories and sugar as the ones sold on stores or even the ones you can find online since there is no oil and very little to no sugar at all. Here is the recipe

Broccoli Salad with Baked Vidalia Onion Dressing

1 Head of Broccoli
1 Medium Carrot, Shredded
1 Small Red Bell Pepper, chopped
1 Small Green Bell Pepper, chopped
1/2 Cup Craisins 
4 oz Prosciutto 
4 oz Smoked Gouda, shredded
2 oz Natural Almond Slivers 
a Large Bowl with Ice and Water

Wash your broccoli thoroughly with running cold water to get rid of any dirt or bugs. Break it into pieces that would fit into a steam pot. I season my steam water with salt,  garlic powder, lemon pepper and a slice of lemon. Steam for 5 minutes and quickly remove the broccoli from the heat and submerge it into a bowl of  iced water to stop the cooking. At this point the broccoli will be bright green but crunchy. Once they are cool, let them drain or pat dry with a kitchen towel and they will be perfect and ready for your salad.

In a large salad bowl add the broccoli, carrot, chopped bell peppers, craisins and prosciutto. Mix.
Add as much of the Baked Vidalia Onion Dressing as you wish, mix to coat all the vegetables. Top your salad with the shredded cheese and the slivered almonds.

Baked  Vidalia Onion Dressing

1 Large Vidalia Onion
1/2 Low Fat Buttermilk
1 tsps Balsmic Vinegar
1 1/2 tsps Mustard
1/4 tsps Celery Salt
a Pinch of Sugar (optional)
salt, pepper, cayanne pepper to taste
aluminum foil

Heat your oven at 450 degrees. Prepare your onion by peeling it and cutting both ends of it (to get rid of the little heads) Drizzle a little of olive oil if you want and wrap it tightly with heavy duty double aluminum foil.
Place on a cookie sheet and bake for 30-40 minutes. Remove from the oven and let it cool until is easy to handle.
Once it's cool enough place the onion and it's cooking juices trapped in the foil into a blender, add buttermilk vinegar, mustard and the rest of the seasonings, Blend on high until smooth. Adjust seasoning, if not sweet enough to your taste, add a little sugar until you are satisfied with the results.

Serve over salad.

The secret to the sweetness of this dressing is baking the onion to get the sugar in it to an almost point of caramel.

This Salad is a custom designs! The broccoli is cooked but crunchy, it's creamy with a natural touch of sweetness and sprinkled with little bites of saltines from the prosciutto.

And if this wasn't enough the Smoked Gouda and the almonds add a final note of deep flavor and texture!

I think I will stay away from the Salad Deli Counter for a while, I don't know why I never tried this before, but "Everything Under Heaven has it's Time"....this was mine.

Chicken Pecan and Pear Salad Recipe with Yogurt Dressing

Chicken Pecan and Pear Salad Recipe, refreshing, crispy and light, just the thing you need for lunch or a light nutritious summer meal!
Hola Amigos! How is your week going so far? I hope the sun is shining in your neck of the woods and you're starting to feel the summer breeze on your face. Today I'm bringing you another deli favorite of mine, Chicken Salad with nuts! By now you all know that I'm trying to lower the calories a bit, I really don't know if I'm cutting enough of them, but it sure feels like it and I know the one I can find at my favorite deli is loaded with mayo, a big no no, right?
Here is my humble version for your consideration.

Chicken Pecan and Pear Salad with Yogurt Dressing

2 Grilled Chicken Breast, diced
1 green pear, diced
3/4 Cup Celery, diced
1 1/2 Cup Green Seedless Grapes, halved
1 1/2 oz Pecans, chopped
1 1/2 oz Walnuts, chopped
Mix all these ingredients and set aside while preparing  the dressing.

Yogurt Dressing

1 Cup Greek Plain Yogurt
1 TBSP Olive Oil
2 Cloves Garlic finely minced
4 oz Neufchatel Cheese
1 Cucumber peeled, seeded and cubed
1 tsps Fresh Dill
1/4 tsps Lemon Juice
salt, white pepper, onion powder
1TBSP BBQ Sauce (hubs suggestion)
pinch of sugar (to neutralize the acidity of the Yogurt)

Combine all these ingredients, adjust seasoning to taste and refrigerate for 1 hour before mixing it with the chicken portion of your salad.
When ready, mix with the diced chicken, nuts and fruit and serve on spinach tortillas like a wrap.

Well, all I can say is I'm not buying chicken salad at the deli anymore! This one is light (I think) and has the right balance of sweetness, crunch and mainly Chicken!

