No Cardboard Gluten Free Sandwich


Who ever said, "Gluten free tastes like cardboard",
 hasn't had a Snacking Squirrel sandwich!


Layered high and stacked with the finest ingredients 


Poached egg, organic ham, kale and tomato makes the perfect brunch-wich


All between 2 delicious slices of gluten free bread!

Breakfast Fit for A Queen


I eat like a queen for breakfast. And I've learnt along the
 way that in doing so I'd end up treating myself as royalty.



Poached eggs with black pepper, sliced cooked ham, hashbrowns with
ketchup, burnt gluten free toast haha, and Saunder's Saskatoon Jam. 


I feel grateful to have been blogging for as long as I've been. Although I don't
post as much or as often as I often wished to, I feel inspired by my journey with/as
 "Snacking Squirrel" for how it shaped my own opinions of myself during a time in
my life where I was so broken and lost. I was desperate with a way out, or a way
into I should say, to find purpose and hope when I felt trapped with no way out. 


Today I am growing stronger and healing the hurts inside. I am becoming more
confident, honest, open and most of all, teachable in my process of recovery/growth.


I love you all and I am so blessed to have you share my life with
 me; without which I wouldn't be speaking to you right now, today.

"Sprouted" Chicken Sandwich


A classic chicken breast sandwich, "sprouting" with healthy toppings


Glutino Multigrain Brown Rice Bread toasted and topped with mustard to start


I lightly fried up a whole egg with 1/4 cup of egg whites 
mixed in with sauteed spinach before piling on pea shoots/pea
 sprouts, topped with 3 lean slices of oven roasted chicken breast


Finally, two of my favourite things, kosher dill pickle slices and 
raw red onion, garnished the plate to make fore a scrumptious lunch


 Question: Would you consider yourself a clean 
eater, in which the majority of the meals you eat are
centered around clean, whole and natural ingredients?

Dilly Chicken Salad Sandwich with Egg and Avocado


A fresh coast mouthful sure to curb any sandwich craving


Topped with my favorite, a runny organic free-range egg


I toasted up a slice of gluten free bread and layered on fresh organic baby 
spinach, avocado, sauerkraut, dill-chicken salad with sliced red grapes, red onion, 
tomato, and topped it off with an egg seasoned with black pepper and cayenne


Close-ups tell the whole story... Food porn at it's finest ;)


Definitely one of the best lunches I've made myself in 
long time. So colorfully vibrant and equally nutritious!

Summer Salad Sandwich


The lazier I am the more creative I become...


This open-faced "breakfast" sandwich has everything I love


Gluten free bread topped with wild salmon salad, chickpeas, avocado, red pepper, 
red onion, dill pickles, a poached egg, spinach, yellow mustard, and black pepper


Because hey, it's SUMMER and sometimes your mind does weird sh*t haha

Sandwich and Candy


Lunch started out pretty healthy...


Gluten free brown rice sandwich


With kale, egg, smoked chicken breast, red onion and mustard


Love my runny yolks


But I was still hungry when I finished and reached for a not-so-conventional snack...


Peanut M&M's candy!


Had more than a couple handfuls


But you know what, I was full after so I guess 
candy-coated chocolate was just what I needed ;)

Bacon and Eggs


As fatty and unappealing as bacon may 
seem, I love the sound of it sizzling in the pan


With the crackle of fresh cracked eggs over heat


The smell of bacon's aroma filling the kitchen is 
enough to make most non-vegetarian tummy's growl


Time to serve it up!

Homemade Egg Salad Sandwich


Going old school with the traditional Egg Salad Sandwich


2 hard boiled eggs with Miracle Whip, onion, salt, and pepper


Nothing special about it but it's an often 
overlooked dish that we remember at picnics


Paired with kale and gluten free toast


Was it ever good though! Highly satisfying and 
was worth pre-boiling eggs early in the morning
