Torta od šargarepe /Carrot Cake

Bas me je interesovalo kakva je to torta, jer je nikad nisam ni probala ni pravila. Mislila sam da je to možda još jedna zapadnjačka glupost koja nema prođu kod nas. Oh, kako sam pogrešila! Torta je oduševila sve koji su je probali, pa čak i kulinarski tradicionalno nastrojene moje roditelje. Jedino mi je žao što sam je sekla za slikanje odmah nakon filovanja, pa je malo mrljava. Dobro ohlađena je neuporedivo bolja.

Potrebno za kore:


  • 4 jaja
  • 200ml ulja
  • 200gr žutog šećera
  • 200gr brašna
  • 1 kašičica praška za pecivo
  • 1 kašičica cimeta
  • 1 kašičica sode
  • 200gr rendane šargarepe
  • 100gr suvog grožđa
  • 100gr seckanih suvih kajsija
  • 100gr seckanih oraha
za fil:
  • 150gr omešalog maslaca
  • 3 kašike šećera u prahu
  • 300gr krem sira
  • vanila
Priprema
Zagrejati rernu na 180C. Obložiti pleh prečnika 24-26cm papirom za pečenje.
Umutiti jaja i šećer. Dodati ulje, pa brašno prosejano sa praškom za pecivo,cimetom i sodom. Zatim dodati šargarepu,suvo grožđe,kajsije i orahe. Testo sipati u pleh i peći oko 1 sat. Izvaditi pleh iz rerne i ostaviti da se ohladi. Ohlađenu koru preseći na dva dela, pa filovati filom i unutra i spolja. Ohladiti pre služenja.
Za fil, umutiti maslac i šećer u prahu, pa dodati krem sir i vanilu.

Carrot Cake

Ingredients for the sponge:
  • 4 eggs
  • 200ml oil
  • 200gr yellow sugar
  • 200gr flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 200gr grated carrot
  • 100gr raisins
  • 100gr chopped apricots
  • 100gr chopped walnuts
for the filling:
  • 150gr softened butter
  • 3 tbsp powdered sugar
  • 300gr cream cheese
  • vanilla

Directions:
Preheat the oven to 180C. Line a round baking pan (24-26cm) with parchment paper.
Whisk the eggs and sugar. Add the oil, then flour sifted with baking powder,cinnamon and baking soda. Finally, add the carrots,raisins,apricots and walnuts. Pour the mixture into prepared pan and bake for 1 hour. Take the pan out of the oven and cool completely. Cut the sponge horizontally in two layers. Sandwich layers with filling and spread the filling on the entire cake.
For the filling, whisk the butter and powdered sugar. Then add the cream cheese and vanilla.

Komisbrot sa sirom / Dried Fruit Cake with Cheese

Vreme je idealno za šolju čaja i komadić komisbrota. Ovaj se razlikuje u odnosu na druge zbog male količine sira koji se dodaje, zbog čega je savršeno mekan.

Potrebno:

  • 300gr suvog voća (suvo grožđe, brusnice, ananas, kajsije)
  • 220gr omekšalog maslaca 
  • 250gr šećera
  • 100gr sitnog sira
  • 2 kašike ruma
  • kesica vanile
  • 4 jaja
  • 300gr brašna
  • 1 kašičica praška za pecivo
Priprema:
Zagrejati rernu na 160C. Duguljast pleh za hleb obložiti papirom za pečenje.
Voće staviti u šerpu, naliti vodom i prokuvati 10-tak minuta da omekša. Dobro ga procediti i ostaviti da se prohladi.
Umutiti maslac sa šećerom, dodati sir, rum i vanilu. Dodavati jedno po jedno jaje, muteći neprestano. Pomešati brašno i prašak za pecivo, pa dodati u prethodnu masu i lagano promešati. Na kraju dodati i voće. Sipati u pleh i peći oko 1 sat. Izvaditi komisbrot iz pleh i posuti šećerom u prahu.

Dried Fruit Cake with Cheese

Ingredients:
  • 300gr dried fruit (raisins, cranberries, pineapple, apricots)
  • 220gr softened butter
  • 250gr sugar
  • 100gr cottage cheese
  • 2 tbsp rum
  • vanilla
  • 4 eggs
  • 300gr flour
  • 1 tsp baking powder
Directions:
Preheat the oven to 160C. Line a loaf pan with parchment paper.
Put the fruit in a saucepan, pour in a water and cook for 10' until the fruit is soft. Drain well and cool slightly.
Whisk the butter and sugar, add the cheese, rum and vanilla. Add one egg at the time, constantly whisking. In a separate bowl, mix the flour and baking powder. Add this to the previous mixture and gently mix. Finally add the fruit. Pour this into the pan and bake for 1 hour. Take the cake from the pan and dust with powdered sugar.

