I decided I wanted lemon-pepper chicken tonight and just winged the recipe. It turned out wonderfully!
Lemon-pepper chicken
4 chicken breasts, halved
1 cup water
1/8 cup olive oil
3 T italian dressing
2 T lemon juice
1-2 t black pepper
2 t sugar
1 T olive oil
Heat burner to medium-high. Drizzle olive oil in a large pan; sautee chicken until very lightly browned on each side (about a minute each side, or less). Whisk together all other ingredients in small bowl. Pour over chicken. Reduce heat to a little below medium; with lid on saucepan, cook chicken for 20-30 minutes, turning breasts occasionally. When sauce has reduced noticeably and the chicken is cooked through, remove lid and return heat to medium-high. Cook, turning breasts every few minutes so that they are evenly browned and do not burn, until the sauce is thick and galze-like. Serve, and enjoy! This was a very low-maintenance, high-enjoyment main course.
