Brittle is a popular Christmas confection, consisting of flat broken pieces of hard candy,
usually filled with peanuts or other nuts, and commonly topped with a layer of chocolate
Toffee Chocolate Almond Brittle
1 cup Earth Balance Butter
1 cup granulated sugar
3/4 cup baking chocolate
(semi-sweet, finely chopped)
1/2 cup slivered almonds
1/4-1/3 cup water
1/2 tsp vanilla extract
a pinch of sea salt
Directions:
A. Line a baking pan with parchment paper
B. Have the butter, vanilla, salt, and nuts in a bowl, then set aside
C. Combine the sugar and water in a heavy saucepan over high heat, bringing to a boil
D. Stir boiling sugar for approximately 8-10 minutes (if it begins to smoke, quickly
remove from heat and continue stirring)
E. Remove from heat and stir in the butter, vanilla, salt, and nuts you prepared earlier
F. Stir quickly to blend ingredients evenly (a wooden spoon works best)
G. Pour this liquid toffee mixture into your lined baking pan
H. Sprinkle the finely chopped chocolate over top of the hot brittle
(the heat of the toffee will melt the chocolate)
I. Garnish with extra slivers of almonds, or candy, or just omit this step
J. Let cool completely before breaking the brittle into desired bits and pieces
Warning: No matter how tempted you are to lick the spoon from the
saucepan, DON'T DO IT unless you want a burnt tongue full of blisters!
And if you're like me and you enjoy the crunchiness of
a Hershey's Skor Candy Bar, then you will love Brittle!
There are so many variations to Brittle, such as Peppermint or Candy
Cane; I have seen some people add Peanut Butter or Coconut Milk too!
Trust me, when 3 o'clock rolls around, you'll be
wishing you had some Toffee Brittle to snack on!
And if you're in the giving mood, you can make extras
pack in cute little xmas tins for your friends and family
Just make be careful about sending this to those aged 70
and over; Sensitive teeth and rock-hard brittle? Not good ;)

Cookies are clearly my all time favorite dessert. However, toffee has my heart when it comes to candy. I tend to find excuses to buy it ALL the time. Like "oh I'm going to make something with it" and then I just end up eating it all before that happens...

Toffee is sooo good, but I can only have very small amounts because it is a little too sweet for me.