Beze kolač sa suvim voćem / Meringue Cake With Dried Fruits

Malo sam odužila ovo praznovanje. Imali smo goste, bili u gostima, proslavili godišnjicu braka, tako da se tek od ovog ponedeljka polako sve vraća u normalu. Imam brdo recepata za vas, tako da prosto ne znam odakle da počnem. Ajde sa nečim što sam pravila pre par dana, gde su mi utisci još uvek sveži. Verujem da kada prođe Božić prosto ne znate šta da radite sa svim suvim voćem koji vam preostane. Barem je kod mene tako. Setila sam se ovog kolača, koji mi se godinama vuče po papiriću, a da uopšte ne znam odakle mi. Znala sam da je ovo pravi kolač za mene.Ali kada sam ga izvadila iz rerne i probala onako vrućeg, baš sam bila razočarana. Ostavila sam ga prenoći i sutradan to je bila sasvim druga priča. Oduševio me! Jedno parčence je ostalo za danas i danas je još bolji.

Potrebno za testo:

  • 250gr brašna
  • 200gr omekšalog maslaca ili margarina
  • 75gr šećera
  • 2 žumanca
za fil:
  • 2 belanca
  • 75gr šećera
  • oko 200gr džema od kajsije
  • 150gr suvog voća
  • 200gr oraha, lešnika, badema
Priprema:
Suvo voće preliti vrelom vodom i ostaviti ga da odstoji oko pola sata.
Umutiti maslac sa šećerom, dodati žumanca, pa brašno i umesiti testo. Uviti ga u streč foliju i ostaviti u frižider na pola sata.
Omekšalo suvo voće dobro osušiti ubrusom, pa ga iseći na veće komade (kajsije, smokve, šljive; suvo grožđe, brusnice ostaviti cele). Krupno iseckati i orašaste plodove. Pomešati svo voće.
Zagrejati rernu na 200C. Pleh dimenzija 25x30cm obložiti papirom za pečenje.
Testo razvući na pobrašnjenoj površini, pa ga prebaciti u pleh ili ga razvući direktno u pleh. Premazati ga džemom.
Umutiti belanca sa šećerom u čvrst sneg, pa ga premazati preko džema. Preko svega rasporediti mešavinu voća. Peći kolač oko 40'. Ohladiti pre služenja.

Meringue Cake With Dried Fruit

Ingredients for the base:
  • 250gr flour
  • 200gr softened butter or margarine
  • 75gr sugar
  • 2 egg yolks
for the filling:
  • 2 egg whites
  • 75gr sugar
  • about 200gr of apricot jam
  • 150gr dried fruits
  • 200gr nuts (almonds, walnuts, hazelnuts)
Directions:
Soak the dried fruits with hot water and let stand for half an hour.
Whisk the butter with sugar, add the egg yolks, then flour and knead the dough. Wrap it in stretch foil and chill for half an hour.
Dry the softened fruit with paper towels and chop it roughly (prunes, apricots, figs, leave the raisins, cranberries whole). Roughly chopped the nuts. Mix the fruits and nuts.
Preheat the oven to 200C. Line a 25x30cm baking pan with parchment paper.
Roll the dough on a floured surface and transfer to the pan. Or roll the dough directly in the pan.
Spread it with apricot jam.
Whisk the egg whites with sugar until stiff peaks are formed and spread it over the jam. Sprinkle the mix of fruits and nuts over. Bake the cake for 40'. Cool before serving.

Krekeri sa suvim voćem / Dried Fruit Crackers

I još sa semenkama i orašastim plodovima. Ma totalno su zarazni, mi smo kući poludeli za njima. Kombinujte sastojke kakve volite i uvek ćete dobiti drugačiji ukus... Recept šaljem Kristini sa bloga Legice u kuhinji kao ulaznicu za igru Ajme, koliko nas je! Tema koju nam je zadala je lešnik.