I recognize it's somewhat similar to the one wrap sold at a popular fast food restaurant, but at least I'm not paying for the 638 calories!!! oh yeah,,,in case you didn't know...638 making 342 of them, fat!
You do the math!

You can adjust the seasoning to your taste, my hubs cheated a little and added a touch, just a touch of BBQ sauce to his...but he adds BBQ sauce even to his coffee so it didn't surprise me lol.

There are one thousand versions of chicken salads out there, I'm just throwing mine in the hat and let you try a slight different lighter version.

Southwestern Steak Salad Recipe and Homemade Southwestern Dressing

Hola Amigos! Your friend here at Just Dip It In Chocolate is trying to get back in shape, the best way I possibly can and oh boy...it's challenging. I know I've sung this song before, but this time I'm sticking to my goal that by my birthday in Sept.  (please don't send any Ferraries now,...well if you must, LOL) or the Blog's 1'st blogveressary in October , whatever comes first, I've lost 20 pounds! Easy for some, very very hard for me for different reasons...but any who...
This is my first attempt of something "healthy" or somewhat healthy also keeping in theme with the 1 dish meal! I hope you enjoy it!
Southwestern Steak Salad
1 box 16 oz pasta
1 1/2 Pounds Top Sirloin Steak
1 can Southwestern beans (red beans, black, pinto, corn)
1 Small Red Bell Pepper, chopped
1 Small Green Bell Pepper, Chopped
1/4 Red Onion, Chopped
Half Pint of  Tomatoes Halved 

Cook your pasta according to the box directions or your personal taste. 
Grill your steak also to your liking (my hubs likes his steak on the "done" side), and cut into thin strips.
Drain your pasta, add and mix in  your chopped vegetables,  beans  and some of your Southwestern Dressing. 
Top it all of  with your steak.

This amount of steak and pasta will serve 4 with some leftovers too!

Southwestern Dressing
8 Oz Plain Yogurt
1/2 Low fat Mayo
1 1/2 TBSP Low Fat Buttermilk
1 TBSP  Mustard
2 TBSP Orange juice
1 1/2 tsp Minced Garlic
1 tsp Chipotle Powder
1 tsp Minced Onions
1 tsp Dried Oregano
1 tsp Ground Cumin


Mix all these ingredients and you will get a very creamy, light and spicy dressing that goes well not only with your salad but vegetables as well.

I just loved it! It's so flavorful you really don't need  a whole lot to be satisfied.

I supposed you could make it even healthier with whole wheat pasta, but I'm not there yet, lol
You also appease your appetite  just by looking at this arrange of pretty colors and textures!

Loaded Baked Potato Salad

Hola Amigos! It is officially summer in my household today! School is Out , kids are home and mom is about to have an entire season hopefully of "All in 1 meals"...I've been waiting for these sunny and warm days for too long to stay cooped in the house behind the stove. My desire for a sun tan will translate in 1 dish that has everything , protein, carbs and veggies, no sides, no extras, no nothing...just put it in a bowl and if you are lucky you will get a piece of bread to go with it...LOL...tasty bread of course.

Mi first dish of the season is a salad that I'm seeing in every deli around me Loaded Baked Potato Salad. Some good, some O.K., some that I have to go "what a heck, was that"? <----awful! , Thank Goodness for the samples they offer! The way they look it's so deceiving sometimes, potatoes too hard, no seasoning, where is the bacon, where are the potatoes...well you get the idea and I'm sure this has happened to you too.  So,  since I'm tired of trying them all over the place and being disappointed,  I'm making my own. Here it goes:

Loaded "Chicken" Baked Potato Salad


4 potatoes
1 grilled or roasted Chicken Breast, shredded
2 TBSP Unsalted Butter
6 Strips of Cooked Bacon chopped in small pieces
1/2 Cup Cheddar Cheese, shredded. (or your favorite cheese)
1/2 Sour Cream
1/4 Cup Mayo
2 Cooked Eggs, optional
Onion Powder, Salt and Pepper to taste

Cook your potatoes the usual way as you make your potato salad. Diced  them and season  them liberally with onion powder, salt and pepper. It's important to season the potatoes before adding any fat to coat them. 
In a microwave safe container, add butter and heat it up until melted. Drizzle all over the potatoes. Add shredded chicken, sour cream , and mayo. Mix together until all the potatoes and chicken  are covered with the sour cream and mayo. 
Add chopped bacon, mix.
Top it of with a few slices of cooked egg and shredded cheese.

I'm happy with the results of my 1 dish loaded salad.
It has everything I need and just think that you could use ham, turkey  or no meat at all, but how about broccoli, yummy!
