Cooking With Yvie: Pork and Hominy Stew

Welcome to another edition of Cooking With Yvie!

With all the cold weather we've been having, we figured we'd share a recipe we recently came across. It's Pork and Hominy Stew, and it really goes well in cold and rainy weather.

This actually goes with the Jalapeño Corn Bread recipe Yvie brought to you recently.

I didn't get a great shot of the stew at the end, so here's what it looks like.

First the video, then a few things.



* Yvie doesn't really like soups and stews, hence the no tasting at the end.

* She had said the hominy was undrained but I edited it out, so that's why she said something about the tomotoes being undrained.

* I initially forgot the cumin, hence the "I think" remark. My bad. Oops.

* Here's the recipe, which I got from Cooking Light.

2 tablespoons chile powder
2 teaspoons dried oregano
1 1/2 teaspoons smoked paprika
1 teaspoon cumin
1/2 teaspoon salt
1 1/2 pounds pork tenderloin, trimmed and cut into 1/2 inch pieces
1 tablespoon olive oil, divided
2 cups chopped onion
1 1/2 cups chopped green bell pepper (we used a poblano pepper)
1 tablespoon minced garlic
2 1/2 cups chicken broth
1 (28-0z) can hominy, drained
1 (14.5 ounce) can fire-roasted diced tomatoes, undrained

1. Combine first five ingredients in large bowl; set aside 1 1/2 teaspoons spice mixture. Add pork to remaining spice mixture in bowl, tossing well to coat.

2. Heat two teaspoons oil in large Dutch oven over medium-high heat. Add pork mixture to pan; cook five minutes or until browned, stirring occasionally; Remove pork from pan; set aside.

3. Add remaining 1 teaspoon oil in to pan. Add onion, pepper and garlic; saute five minutes or until tender, stirring occasionally. Add reserved 1 1/2 teaspoon spice mixture, broth, hominy and tomatoes. Bring to boil. Partially cover, reduce heat and simmer 25 minutes.

Cooking With Yvie: Orange Muffins

Welcome to another episode of Cooking With Yvie!

I'm excited to have the chance to bring you another episode. In her latest culinary adventure, Yvie shows you how to make Orange Muffins. We make muffins all the time and I'd made these before, but I think if I had to make them again I might add some more sugar, and my oven burns hot so I think a little less cooking time than instructed might be better.

Having said that, we enjoyed them quite a bit. The recipe is beneath the video.

Orange Muffins

Ingredients
2 1/4 cups flour
3/4 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt
1 egg
1/2 cup yogurt
6 tablespoons butter
3/4 cup orange juice
1/4 cup milk
1/4 teaspoon orange oil (optional, we didn't use this)

Directions:
1. Preheat oven to 4oo degrees
2. Whisk flour, sugar, baking soda and salt in medium bowl, set side.
3. In large bown, whisk egg and yogurt until smooth; then whisk in orange juice, milk and orange oil, if using. Stir in flour mixture until moistened.
4. Fill into prepared muffin pans; bake for 20 minutes.

Cooking With Yvie: Jalapeño Corn Bread

Welcome to another episode of Cooking With Yvie!

In her latest cooking adventure, Yvie whips up a tasty side dish. Yvie shows you how to prepare a Jalapeño Corn Bread, right in a cast-iron skillet!

Jalapeño Corn Bread

1 cup buttermilk
1/4 cup canola oil
3 tablespoons sugar
1/2 teaspoon salt
2 large eggs
4 teaspoons baking powder
1 cup cornmeal
1 cup flour
1 chopped jalapeño (seeds optional)

1. Combine first five ingredients in a large bowl; whisk together.
2. Sprinkle baking powder over batter, whisk.
3. Fold in cornmeal, flour, jalapeños.
4. Spoon batter into cast-iron skillet coated with cooking spray.
5. Bake at 450 degrees for 20 minutes or until lightly browned.

(seeds will add heat, so be forewarned!)

Cooking With Yvie: Caramel Apple Cheesecake Bars

It's been too long.

Here is the latest episode of Cooking With Yvie.

This time, Yvie shows how to make a fantastic dessert by one of her favorite chefs, Paula Deen. The recipe is here, and while Yvie doesn't show it, it's quite tasty to drizzle some caramel on top. Since we weren't actually going to use this for two days after we made it, we decided to save the caramel for later. And the bars went over quite well.

Cooking With Yvie: Chili and Corn Muffins

It's been too long!

Here is our latest installment of Cooking With Yvie. Since the girls are fine and their usual selves, we wanted to get back to our little cooking show here. And since it's finally dipped down into the 70s and 60s in Southern California - yes, true fall weather for SoCal - we wanted to make something a little hearty, a little warm and definitely a lot tasty.

So what better hearty, warm and tasty dish than chili? This is our preferred chili recipe, and truth be told we only recently started using the meat the way Yvie does in the show. It seems to add some flavor but you can't go wrong using all ground beef. Also, Yvie doesn't really mention it at first but she also shows you how to make corn muffins to go with chili, so it's a perfect combination for a nice dinner... or three. This makes a lot of chili, but it freezes well.

The show is a little longer than normal but figured since we've been absent for a bit that you might enjoy the longer-than-usual footage anyway.

Cooking With Yvie: Baked Penne w/Roasted Veggies

It's a day late but hopefully not a dollar short.

Here is the latest episode of Cooking With Yvie.

In this episode, Yvie shows us how to make Baked Penne with Roasted Vegetables. The original recipe is here, but we didn't follow it to a tee. We used Monterey Jack cheese instead of the Fontina/Mozzarella the recipe calls for. It's very good, no matter what kind of cheese you use (we've used the Fontina and Mozzarella before and it was awesome).

