So payday hits tomorrow and the family sat down to do our menu planning. It seems Mexican heavy this go round. Of course you'll notice some of the same family favorites, but what can you do, they know what they like! Here's what the Albrecht's will be having over the next 2 1/2 weeks or so.

The Weekly Menu
Well it's payday which means that it's time to do up our next Weekly (actually it's bi-monthly) Menu for our home.
Some things we moved over because we didn't have them and still have the ingredients to make them.
For the next two weeks starting today we are going to have..
Steak, baked potatoes, spinach/strawberry salad
Sweet & Sour Chicken with white rice
White Chili with Jalapeno Cornbread
Tostadas/Tacos with Spanish Rice, refried beans
Salad Oliva
Pan-Fried Southern Chicken, mashed potatoes, corn
Brisket (will decide what we want with it later)
Shredded Beef BBQ sandwiches with potato salad
Beef Broccoli with white rice and egg rolls
Mexican Lasagna
Homemade Pizza
Headed to the grocery store!

The Weekly Menu
I like to cook, I also like to bake. Both got lost in the shuffle during our last couple years at Fort Hood when I became psychotic busy dealing volunteering. I still did both but not to the extent that my family needed me to.
I've recommitted to cooking for my family and we are all enjoying it. The boys always want to help in the kitchen, Kevin has always been a help in the kitchen.
I love sending goodies in with Kevin to work. I love hearing my boys say that I am the best cook EVER.
I thought I'd start sharing our Menu Plan. I usually go by pay periods since that is how I grocery shop.
I do fill in the days with menu choices but it's all flexible. What I mean is that Spaghetti might be on the menu for Thursday but I might switch it out with Tacos which is scheduled for another day. I also leave at least two days blank for days we might eat out or have late lunches and not make a real dinner.
I just find it easier and more cost effective to menu plan then to try to guess what's for dinner. I involve the whole family so we all get our favorites and we throw in new recipes to try as well for variety. Two things that always seem to be on on our menu though are Taco Soup and Spaghetti, those are just two of our family favorites!

Steak with Twice Baked Potatoes
Sweet and Sour Chicken with Rice
