Dulce De Leche Brownies

 Dulce De Leche yang I buat tu, I wat brownies je. Senang. Sedap makan panas2 cos the DDL oozed out from the brownies. Tapi resepi asal I reduced the sugar coz we all tak suka manis sangat.

Ingredients:

115g salted or unsalted butter, cut into pieces
170g bittersweet or semisweet chocolate, finely chopped
1/4 cup (25g) unsweetened Dutch-process cocoa powder
3 large eggs
1 cup (200g) sugar ( I used 1/2 cup )
1 teaspoon vanilla extract
1 cup (140g) flour
optional: 1 cup (100 g) toasted pecans or walnuts, coarsely chopped ( I omit this )
1 cup Dulce de Leche (or Cajeta)

Method:
1. Preheat the oven to 175 C.

2. Line a 8-inch (20 cm) square pan with a long sheet of aluminum foil that covers the bottom and reaches up the sides. If it doesn’t reach all the way up and over all four sides, cross another sheet of foil over it, making a large cross with edges that overhang the sides. Grease the bottom and sides of the foil with a bit of butter or non-stick spray.

3. Melt the butter in a medium saucepan. Add the chocolate pieces and stir constantly over very low heat until the chocolate is melted. Remove from heat and whisk in the cocoa powder until smooth. Add in the eggs one at a time, then stir in the sugar, vanilla, then the flour. Mix in the nuts, if using.

4. Scrape half of the batter into the prepared pan. Here comes the fun part.

5. Drop one-third of the Dulce de Leche, evenly spaced, over the brownie batter, then drag a knife through to swirl it slightly. Spread the remaining brownie batter over, then drop spoonfuls of the remaining Dulce de Leche in dollops over the top of the brownie batter. Use a knife to swirl the Dulce de Leche slightly.

6. Bake for 35 to 45 minutes. The brownies are done when the center feels just-slightly firm. Remove from the oven and cool completely.

Brownies

I suka buat brownies coz it's so simple and quick to make. Tapi kalau tak kena gaya, ter'overbake' mmg tak sedap gak. Yesterday, tried this recipe. Mmg the princesses suka sangat. Kejap je habis 1 pan diorang kerjakan. Baby & Adik especially loved this version. Punya le pulun makan. Sampai Adik tak nak dinner coz she was stuffed with brownies & tertidur masa maghrib ( around 7.30pm ) terus sampai ke pagi.

My version:

Ingredients

125gm chocolate
3/4 cup butter
1 cup brown sugar
3 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup chopped almond

Directions

1.Preheat oven to 180 degrees C.
2.Microwave chocolate and butter or margarine in large bowl at HIGH for 1 minutes or until butter or margarine is melted.
3.Stir until chocolate is melted. Stir in sugar. Mix in eggs and vanilla. Stir in flour and nuts.
4.Spread in greased 10 x 10 inch pan. Bake for 25 minutes (do not overbake).

Cheeky Baby & The Missing Two

Baby would have trouble sleeping at nite if she took a nap after asar. Yesterday, in order to prevent her from taking her routine nap, I took her out. While chatting with K.Liza, our next door neighbour, tup2 tgk Baby dozed off. Sigh.. Another late nite for her! Sure enough, last nite she had trouble sleeping. Since last nite only Adik got home, we let her sleep with Baby. But the problem was, Baby was pestering us. She crawled all over the bedroom & over Adik. Tried putting her in bed, she tried to climb down. So we solved the problem by putting Adik in bed, and let Baby slept on the floor ( on the mattress of course !). I didn't realise what time she finally went to sleep coz by the time i dozed off she was still merrily playing with some tissues or something.

On another issue, it's a routine now that Alysa & Adik would follow Cik Jun to her house every afternoon. Previously only Adik would follow Cik Jun & spend the nite there. But since last week Alysa started to follow suit after months of not going there. A few months ago, she stopped from going there after Along ( K.Jun's eldest son ) got home for a long break. Malu la kononnya. Hai anak dara mama sorang ni..:-). But since she started going there again last week, dia pulak yang tak nak balik. 2-2 nak tido kat sana. Yang kesian Baby la..mati kutu main sorang2. And the house was so quiet without their squabbles, shouts, whines etc. Sigh.. Of course la i pun sampai nak masuk bathroom pun tak boleh coz dia melalak kena tinggal sorang2..Kena tunggu Hubby balik baru boleh mandi..:-) Kena gilir temankan dia.haha..

While those 2 princesses spent the nite at Cik Jun's, I managed to bake Brownies. Tgk kat dapur Sheri nampak yummy je. So i got the recipe from Jamie Oliver. Very nice & chocolatey..Lama dah tak buat desserts ni. Mood masak tu macm malas ja. For lunch pn masak sempoi je..

Bloomin' Brilliant Brownies


Ingredients
• 250g unsalted butter
• 200g dark Fairtrade chocolate (70% cocoa solids), broken up
• optional: 75g dried sour cherries
• optional: 50g chopped nuts
• 80g cocoa powder, sifted
• 65g plain flour, sifted
• 1 teaspoon baking powder
• 360g caster sugar ; I used half castor sugar & half brown sugar
• 4 large free-range or organic eggs
• optional: zest of 1 orange
• optional: 250ml crème fraîche

Directions:
Preheat your oven to 180°C/350°F/gas 4. Line a 25cm square baking tin with greaseproof paper. In a large bowl over some simmering water, melt the butter and the chocolate and mix until smooth. Add the cherries and nuts, if you’re using them, and stir together. In a separate bowl, mix together the cocoa powder, flour, baking powder and sugar, then add this to the chocolate, cherry and nut mixture. Stir together well. Beat the eggs and mix in until you have a silky consistency.

Pour your brownie mix into the baking tray, and place in the oven for around 25 minutes. You don’t want to overcook them so, unlike cakes, you don’t want a skewer to come out all clean. The brownies should be slightly springy on the outside but still gooey in the middle. Allow to cool in the tray, then carefully transfer to a large chopping board and cut into chunky squares. These make a fantastic dessert served with a dollop of crème fraîche mixed with some orange zest.
