Testing...1, 2, 3

I've been asked to test out products from eFoodsDirect which is a company who sells food products for emergency preparedness & food storage.  I certainly feel strongly about food storage but have a long way to go myself!

Once I test them out, I'll let you know what I think.  In this day and age, you can never be too prepared!

In a quote from Pres. Ezra Taft Benson, he stated:  “Family preparedness has been a long-established welfare principle. It is even more urgent today. I ask you earnestly, have you provided for your family a year’s supply of food, clothing, and where possible, fuel? The revelation to produce and store food may be as essential to our temporal welfare today as boarding the ark was to the people in the days of Noah.”

Lunch & Dinner

Just a couple of my favs...


Avocado with sprouts on toast






This is one meal where I usually have the ingredients on hand and it is easy to make and delish!

Corn Cakes with Black Beans





1 can black beans
1/2 c. corn (frozen or canned)
2 tsp. chili powder, divided
2/3 c. corn meal
2 Tbl. flour
1/4 tsp. baking soda
1/2 tsp. salt
pepper, to taste
1 egg
3 Tbl. melted butter
1 c. buttermilk
sour cream
salsa
cilantro

Slightly drain can of black beans, retaining some liquid. Add 1 tsp. chili pepper. Heat.

In bowl, mix cornmeal, flour, soda, salt, pepper to taste & 1 tsp. chili powder.
In another bowl, whisk together the butter, buttermilk & egg. Mix the liquid into the dry ingredients until just blended. Fold in corn.

Fry up just like a pancake. Top with black beans, sour cream, salsa & cilantro.

Delish!

We decided the best way to approach this job is to each get a double scoop but have them separate so we could try the flavors:

2 scoops of salted caramel because it's that good
almond joy -just ok
fried plantain-just ok
