Brand's Essence of chicken

UPSR exam has been done and over with.  Hope my girl has done well in her exam.  Without much time to relax, she is taking her secondary school entry exam today.  It has been a stressful week for her for sure.  To keep her concentration and energy up to tackle the exams, we gave her Brand's essence of chicken in the morning.  She did not like the taste of it but I told her that it has been proven useful for me whenever I participated in cross country run competitions during my school years..the story cut short here because it was years ago.

Brand's essence of chicken has been in existence in Asia since 1920s.  Our grandparents, parents have been consuming it as health supplement, up until our generations, Brand's is still in the market with extended range of products like, bird's nest, herbal, fruit base and Innershine.  They have also improved the bottle cap with triple safety feature.

One way for me to prepare a fast dinner is to dump all ingredients in the slow cooker in the morning before I go to work. It works pretty good for me as a full time working mum as I have got little time to prepare dinner during week days.

Yesterday morning, I boiled this pot of Kampung Chicken soup on the stove top till it is boiled then transferred the whole pot of soup into the slow cooker, set to low heat, let it cook by itself till I come back from work, usually more than 8 hours. Just add salt to taste and serve.

Slow cooker is very useful for cooking that requires long hours of boiling like kampung chicken soup such as this one. It is also ideal for stewing beef too.

Home cooking again

Since Christmas, I hardly got the chance to cook my family a proper meal. With so much celebration going on these 2 weeks, I only managed to prepare some very simple and quick meals at home or eat out.

Today, I started preparing my cooking since 3.30pm. Aiming to have our dinner earlier so that our girls can go to bed early for the school starts tomorrow.

Our girls love soup. They can just have the soup and rice for dinner. Less fuss. I prepared a pot of chicken herbal soup in the slow cooker just enough for 4 of us. Mixing some cucumber, carrot and pumpkin into vegetable pickles using apple cider vinegar for marination. I tried the raw pumpkin for the first time in my pickles. Not bad! I learnt from my colleague that pumpkin can be eaten raw, its taste just like the not so ripe papaya.
