Sambal Ikan Bilis

材料:

  • 辣椒干 15 条 (用热水烫过)
  • 小辣椒 3 条
  • 蒜头 3瓣
  • 大葱 1 粒
  • 1 小匙阿叁膏
  • 小葱头 4粒 (切片)
  • 20g 江鱼仔
  • 清水 适量
  • 糖和盐 适量
  • 食油

做法:
  1. 把蒜头,小辣椒,泡浸过的辣椒干和一半的江鱼仔放入搅拌机, 加入适量的清水,搅烂,取出代用。
  2. 热油锅,把其余的江鱼仔小火慢慢炸至酥脆, 捞起备用。
  3. 同一个锅里, 把小葱头炒软。
  4. 加入搅拌好的材料 (辣椒糊)翻炒至滚后,改用小火慢慢煮至辣椒糊变深红色。
  5. 加入盐,糖和水 ,搅拌均匀然后加入阿叁膏。
  6. 加入炸好的江鱼仔拌炒,煮至4分钟, 即可盛起。
  7. 配饭或面。

Ingredients

  • 15 dried chilies (soaked in hot water)
  • 3 fresh chilies
  • 3 cloves of garlic
  • 1 big onion
  • 1 teaspoon of tamarind paste
  • 4 shallot (sliced)
  • 20g of anchovies
  • Water
  • Salt and sugar to taste
  • Oil to fry

Steps to prepare

  1. Blend garlic, fresh and dried chilies and half of the anchovies.
  2. Fry the remaining anchovies until crispy at low heat.
  3. Remove anchovies from pan and add shallots
  4. Add the blended ingredients and stir fry at low heat until it changes to a darker shade of red.
  5. Add salt,sugar and water, stir well and then add tamarind paste.
  6. Add the fried anchovies to the Sambal and continue cooking for about 4 minutes.
  7. Switch off the stove.
  8. Serve with rice or noodles.
