Homemade Fluffy Pancakes
School holidays have just started. My thought as to get up from bed early morning is not going to be as early as daily. But I was wrong! The kids got up earlier than me. Goshhh...there goes my chance to continue my beautiful dream....*rolled eyes*
And, morning2 dah demand breakfast yang pelik-pelik, ishhh....nasib baik bahan2 pun memang tersedia ada pat dalam fridge, so what am I waiting for...*and now rolled up sleeves*
After a full ladle of batter is being poured onto a griddle, I'll make sure that bubbles will appear on the surface of the pancake before I could turn them over.
What I need is:
1 egg
3 tbsp (45ml) butter, melted and cooled
1 cup (225ml) all-purpose flour
1 tbsp (15ml) sugar
1 tsp (5ml) baking soda
1/2 tsp salt
1 cup (225ml) buttermilk**
How do I:
1. Whisk egg and cooled butter lightly in a bowl.
2. Sift together flour, sugar, baking soda and salt.
3. Add dry ingredients to egg mixture.
4. Stir untill batter is well mixed.
5. Add buttermilk and stir again until mixed, batter will be lumpy.
6. Pour a scoopful laddle onto preheated griddle.
7. Cook until bubbles appear all round, then turn over and cook until golden brown.
**To substitute buttermilk, I need :
1 cup of milk add with 1 1/3 tbsp Cream of Tartar. Allow to stand for 5-10 minutes.
Kids simply LOVE it, trust me and it's the most quick preparation.