Potrebno:

  • 200gr brašna (obično belo ili kombinacija belog, crnog, raženog...)
  • 1 kašičica sode
  • 50gr žutog šećera
  • 50gr meda 
  • 250ml buttermilk ili jogurta*
  • 1,5 šolja suvog voća, semenki, orašastih plodova**
Priprema:
Zagrejte rernu na 180C. Obložite papirom duguljasti pleh za hleb.
Pomešati brašno i sodu, dodati šećer i med, pa buttermilk i sve dobro promešati (ne mora mikserom). Dodati voće, lagano promešati i sipati u modlu. Peći oko 45-60' (zavisi od veličine modle). Proverite čačkalicom. Izvadite kolač iz pleha i ostavite da se potpuno ohladi. Uvijte ga u foliju, pa ubacite u frižider, najbolje preko noći.*** Ako vam se žuri, stavite ga na pola sata u zamrzivač.
Zagrejte rernu na 150C. Obložite dva velika pleha papirom za pečenje. Kolač secite na sasvim tanke kriške, debljine 2mm i poređajte ih na pleh. Ubacite ih u rernu (možete i oba pleha istovremeno), pecite oko 1 sat, a okrećite ih na 15'. Najlepši su kad su baš baš krckavi.

* Buttermilk ćete dobiti kada pomešate jednu šolju mleka sa kašičicom sirćeta i ostavite 10'. Možete koristiti i jogurt, nema neke velike razlike. Ako nemate jogurt, napravite buttermilk, ako nemate mleko, koristite jogurt. 
** Koristite kakvu god kombinaciju volite (suve kajsije, šljive, smokve, brusnice, suvo grožđe, susam, crni susam, lan, suncokret, orahe, lešnike, bademe, pistaći...) Krupnije voće npr. smokve isecite na krupne komade, a manje ostavite celo. 
*** Kolač je potrebno potpuno ohladiti, jer se tako lakše seče. Što su tanje kriške, brže će se ispeći i biće krckavije.

Dried Fruit Crackers

Ingredients:
  • 200gr flour (plain white or combination of rye, graham...)
  • 1 tsp baking soda
  • 50gr yellow sugar
  • 50gr honey
  • 250ml buttermilk or plain yogurt*
  • 1,5 cups mix of dried fruits, nuts and seeds)**
Directions:
Preheat the oven to 180C. Line a bread pan with parchment paper.
Mix the flour and baking soda. Add the sugar and honey, then buttermilk and mix all together. Add the fruit mix and gently fold together. Pour into the prepared mold and bake for 45-60' (toothpick test). Take the cake from the pan, cool completely, wrap in foil and put in a fridge, preferably overnight.*** If you are in a hurry, put in a freezer for half an hour.
Preheat the oven to 150C. Line two big baking pan with parchment paper. Slice the cake in thin slices, no more then 2mm thickness. Arrange them on a pan and bake for 1 hour, turning every 15'. They are the best when they are crunchy.

* You can make a buttermilk simple by mixing one cup of milk with one teaspoon of vinegar. Or use plain yogurt, there are no much difference. If you don't have milk, use yogurt, if you don't have yogurt make buttermilk.
** Use any combination you like (apricots, figs, raisins, dried cranberries, sesame seed, black sesame seed, sunflower, walnuts, hazelnuts...) Big fruit slice in large chunks, small leave whole.
*** The cake needs to cool completely to slice it easily. The thinner the slices, you will need less time to bake them.

Baklava Paketići / Baklava Cups

Evo još jednog primera kako možete upotrebiti svoje kalupe za mafine...

Baklava Paketići

Potrebno
  • 80gr topljenog maslaca
  • 120gr seckanih orašastih plodova (orah,lešnik...)
  • 50gr seckanih suvih kajsija
  • 3 kašike prezli
  • 1/2 kašičice cimeta
  • 1/2 kašičice đumbira
  • 120gr meda
  • 2 kašike šećera
  • kora od jednog limuna
  • 6 tankih kora za pitu
Priprema
Zagrejte rernu na 180C.Podmažite kalupe za mafine.
Pomešajte orašaste plodove,kajsije,prezle,cimet,đumbir,med,šećer,koru od limuna i 3 kašike otopljenog maslaca.
Ređajte tri kore između premazane maslacem.Isecite ih jednom po dužini i dva puta po širini da dobijete 6 kvadratića.Na sredinu svakog kvadrata stavite fil i skupite ivice kora.
Poređajte paketiće u kalupe i premažite maslacem.Ponovite sa ostalim korama.Pecite oko 20' da porumene.Pospite šećerom u prahu. 

