Hola Amigos! After cooking all week, we all feel like taking a break on the weekends, and the best way of doing it (and cheapest) is to cook a casserole big enough to feed an army and tasty and satisfying for your soldiers not to mind reheating leftovers the next day!
Mostaccioli is a favorite. My grandma used to called it Macarrones Asados! She made the most delicious food ever, well I think we all  believe our grandma's are the best at everything anyways, right? I'm sure they are!

I asked my readers on FB how they have theirs, with meat as a main dish or plain as a side, but you know Facebook, No One gets to see what you post there unless a) you have a large fan base b) you pay to promote your status, or c) your  family and friends love you so much they keep up with what you do. I'm blessed and proud to have option C . I got 2 answers, one from my friend +Diane Kaul blogger at Giraffe Legs and she likes it as a main dish with meat in it, delicious and with endless options and the other one from my sweet adoptive little "sis" and blog designer,  Brooke, creative at Uplifted Designs who likes it as a side. Knowing my boys, I decided to play it safe and make a big casserole as a side.

This is a common recipe, everybody has their own little extra special ingredient and that is what I'm interested on exploring. New possibilities and tastes for a classic!

My motto bake 2 freeze 1 applies to this dish, only don't bake  it after you are done preparing it, freeze it well sealed right away and then bake it for that day you are scratching your head for what to have for dinner!
They all liked it  and I was able to stay out of he kitchen for the weekend a win win situation in my book if you ask me!

Cheesy Baked Mostaccioli 
Ingredients:
2 Cups Uncooked Tube Shaped Pasta
1 Jar (24 oz) Spaghetti Sauce of your choice
1 (10 3/4 oz) Condensed Cheddar Cheese Soup
1/2 Can Milk
1 Large Egg, Beaten
2 Cups Sharp Cheddar Cheese, Shredded (about 16 oz)
1 Cup Cottage Cheese
Pepper. Salt and Garlic Powder to taste
1 Cup Cheddar Cheese "Pringles" Chips, Crushed
1/2 Cup Parmesan Cheese
Directions:
Preheat oven at 350 F.
In a large saucepan prepare your pasta with plenty of salt in the water as indicated on the package. Once drained, place it in a large mixing bowl and start adding ingredients to it mixing after each ingredient is added carefully not to break the pasta. After the last cheese is added, the cottage cheese, check the pasta for flavors and add the condiments, pepper and garlic powder to taste and extra salt if needed.
Pour the mix in 2 separate, previously greased baking dishes. I used (2) 9x9 dishes.
*If you are going to freeze one baking dish, cover the container well and freeze. Remove from freezer, thaw in the refrigerator add the toppings after it thaws and  you are ready to bake it.
Top the remaining baking dish with crushed chips and Parmesan cheese. Bake for 45 minutes. Let it rest and serve with salad, garlic bread and enjoy!

Prep Time 20 minutes                      Cook Time 45 minutes                       Serves 8-12

Hola Amigos: This is an easy chicken recipe that will set your taste buds on  a party mood! It's tender, juicy and spicy, just like a festive meal should be!

It also uses very inexpensive chicken quarters, but certainly you could use any chicken cuts you have handy! I think that is why we all love chicken! it's so versatile!

When it comes to the ingredients, there are very few, corn and black beans take center stage, highlighted by a few spices and a whole lot of flavor! It's smothered in a delicious tomato based sauce where all the ingredients combine and become one with the chicken! You can hardly see the chicken...but it's there, under all that goodness!

It goes in the oven leaving you plenty of time while it cooks to get some things done around the house.
I personally love the bright colors, the combination of textures and of course the flavors!. Serve it with some white rice or flour tortillas and dinner would be memorable!

Smothered Fiesta Chicken
Ingredients
4 Chicken Leg Quarters
1 Can Black Beans
1 Can Sweet Corn
1 Can Diced Tomatoes with Jalapenos
1/2 Can Chicken Broth
1 1/2 tsp Minced Onion
1 tsp Cumin
1 tsp Oregano
1 tsp Paprika
1 tsp Ancho Chilli
Pinch of Coriander
1 1/2 Cup Shredded Cheddar Jack Cheese
Oil for browning
Directions:
Season chicken with salt & pepper or seasonings of your liking. Let marinate for at least 30 minutes. (marinating overnight is always better). 
Preheat your oven at 365F . 
In a large very hot oiled  sauce pan, brown the chicken, skin side down. Once all the pieces are browned transfer to a baking pan. In the same saucepan add chicken broth to deglaze it, scrapping all the bits and juices left from browning. Add diced tomatoes, corn, beans and spices. Cook for 5 minutes and cover chicken with this sauce. Cover you baking dish with aluminum foil or a lid and bake for 30-35 minutes.
Remove from oven and sprinkle with cheese and let it melt.
Serve with white rice or flour tortillas. Enjoy!

