"Make My Meal, Make My Morning!"
Kicking off with Joanne's Recipe for...
Lazy Chili Rellenos and
Breakfast Sweet Potatoes
I decided to sub pan-fried potatoes and oven-roast them instead. Mix one cubed sweet potato with olive oil
, basil
, salt and pepper. Preheat oven to 375F and bake for 45 min.
The Lazy Rellenos:
In a baking dish layer 2 large green chili pepper
(I used Poblanos), and spread about 1/2 cup of cheese
over top (I used Quark Cheese
).
In a separate bowl, whisk 2 eggs and 1/2 cup egg whites.
Chop in 3/4 cup onion and spices; salt, pepper, cayenne, paprika, thyme, and sage to your liking. Add in 1 cup spinach
and 1 cup kale. Mix together.
**Pour the egg mixture on top of your cheesy green peppers.
Top it off with any extra green pepper pieces and a little extra cheese, baking for 35 min at 350F.
I adapted and changed this recipe
around a bit to add more greens, different spices, and
more egg whites vs. whole eggs. Both recipes are fabulous,
so make sure to check out Joanne's original version :)

Oh I love that. You made me want to do eggs for breakfast again soon...
Who am I kidding? I'll probably have them for dinner... ha ha
I hope the breakfast was the start of a lovely day for you! :)
Sounds good enough to eat! I'm all about making something faster and easier.
That meal looks like it will definitely leave you full!
Chili Rellenos is one of my favorite meals. I'm definitely going to be making this!
How come I never have breakfasts like these?! A few days ago, I grabbed a dry piece of toast while running out the door. This has inspired me to not sleep in until the last possible second so that I can too can have some delicious rellenos :)
YUM! That looks crazy good! For me that would be the perfect dinner! Love the additional greens!!!
Im definitely going to have to attempt this! looks amazing:)
omg that's for sure a breakfast I want to try making ASAP!!! Or... when I'm moved into a new house and can buy groceries instead of trying to use up everything in the house :)
Wow! That's quite a breakfast! WOOOO!
This would be the way to start my day. I think that breakfast potatoes would only be about ten times better with sweet potatoes (and I loved how you oven roasted them). Your modified chile rellenos looked yummy too...and so much easier than the traditional dinner entree.

All this food looks UNREAL!!! I'm coming for breakfast, lunch and dinner....even if I need to fly all the way to Canada for it ;-)
xoxo
I've never had Chili Rellenos - must be because we lack the Hispanic influence on our food here in Australia. It looks so good though - I think I'm going to have to change that!
Chile rellenos are one of my favorite dishes....this looks amazing!!!
I'm all about breakfast for dinner, and I think that would fit the bill!
I have a lot of admiration for people who can enjoy breakfasts like these, because I can't seem to stray from my bowl of oats. I tried the whole savory breakfast thing a few times, but it just feels so wrong! I like my days to start out on a sweet note, but this looks like something I'd love to have for lunch or dinner :)
it sounds delicious... unfortnately, I CAN'T SEE IT!! :(
::tear::
Everything was cleared up the other day and i was able to see things again, but now I can't even see your mexican fiesta. Laaaaaame.
Oh well, it still sounds delicious.. but there is NO WAY I could ever wait over 30 minutes for my breakfast.
Can you come make my breakfast? Wow, that looks good!

This looks delicious! I love that even though you're branching out, your breakfast still had lots of kale and sweet potatoes -- sounds perfect for you. :)
Aww your pictures stopped showing up again! This sounds delicious though! Like a healthier version of those breakfast skillets you can get at diners. :D
yum, what a great breakfast!
oh I love the idea of having sweet potatoes for breakfast!
I'm lovin' the savory breakfast :D Dare I say...I'm getting a *little* tired of sweet oatmeal every morning??
Oh, and I roasted some sweet potatoes the other day and I remember that you always put a bunch of different spices including oregano on yours. So I did that and it was uhhhmazingggg
I made sweet potato hash the other day. Sweet potatoes are such a filling breakfast option!

Oh yum! Breakfast sweet potatoes! I get it... like healthy hashbrowns.. kind of. They look delicious.
Once again you are killing me with deliciousness in the middle of my work day! You need to move down to South Carolina! :)
Oh. my. goodness. Savory breakfasts are my favorite! I love the looks of this meal! I've actually been wanting to try breakfast sweet potatoes for quite some time. Thanks for sharing the recipe!
That is one GREAT breakfast!!! Where do you put it all??? ;)
How have I never had sweet potatoes for breakfast?! YUM!! Looks great :)
Oh my goodness. Forget breakfast, I want it for my midnight snack right now! Joanne has the BEST recipes, doesn't she?
PS---gave you an award, and digestion post is up!
MMM i love sweet potatoes! :)
IT'S A CHRISTMAS MIRACLE!!! I CAN SEE - I CAN SEE - I CAN SEE!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
That's so weird that you made Sweet Potatoes. I mean, I feel like you just never do that...
Looks like some fantastic eats, as always!!
That breakfast looks RIDICULOUS. I want. I pretty much sub sweet potatoes for regular potatoes whenever I can, they make the world go round if you ask me!
Hi love,
That looks so good! But maybe a bit of a lengthy process in the morning? My mornings don't usually leave me with enough time to wait for anything to bake (which is why I've never done baked oatmeal) but I'm glad you tried this and enjoyed it. And I love your idea for a contest! So cute. Can't wait to see what else you cooked up.
xoxox
Yay! I'm so glad you liked this! It's definitely one of my favorite breakfasts. And I love your changes. Roasted sweet potatoes are a must!
Umm those chili rellenos look amazing!!!! Of course, the sweet potatoes do too. Basically, I would die for that plate right now :)