Baklava Cups

Ingredients
  • 80gr melted butter
  • 120gr chopped nuts (walnuts,hazelnuts...)
  • 50gr chopped dried apricots
  • 3 tbsp breadcrumbs
  • 1/2tsp cinnamon
  • 1/2tsp ground ginger
  • 120gr honey
  • 2 tbsp sugar
  • grated zest from 1 lemon
  • 6 sheets phyllo dough
Directions
Preheat the oven to 180C.Grease a 12 muffin cups.
Mix the chopped nuts,apricots,breadcrumbs,cinnamon,ginger,honey,sugar,lemon zest and 3 tablespoons of melted butter.
Stock three sheets of phyllo dough each one brushed with melted butter.Cut from left to right at the midway points and then from top to bottow into 3 segments to make 6 total squares.In the middle of each square put the nut mixture and gather up the 4 sides of phyllo cups.Seal together firmly.
Arrange the cups in the muffin cups and brush with some melted butter.Repeat with another stack of phyllo dough.Bake for 20' until nicely golden brown.Dust with powdered sugar.

Štrudla sa suvim voćem / Dried Fruits Roll

Potrebno za testo:
  • 300gr brašna
  • 50ml mleka
  • 20gr svežeg kvasca
  • 60gr maslaca
  • 50gr šećera
  • 2 jaja
  • prstohvat soli
  • vanila
za fil:
  • 150gr suvog voća (grožđe,kajsije,brusnice,smokve..)
  • 100ml belog vina ili vode
  • 170gr lešnika i/ili badema,oraha...
  • rendana kora 1 limuna
  • rendana kora 1 pomorandže
  • 1 kašičica cimeta
  • prstohvat bibera
  • 40gr crne čokolade
  • 1 jaje
  • 40gr keksa (ja sam koristila spekulos,a može i petit beurre...)
  • 50gr maslaca
  • 50gr šećera
Priprema:
U toplom mleku sa malo šećera rastvoriti kvasac i ostaviti da zapeni.Umutiti maslac,šećer,jaja,so i vanilu dodati kvasac i sa brašnom zamesiti testo.Pokriti ga i ostaviti da naraste.
Za fil,iseckati suvo voće,pa ga potopiti na pola sata u vinu ili vodi.Pomešati mlevene lešnike,rendane kore,cimet ,biber,rendanu čokoladu i mleveni keks.Dobro ocediti voće,pa ga dodati u prethodnu masu.Posebno umutiti belance u čvrst sneg,a posebno umutiti žumance,maslac i šećer.U mešavinu voća dodati žumance,pa na kraju umešati i umućeno belance.
Zagrejati rernu na 180C.Obložiti pleh papirom za pečenje.
Naraslo testo premesiti,pa ga na pobrašnjenoj površini razvući u veliki kvadrat (40x40cm).Premazati koru filom (najbolje rukama),ostavljajući na 3 strane po 2 cm slobodno.Uviti koru u rolat i prebaciti na pleh.Premazati uljem i peći oko 30-35' da lepo porumeni.Prohladiti i posuti šećerom u prahu.

Ingredients for the dough:
  • 300gr flour
  • 50ml milk
  • 20gr fresh yeast
  • 60gr butter
  • 50gr sugar
  • 2 eggs
  • a pinch of salt
  • vanilla
for the filling:
  • 150gr dried fruits (raisins,apricots,cranberries,figs...)
  • 100ml white wine or water
  • 170gr hazelnuts and/or almonds,walnuts
  • grated zest of 1 lemon
  • grated zest of 1 orange
  • 1 tsp cinnamon
  • a pinch of pepper
  • 40gr dark chocolate
  • 1 egg
  • 40gr biscuits
  • 50gr butter
  • 50gr sugar
Directions:
Dissolve the yeast in a warm milk with some sugar and let stand until foamy.Whisk the butter,sugar,egg,salt and vanilla,add the yeast mixture and with flour knead the dough.Cover and let it rise.
For the filling,chop the dried fruits and soak it in a wine or water.Mix the ground hazelnuts,grated zests,cinnamon,pepper,grated chocolate and ground biscuits.Drain the fruits and add it to the previous mixture.In a separate bowl,whisk the egg white until stiff peaks form and in a separate bowl whisk the egg yolk,butter and sugar.In a fruit mixture add the egg yolk and finally the egg white.
Preheat the oven to 180C.Line a baking pan with parchment paper.
Knead the dough again and on a floured surface roll it in a big square (40x40cm).Spread the filling on the dough (using your hands is the best),leaving clean edges for 2cm on 3 sides.Roll it jelly style and transfer to the pan.Brush the roll with some oil and bake for 30-35'.Cool slightly and dust with powdered sugar.

