Alfredo and Pesto Chicken Bruschetta Recipe

Alfredo and Pesto Chicken Bruschetta Recipe, this classic Italian Appetizer is made with leftover chicken and bread! Oh yeah...make an entire new meal with adding just a few fresh ingredients..and Bacon!
Hola Amigos! With the weekend approaching I have the perfect appetizer for you or even a light meal with a bowl of soup instead of a sandwich. And the best thing of all is that you can make this with leftovers from a classic Italian dinner like Chicken Alfredo. That's what I did!
Alfredo and Pesto Chicken Bruschetta Recipe, this Italian classic appetizer is made with leftover chicken and bread! oh yeah!..made an entire new meal by adding a few extra ingredients and Bacon!

I had made some Fettuccine Alfredo a few days ago, you can find the recipe here and had some chicken and Italian bread leftover. My husband had to go on a last minute business trip and it was only me and the kids. No point of cooking a big meal, right, then and idea came to mind, how about bruschetta, Alfredo and Pesto, crazy but it might work.

I just added store bought Alfredo sauce, crisp bacon, tomatoes, basil and made a delicious pesto butter with butter and store bought pesto.

My semi-home made Alfredo and Pesto Bruschetta was a hit and a  "you have to make these again mom"! AKA Seal of Approval from the kiddos!

I even made a couple Vegetarian! I was thinking on a Vegetarian bloggy friend of mine (you know who you are, lol  don't worry I won't Out You) and thought she could have these anytime!
Just a few sliced Baby Bella Mushrooms sauteed in a little bit of olive oil and white wine, salt and pepper and you are all set!


I love when  last minute fixins' turns this good.

Alfredo and Pesto Chicken Bruschetta
Ingredients
1 Loaf Italian Bread
2 TBSP Pesto Sauce
4 TBSP Unsalted Butter
2 Cups Shredded Chicken
4 Slices of Bacon Crisp and Crumbled
1 Jar Alfredo Sauce
1 Large Tomato
Basil Leaves
1/2 Cup Mozzarella Cheese Shredded
For vegetarian:
8 oz Baby Bella Mushrooms Sliced
Olive Oil
1/2 White Wine 
Directions:
Heat oven at 400F.
In a heavy sauce pan, mix shredded chicken with Alfredo Sauce heat up until warm. Set aside. Dice your tomato finely and julienne your basil leaves. 
In a microwave safe container, melt the butter. Remove and add 2 tablespoons of your pesto sauce. Spread this mix or "Pesto Butter" over your bread slices, front and back. Place them on a cookie sheet and bake in the oven for about 10 minutes or until lightly golden. Remove form oven.
Top each slice of bread with the Chicken mixture, chopped tomato, basil, crumble bacon and mozzarella cheese. Drizzle a little bit of "pesto butter" if desired. Serve hot and enjoy!
To make the vegetarian version. 
In a large skillet with olive oil saute the sliced mushrooms, once soft add white wine and let simmer for 5 minutes. Mix with 3/4 Cup Alfredo Sauce. Take your toasted bread, spread the mushroom mix on the bread and top with tomato, basil and cheese, Serve hot and enjoy!

Prep Time 5 minutes     Cooking Time 10 minutes      Serves 6-8

Beer and Ginger Barbecue Sauce Recipe

Hola Amigos! The weekend is soon approaching and weather willing there will be a lot of grill firing and delicious cooking across the Nation! One of the fundamental elements of a good BBQ and grilling experience is a good Barbecue Sauce.

Now, there is a whole lot of BBQ Sauces to choose from, with different condiments, spices and notes. From the very mild fast food kid friendly flavor to the spicy fire breathing hand me a gallon of milk sauces. All of them good and with  numerous fans each and an entire group of folks falling in between.

Let me start by saying that I'm not a BBQ sauce fan, bottles are purchased in this house for the enjoyment of my husband and teen son. Maybe because I grew up without it and throughout the years, I still haven't developed a taste for it. BUT...sometimes I like to give certain foods a little kick and that is when I use this Homemade BBQ Sauce. To me is the right combination of sweetness and spice to go perfect with any food, not only burgers, but fish, chicken and even beans! oh yeah...love it with Black Beans...but that is another story.
Salmon Burger Dipped in my BBQ Sauce

This is a tomato based sauce and I will try to give measurements to the best of my knowledge, but you know how it is with homemade foods sometimes, everything is eyeballed and never measured.

Beer and Ginger BBQ Sauce

3/4 Cup Beer
1 inch Ginger Root
1 Small onion
 1 Clove Garlic
1tsps oil
1 small Can Tomato Sauce
1/4 Cup Ketchup
1/4 Cup Brown Sugar
1/2 Cup Molasses
1 Tsps Soy Sauce 
1 Chipotle Bullion (2 if you want it really hot)

In a food processor, mince with a several pulses the ginger root, onion and garlic. Pulse until you cant' see pieces of garlic anymore. In a medium saucepan, medium low heat, add the Tsps of oil and fry the previous mix until onions are transparent, stirring constantly for it not too stick to the bottom and burn, Add Beer, Tomato sauce, Ketchup, Brown Sugar, Molasses, Soy Sauce and crushed Chipotle Bullion. Bring it to a boil, lower the temperature to low ad cook for 15 minutes on low heat until thickens.

Makes 1 Cup of Sauce. Stores well refrigerated.

I realize you wont be able to get as much as with your bottles at the grocery store, but it's so rich and tasty that a little goes a long way.

I add a little bit while I'm cooking my beans for a nice smoky sweet flavor and with the fish it was divine! The ginger and chipotle also gives it a subtle heat note, if you want more heat, then add more ginger or chipotle.
