材料:
- 辣椒干 15 条 (用热水烫过)
- 小辣椒 3 条
- 蒜头 3瓣
- 大葱 1 粒
- 1 小匙阿叁膏
- 小葱头 4粒 (切片)
- 20g 江鱼仔
- 清水 适量
- 糖和盐 适量
- 食油
做法:
- 把蒜头,小辣椒,泡浸过的辣椒干和一半的江鱼仔放入搅拌机, 加入适量的清水,搅烂,取出代用。
- 热油锅,把其余的江鱼仔小火慢慢炸至酥脆, 捞起备用。
- 同一个锅里, 把小葱头炒软。
- 加入搅拌好的材料 (辣椒糊)翻炒至滚后,改用小火慢慢煮至辣椒糊变深红色。
- 加入盐,糖和水 ,搅拌均匀然后加入阿叁膏。
- 加入炸好的江鱼仔拌炒,煮至4分钟, 即可盛起。
- 配饭或面。
Ingredients
- 15 dried chilies (soaked in hot water)
- 3 fresh chilies
- 3 cloves of garlic
- 1 big onion
- 1 teaspoon of tamarind paste
- 4 shallot (sliced)
- 20g of anchovies
- Water
- Salt and sugar to taste
- Oil to fry
Steps to prepare
- Blend garlic, fresh and dried chilies and half of the anchovies.
- Fry the remaining anchovies until crispy at low heat.
- Remove anchovies from pan and add shallots
- Add the blended ingredients and stir fry at low heat until it changes to a darker shade of red.
- Add salt,sugar and water, stir well and then add tamarind paste.
- Add the fried anchovies to the Sambal and continue cooking for about 4 minutes.
- Switch off the stove.
- Serve with rice or noodles.