Hola Amigos! This is the season for shorter days, long lines, big traffic jams, hustle and bustle, so why not take it easy in the kitchen and make a delicious easy dinner to feed our families with as little effort as possible. But don't get me wrong, not because it's easy means tasteless, au contraire mon cheri, lol! Since we are using just a few ingredients we are going to use good quality and get the best flavors out of this meal!

This is basically a deconstructed classic, chicken cordon bleu we all love but sometimes we don't have all the time in the world to prepare, roll the chicken breast, breading it, browning and baking.

All the ingredients are present on this dish, and if you are missing the carbs from the breading, you get the pasta to complement it.

It's creamy and cheese, no room for dry chicken here! And of course, since everything tastes better with bacon, it has a bit of the good stuff to gives us some unexpected flavor and crunch.

Chicken Cordon Bleu Pasta
Ingredients
6 Slices Bacon, Chopped
1 Lb Chicken Tenders, chopped
1/4 Lb Smoked Ham, cubed
1/2 Cup White Wine
8 oz Sliced Mushrooms
2 Cups Bechamel Sauce
1/2 Cup Peas
1 Cup Shredded Swiss Cheese
Your favorite Pasta
Directions:
In a large hot skillet brown chopped bacon until fat is rendered. Add chopped chicken and saute until cooked and no longer pink, like 8-10 minutes. Add ham and mix. Add white wine and let the alcohol evaporate, like 3 minutes. Add bechamel sauce and mushrooms, mix well until everything is coated with the bechamel sauce. Remove from heat. Before serving, add peas. Serve over pasta and top with shredded Swiss cheese. Enjoy.



Prep Time: 10 minutes                               Cook Time: 20 minutes                     Serves  4

Bacon and Cheese Cornbread Recipe
Ingredients:
2 (8.5 oz) Jiffy Corn Muffin Mix
1 (8 oz) Package Cottage Cheese
1 Cup Cheddar Cheese
1 TBSP Chipotle in Adobo Sauce
4 Eggs, beaten
4 Strips of Bacon, cooked and crumbled
1 (8 oz) Package Frozen Broccoli 
1 Small onion, chopped 
1/2 Cup Butter + 1 TBSP extra
Directions:
Pre-heat oven at 350 degrees. Melt butter in a 9 x 13 inch pan. 
In a medium skillet melt 1 TBSP butter and saute onion until transparent. Remove from skillet.
Mix all the ingredients and add saute onions. Add this mix to the previously buttered baking pan. Bake for 45 minutes until toothpick comes out clean. Serve warm and Enjoy!

Stuffed Chicken Medallions
Ingredients
4 Boneless Chicken Breast (about 2 lbs)
1 (16 oz) Bag Spinach
1 (16 oz) Container Ricotta Cheese
1 ( 1 oz) Italian Salad Seasoning Mix
1 (2 oz) or 8 slices Pancetta
1 TBSP Butter
3/4 Cup Cream
Parmesan Cheese,
Salt and Pepper to taste.
Directions: 
Heat oven at 350 degrees.
Using a sharp knife, open each of your boneless chicken breast until you get sort of a butterfly out of each one. Between 2 pieces of parchment paper, flatten then a little bit so it's easy for you to stuff them. Set aside.
In a large bowl combine your ricotta cheese, spinach and salad mix. 
Take a flattened chicken breast on to a flat surface,season with some salt and pepper and  place 2 slices of pancetta on it, place some of the cheese and spinach mix, roll it a little bit and using some wooden toothpick pinch the sides together so the stuffing stays in place. Repeat the process with the rest of the chicken breasts.
Place in a bake safe pan and bake covered  for about 30-40 minutes until the chicken is cooked. Remove the chicken from the baking pan and let it rest before cutting it in the shape of medallions. 

To make the sauce, use the pan chicken drippings left on the baking dish. Place them in a small sauce pan with butter and cream, season with salt and pepper to taste. Cook for a few minutes without letting it boil until it reduces. Remove from heat and sprinkle some Parmesan cheese on top of the sauce and serve on chicken medallions. Enjoy.