Late Show

I'm up early this morning. A restless night of sleep from Kennedy caused me to wake up at about 4:25 and I couldn't go back to sleep. Not exactly the kind of wake-up call I was hoping for since I'm going to be running 12 miles here soon.

Anyway, this is my last chance to use the computer until tonight so this week's Cooking With Yvie will likely be up late. She made some pasta this week, pasta which I ate to help fuel today's run. I'll let you know how it worked out.

Also, I finally bought some Gu. I also bot Clif shots and the Sport Beans. I tried three beans during Friday's four-miler and they were okay I guess. They tasted just like jellybeans, which is good and bad. It was a strange flavor to have in my mouth during a run. Plus the chewiness of it wasn't the greatest. I was running and chewing and running and chewing and running and chewing... Normally running and chewing isn't a big problem for me but if it's sticky candy chewing, it's just tough.

I'm going for the Gu today.

Between Gu and the pasta, I'm set.

Cooking With Yvie: Oatmeal Raisin Cookies

Welcome to another episode of Cooking With Yvie.

Today, Yvie tackles the Oatmeal Raisin Cookie. She's not a fan of oatmeal (truth be told, none of us here are big fans of oatmeal) but we have some around to make the Granola Bars and cookies such as this one.

The recipe is below the video.

1 cup margarine or butter
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
3 cups quick-cooking or old fashioned oats, uncooked)
1 cup raisins

Preheat oven to 350 degrees
Beat margarine and sugar until creamy; add eggs and vanilla, beat well.
Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and raisins, mix well.
Drop by rounded tablespoonfuls onto ungreased cookie sheet.
Bake 10-12 minutes, or until golden brown.
Cool 1 minute on cookie sheet; remove to wire rack
Makes 4 dozen

We made a blueberry smoothie recently but since strawberries were 98 cents for a dollar, we couldn't resist passing up this opportunity.

Cooking With Yvie: Tomatillo Salsa

Hello and welcome to another episode of Cooking With Yvie! I'm quite pleased to present this episode today for several reasons.

First, check out what Yvie made:


That's a mighty tasty Tomatillo Salsa! Wonderful recipe. It's actually my mother's recipe (Yvie calls her Mama in the show).

The recipe... the way my mom told it to me and the way I interpreted it...

Mom: You probably want about a pound or so of tomatillos (LB: 1 1/2 pounds tomatillos, skins removed)
Mom: Some garlic, you have to have some garlic (1-2 cloves garlic)
Mom: Salt, just put some salt in there, no pepper, but you need salt (one teaspoon salt)
Mom: You can put cilantro in with it or wait until after when you add the onion (3-4 tablespoons cilantro, chopped)
Mom: Just boil the tomatillos for about 10 minutes or so, they'll change color (rinse tomatillos, cover with water, bring to boil, reduce heat, simmer uncovered for 10 minutes until tomatillos have changed color)
Mom: Put everything in a blender (Drain water. Put tomatillos, salt, garlic, cilantro in blender).
Mom: Just a little in the blender, not too much because you want it chunky (Blend until chunky or smooth)
Mom: Oh yeah, then you need to add some onions and cilantro (Add 1/4 cup diced onion, 1-2 tablespoons chopped cilantro).

That's a rough transcript of our chat (it was actually in Spanish so I translated over the rough transcript).

Oh yeah, one other thing about today's episode. I added an actual introduction. I changed up the song and threw together a short slideshow to serve as the intro. Just figured I needed something in there, like a real intro. Let me know what you think.

Cooking With Yvie: Yogurt Cream With Berries

Okay, here it is. The latest episode of Cooking With Yvie (CWY) a day late.

Anyway, we made this recipe for Yogurt Cream with Berries, from the Pioneer Woman. It's very good. I slice up some peaches and smother them with this stuff for Mrs. LB. I prefer this over grapes or strawberries.

Now, this episode of course produced a yogurt cream a bit more runny than I like. I think it's because Yvie didn't use as much yogurt as I do, which is fine. It still tastes good. Also forgot to mention that you need to cover with some sort of plastic wrap, but you can probably figure that out.

Cooking With Yvie: Iced Pumpkin Cookies

Welcome back to another episode of Cooking With Yvie! I am happy to have the show back here. I apologize for having taken so much time in between episodes. I guess with the heat going on here in Riverside (95 degrees plus) I haven't been wanting to use the oven much, and it seems a lot of the stuff we make involves the oven.

I'll have something next week that is not a baked good, though, so keep an eye out for that.

For now, though, here is Yvie's latest efforts: Iced Pumpkin Cookies. (one thing, the cookies probably should go about 16-17 minutes at least, 15 was just a wee bit soft, fine and everything, just soft, maybe I'm nitpicking...)

Cooking With Yvie: Chili Dogs

Here's Yvie, making our favorite chili dog recipe, this one from Guy Fieri. Kennedy opted not to make a cameo.

This is also the first time I let her do a show where she tossed stuff onto a hot skillet. We were both very careful around the heat, but she did good. I knew she would; otherwise I wouldn't have let her. Kennedy, don't know if she'd do well near the heat.

Cooking With Yvie: Strawberry Milkshake

Welcome to another episode of Cooking With Yvie.

Today, we've got one of our favorites, actually one of my favorite creations. I had found a Paula Deen recipe for vanilla milkshake and was making that often, got adventurous and threw in some things like frozen Kit Kats to make a Kit Kat milkshake, frozen chocolate and then played around with some strawberry jelly and balsamic vinegar.

It's really good. I know it sound strange but trust me if Yvie likes that combination, it's not bad.