Tart sa kajsijama i bademima / Apricot And Almond Tart

Sastojci za testo:

  • 160gr brašna
  • prstohvat soli
  • 1 jaje
  • 75gr šećera
  • 75gr maslaca
  • vanila
za fil:

  • 600gr kajsija
  • 2 jaja
  • 25gr šećera
  • 50gr mlevenih blanširanih badema
  • vanila
  • nekoliko kašika džema od kajsija
Priprema:
Za testo pomešajte brašno,so,jaje,šećer,maslac isečen na kockice i vanilu i zamesite testo.Uvijte ga u providnu foliju i stavite u frižider na 1 sat.
Za fil,umutitte sve sastojke,osim kajsija.
Ohlađeno testo razvijte u pleh prečnika 28cm i izbockajte viljuškom.Na testo stavite badem krem i naređajte polovine kajsija.Svaku kajsiju premažite sa malo džema.
Pecite u zagrejanoj rerni na 200C oko 20-25'.



Apricot And Almond Tart

Ingredients for the dough:

  • 160gr flour
  • a pinch of salt
  • 1 egg
  • 75gr sugar
  • 75gr butter
  • vanilla
for the filling:

  • 600gr apricots
  • 2 eggs
  • 25gr sugar
  • 50gr blanched ground almonds
  • vanilla
  • a few tbsp apricot jam
Directions:
For the dough,mix the flour,salt,sugar,diced butter and vanilla and knead the dough.Wrap it in a stretch foil and chill for an hour.
Mix all the ingredients for the filling,except the apricots.
Roll the dough to the 28cm tart pan and prick with the fork.Spread the almond filling and arrange the apricot halves.Spread each apricot with some apricot jam.
Bake in the preheated oven to 200C for 20-25'.

Puding od pirinča sa kompotom od kajsija/Rice Pudding With Apricot Compote

Sutlijaš je slatkiš koji je obeležio moje detinjstvo.Moja mama ga je često pravila,jer bi tako rešila pitanje  večere,a i utolila našu želju za nečim slatkim.Najviše sam ga volela vrućeg posutog rendanom čokoladom.Dugo sam ga ja i tako pravila,dok nisam otkrila kombinaciju pirinča i voća.Sada ga uglavnom spremam,leti sa kajsijama ili breskvama,a zimi sa višnjama.Za kraj leta,ponudiću vam...

Puding od pirinča sa kompotom od kajsija

za puding:
  • 200gr pirinča
  • 700ml mleka
  • prstohvat soli
  • 190gr šećera
  • štapić cimeta
  • 220ml slatke pavlake (zaslađene)

za kompot:
  • 1/2kg kajsija
  • 3-4 kašike šećera
  • štapić cimeta
  • 2 kašike maslaca

Za kompot,pomešati seckane kajsije,šećer i cimet.Istopiti maslac,ubaciti voće i na jakoj vatri kuvati nekoliko minuta da voće omekša.Prohladiti.

Za puding,pomešati pirinač,mleko,so,šećer i cimet i staviti da proključa.Smanjiti vatru i kuvati dok pirinač ne upije mleko.Prohladiti par minuta,pa ubaciti pavlaku i promešati.Sipati puding od pirinča u čaše,činije...,pa odozgo staviti kompot.Služi se i toplo i hladno.Prijatno! 

Rice Pudding With Apricot Compote

Ingredients:
for pudding:
  • 200gr rice
  • 700ml milk
  • a pinch of salt
  • 190gr sugar
  • one cinnamon stick
  • 220ml heavy whipping cream
for compote:
  • 1/2kg apricots
  • 3-4 tbsp sugar
  • one cinnamon stick
  • 2 tbsp butter

Directions:
For compote,mix chopped apricots,sugar and cinnamon.Melt the butter,add fruit and cook it over high heat for a few minutes until the fruit is soft.Chill.
For rice pudding,mix rice,milk,salt,sugar and cinnamon and let it boil.Decrease heat and cook until the rice absorbs milk.Chill it for a few minutes,put cream and mix it all together.Pour rice pudding in serving cups,bowls...and put some compote on top.Serve it either warm or cold. Enjoy!