Prep Time: 10 minutes                          Cook Time: 30-40 minutes                    Serves: 4

Spider Eggs Halloween Plantain and Cheese Fritters Recipe

Hola Amigos! Sharing with you today a quick recipe for a tasty appetizer! Sweet and Salty, Crispy and Soft with a bonus...Cheese!!! That's right!, this appetizer has it all!! even the spooky factor if you put it together the right way...like with a giant Spider!!!

I love Plantains, I can't get tired of a fruit that is edible in every stage of it's life, green, yellow and even black! We used to make these back home in Panama for weekend breakfast, or just a snack to get us going until supper later in the day.

I made mine quite big this time, after all...these particular ones are the offspring of this Giant Mamma Spider..yikes!

Do you guys have any fears or phobias? Some members of my house are not fond of spiders, I don't have a problem with them but I do with roaches (I even hate saying that name)

Well guys, enough of spiders and bugs for now, joking aside these are so good you can't have just one! I hope you give them a try this season and bring a taste of the tropics home when the weather gets cold outside!

Spider Eggs Plantain and Cheese Fritters
Ingredients:
2-3 Yellow Plantains
Garlic Powder, Onion Powder, White Pepper, Smoked Paprika 1 Tsps each
1/8 Pd Chorizo
1 TBSP Corn Starch
1/8 Pd your favorite Cheese
Panko Bread Crumbs
Oil for frying
Directions:
Cut each plantain in 3 pieces. Cut ends too.
In a heavy pot full of water place your plantains with skin and cook for about 20 minutes until soft. Remove from fire and drain. Peel the skin of the plantain and mash as if you were making mash potatoes. 
Season with spices mentioned above and cornstarch. Add the chorizo 
Using an ice cream scoop, scoop parts of the mashed plantains, make a ball  (as if you were making meatballs), poke a whole and put a piece of your favorite cheese.
Roll the  ball in Panko Crumbs and refrigerate for at least 30 minutes for them to set.
Fry each ball on very hot oil until brown and crispy on the outside, about 2-3 minutes, watch them they turn golden very fast. Serve and enjoy

Prep time: 25 minutes                             Cook Time 3 minutes                   Serves 6-8 balls

Rat's Nest Halloween Spinach and Artichoke Dip Recipe

Rat's Nest Halloween Spinach and Artichoke Dip, every good party needs a great dip. A Halloween Party needs a Spooktacular one! This is it!
Hola Amigos! There is no party without a good dip right? I love spinach and artichoke dip! That is the first and  pretty much only appetizer I order other than stuffed mushrooms (those will be coming soon). Also I like mine warm but if I'm desperate, I really don't care how it is ...just pass the chips!
This particular recipe is my SIL's !!! I'm sure you probably make it a similar way since it's such a simple and easy recipe but boy!...so good!
Rat's Nest Halloween Spinach and Artichoke Dip, Bring the Life to your Undead Halloween party with this Fabulous Hot Spinach and Artichoke Dip! It's out of this World and Easy to Make

What I love about it is that it has tons of cheese and equal amount of spinach! I've found some places cut the amount of spinach short and add a fillers  like water chestnuts instead!

Chips are an important part of this dip. Don't get the thin ones! This particular dip is thick and chunky so you need a good chip to get a hold of all the goodness!

And why the Rat's Nest name for my this particular one? well think about it, Rats are omnivores, but they love cheese there are 3 cheeses alone on this one! Rats like warm moist places, this dip has the right amount of moisture thanks to the spinach and since it's baked...it's steamy hot! And rat's are messy...there is a mess every time you eat chips right? crumbles everywhere...or maybe just when I eat them,  lol

Rat's Nest Halloween Spinach and Artichoke Dip
Ingredients:
16 oz Frozen Chopped Spinach, thawed and drained
8 oz Chives and Onion Cream Cheese, softened
1 package Vegetable Dip Mix
14 oz (1 can) Artichoke Hearts, chopped and drained
8 oz (1 can) Water Chestnuts, chopped and drained
1/4 Cup Mayonnaise
1 Cup Shredded Cheddar Cheese
1 Cup Shredded Mozzarella Cheese
Directions:
Pre-heat oven at 350 degrees. Mix all the ingredients in a bowl, except the mozzarella cheese. Spoon everything on a oven safe container and top the mix with the mozzarella cheese. 
Put in the oven and and bake for 15 minutes or until dip is hot. Serve with chips and enjoy!

Prep Time: 10 minutes                   Cooking Time: 15 minutes                   Servings 3 Cups
