What you can do if you have blood pressure problem

Thank you to Amelia of Amelia De-ssert for your kind email regarding my blood pressure. Let me just post it here for my future reference as I might delete the email by accident. Who knows, it might be of some help to others as well. Thanks again kawan...muahzzzz....

1. Reduce your salt
2. Reduce carbohydrate
3. Drink green tea
4. Drink at least 10 cups of water daily
5. Try to take whole meal bread
6. Take basmati rice or brown rice. For brown rice soak for 2 hours then steam it, taste better.
7. Drink star fruit or guava juice but do not store in fridge. Drink immediately cos it'll oxidize.
8. And don't forget to exercise, even go for a 1/2 hour walk is better than nothing.
9. Don't stay up too late, need sufficient amount of sleep.

Won't be posting any recipes in this entry, just photos of what I had done during my absence in the cyberworld.

Red Velvet Cake Classes

A very good day to everyone....

It had been such a hectic weekend for me. Infact, it started way before the weekend. I don't know what was I busy with but the next thing I know, a day has gone by. Time flies...

Anyway... thank you to these lovely ladies Amelia, Kak Noor, Amie, Zana and Mak Teh for leaving a comment on my previous entry. Thank you for your concern. The reason for me being tensed was because I had to whip some fresh cream! What's wrong with whipping fresh cream, you may ask. Well, all these while, whenever I whip the cream, it won't be fluffy. Easy said... it didn't turn out to be what it is supposed to be! That's why I ended up buying those in the cans! Hahaha.. there goes my 'dark secret'!

But I am grateful to have bunch of friends who are always willing to teach me. One of them is Mat Gebu. He told me to keep the mixer bowl and the balloon whisk in the fridge before using. And I did just that. Today, he said to use the non-dairy so that if we over-beat the cream, it won't do much harm. Oooooooo now I know!!!

What did you do with the fresh cream mama?
Well, thanks to Fadzlina for always torturing me with her Red Velvet cake orders. Told her that I am not good at whipping the fresh cream but she insisted. For her very first order, the topping wasn't stiff at all. I thought that would be the end of her ordering RV cakes from me, but I was wrong... terribly wrong! For this time, she repeated her order... A cake and a dozen cupcakes. Not only that, her officemate Fiza decided to join in as well. That explains the hair pulling photo in my previous entry! Hahahaha....

Blueberry Muffins

8 days without any updates! Wahhhh, that long! ... showing the award winning shocked face.... lol... I was actually fully occupied.

Last Sunday, we had a bread class at my house, conducted by Mamazieza. Just me and my neighbour Saerah. We had so much fun, mainly because we are the happy go lucky bunch! Hahaha... Thank you Mamazieza for having so much patience with both your students and for all the knowledge that you've passed on to us. All the breads were just lovely. Soft texture and lovely taste. Unfortunately, I won't be able to share the recipe with all of you, in order to respect my sifoo. But worry not, you can always go to Mamazieza's classes. This recipe was introduced to me by my neighbour Saerah. She had given me some lovely warm muffins to taste and I loved it. I had asked for the recipe which she kindly passed on to me. Made half the recipe yesterday. Thank you dear neighbour for sharing and also to Elise for recipe.


BLUEBERRY MUFFINS
Yield: Makes 12-16 muffins

Ingredients :

3 cups of all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
10 tablespoon unsalted butter (1 1/4 stick), softened
1 cup sugar
2 large eggs
1 1/2 cup plain yogurt
1 teaspoon grated lemon peel
1 1/2 cups blueberries
1 tablespoon flour (if using defrosted frozen berries)


Method :

1. Adjust the oven rack to the middle-lower part of the oven. Preheat oven to 375°F.
2. Whisk together the flour, baking powder, baking soda, and salt and set aside.
3. In a large mixing bowl, cream butter and sugar together, beating until fluffy. Add eggs one at a time, beating until incorporated after each one. Beat in the grated lemon peel.
4. Beat in one half of the dry ingredients until just incorporated. Beat in one third of the yogurt. Beat in half of the remaining dry ingredients. Beat in a second third of the yogurt. Beat in the remaining dry ingredients and then the remaining yogurt. Again be careful to beat until just incorporated. Do not over beat. Fold in the berries. If you are using frozen berries, defrost them first, drain the excess liquid, and then coat them in a light dusting of flour.
5. Use standard 12-muffin muffin tins. Coat each muffin cup lightly with olive oil or grapeseed oil using a pastry brush, or with a little butter. Or use one of those convenient vegetable oil sprays. Distribute the muffin dough equally among the cups. Bake until muffins are golden brown, about 25 to 30 minutes. Test with a long toothpick (we use a thin bamboo skewer) to make sure the centers of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin and serve slightly warm.

Queen Cupcakes, News about Halaal Status

Tried this recipe from one of the recipe books that I have.

QUEEN CUPCAKES

Makes 18

Ingredients :

8 tablespoons butter, softened
generous 1/2 cup castor sugar
2 large eggs, lightly beaten
3 teaspoons lemon juice
scant 1 1/4 cups self-rising flour
3/4 cup raisins
2 - 4 tablespoons milk, if necessary

Method :

Preheat the oven to 180 C. Put 18 paper cases in 2 muffin pans or put 18 double-layer paper cases n 2 baking sheets.

Put the butter and sugar in a bowl and beat together until light and fluffy. Gradually beat in the eggs, then beat in the lemon juice with 1 tablespoon of the flour. Using a metal spoon, fold in the remaining flour and the raisins, adding a little milk if necessary to give a soft dropping consistency. Spoon the batter into the paper cases.

Bake the cupcakes in the preheated oven for 15 - 20 minutes, or till done. Transfer to a wire rack and let cool.
