Potato Donuts

Last weekend we went to see our son at his college. Oh how I miss that boy so much and still do. :(( I was excited when hubby told me the plan to visit our son that weekend. I whatsapp-ed him and asked what he would like me to bring. His usual request would be PUFFS. I asked him, anything else? And he said he wanted DONUTS with chocolate coating. "I miss your donuts ma", he said. Huhuhu.... and I miss you boy...

POTATO DONUTS

Ingredients :

3 medium sized potatoes
3 cups flour
1 tablespoon margarine (I used Planta)
2 tablespoons condensed milk
6g dried instant yeast (I used Mauripan)
water if necessary

Note to myself : Next time round, I think I will add 1 1/2 tablespoons of castor sugar to the recipe.

Method :

1. Peel the potatoes skin. Cut into big cubes and wash. Place in a bowl with enough water and boil till soft. Remove from heat and mash the potatoes. Keep aside.
2. In a mixing bowl, add flour, condensed milk, yeast and the mashed potato.
3. Turn on the mixer and knead till a soft and shiny dough is formed. Add water if needed.
4. Make into a big ball. Cover the bowl with cling film and let dough rise till double the size.
5. Roll the dough to 1/2 inch thick. Cut using a donut cutter and arrange on a tray lined with a plastic sheet. Rest for about 10 to 15 minutes.
6. Heat oil in a wok. Fry the donuts till golden brown. Remove the donuts onto a bowl lined with paper towel.
7. Coat the donuts with castor sugar or melted cooking chocolate.
8. Ready to serve and enjoy!

Potato Donuts

Little did I realise that there is no entry for June, 2013 except for that scream-to-myself entry. Time flies and I just can't catch up with time because I am walking and not running. How is that possible to catch up with something that is flying! Hahahaha... otak ku senget lom buat alignment lagi ni! Merepek je kerjanya...

Anyway, I am still alive and breathing well. Alhamdulillah I managed to get to be 47... ha ah Mak chu, bangga tu, siap announce umur lagi... muahahaha.... Thank you to those lovely dearies who had wished me via email and whatsapp. How thoughtful of you ladies and I'm trully touched. Thank you Mak Chu for the treat at Secret Recipe... my very first time there. Yes, don't be surprised, it was indeed my first time to dine at Secret Recipe and I enjoyed it...

Other than that, yes Mak Teh, no news means good news. Alhamdulillah. Many good things happened last month that kept me really occupied. Alhamdulillah... syukur alhamdulillah.

POTATO DONUTS

Ingredients :

200 g flour - sifted
1 1/2 teaspoons instant dried yeast
50g castor sugar
100g potato - peeled and boiled till soft
1 tablespoon condensed milk
1 1/2 tablespoon margarine
1 egg yolk
1/2 teaspoon salt
60ml water (I used less)
Icing sugar to coat the donuts (I used snow powder)
Enough oil for frying

Method :

1. Mash the boiled potatoes while they are still hot and keep aside to cool.
2. In a bowl, place flour, sugar and yeast. Mix well. Add in the mashed potatoes, condensed milk, margarine and egg yolk. Mix.
3. Pour water a little at a time and knead till a soft and elastic dough is formed.
4. Rest the dough, cover with a damp cloth and let it rise.
5. Roll the dough to 1/2 inch thick and cut using a donut cutter. Arrange on a tray layered with a clean plastic sheet. Rest for another 20 minutes or so.
6. Heat oil and fry the donuts till golden brown.
7. Coat with icing sugar or fine sugar or snow powder. You can also coat it with melted chocolate and drizzle with some colored rice.

DONUT TOFU

Ingredients :
200g high protein flour/bread flour
100g all purpose flour
6g instant dried yeast
5g salt
40g caster sugar
20g butter
100g cotton tofu
1 egg - lightly beaten
1 tablespoon fresh milk (warm)
1/2 cup water
oil for frying
extra caster sugar - for coating

Method :

1. Sift both flours into the mixing bowl. Add dried yeast, salt, sugar and butter. Mix well.
2. Make a well in the centre and add cotton tofu, egg and fresh milk. Using the dough hook, knead the mixture, slowly adding water. Continue kneading till a soft and shiny dough is formed.
3. Wrap the mixter bowl with a clean plastic bag and let the dough rise, double the size.
4. Punch the dough to let the air out and roll to 1/2 inch thick. Cut using the donut cutter and arrange on a tray, lined with a clean plastic sheet. Let it rest for another 15 minutes.
5. Heat oil and fry the donuts till golden brown.
6. Coat with sugar and ready to serve.

Donut

I was browsing through the internet yesterday to look for something that I can make, to bring to Abang Ngah's Tahlil yesterday night. Came across this donut recipe that I've never tried before, at Rima's page which she got it from HaSue. The donuts turned out to be soft and lovely. I made it into bite sized donuts. Thank you to these two lovely ladies for sharing the recipe with us. Since I was running out of time, I just coat it with fine sugar.

Ingredients :

500g high protein flour (i used half bread flour and half all purpose flour)
1 packet of instant yeast (11g)
50g Margarine (i used unsalted butter)
1 tbsp Shortening
2 tbsp sugar
2 tbsp condense milk or milk powder
1 egg (lightly beaten)
1/2 tsp salt
200ml warm water
Fine sugar for coating


Method :

1. In a big bowl, add warm water, yeast, sugar, milk, margarine and shortening and stir using spoon lightly and let it rest for 8-10 mins.
2. Once yeast mixture starting to bubble, add half of sifted flour into bowl, add egg and salt too... continue to stir using spoon (in one direction)
3. Once mixture incorporated and not sticking to your spoon, add another half of the sifted flour, mix lightly with spoon and quickly continue to knead dough using your hand till dough no longer sticking to the bowl (you will know if dough is ready when ur dough no longer stick to your fingers)
4. You don't have to let dough rest but if you want a much much more rounder donut, you may do so for 5 to 10 mins
5. Roll dough to about 1/2" thick and cut with donut cutter
6. Heat oil and deep fry donut on medium heat till golden brown (if u prefer a much more fluffier, do rest it for 10mins or so, the more lighter ur donut is, the more fluffier it will be)
7. Once cool, coat donut using fine sugar or melted chocolate..


Bread Maker method :

1. Pour water into the breadmaker pan. Add sugar, condensed milk, egg and salt.
2. Top it with flour. Select the dough function and press start.
3. When the dough is slightly incorporated, add in margarine and shortening and leave the bread maker to finish it's process which will takes about 1 1/2 hour or so.
4. Remove the dough from the pan.
Steps 5 till the end, is similar as the above.

Donuts with Custard Filling

Confirmed, I am someone who will push myself to the max. No doubt! Is that a good thing to do? Well, frankly speaking, I think not! But I still do it...why? I don't really understand myself!

Yesterday I was out of the house almost the whole day... galavanting with dear hubby. Didn't cook for iftar but bought from the nearby pasar Ramadhan. After saying our Maghrib prayers, Syahmi had a quick bite of the Roti John and off we went to send him to his tuition centre. Came back, had our dinner and soon after that, out again doing these and that till it's time to fetch Syahmi at 10.30 pm. Was home by 11pm and had to prepare the ingredients for fried rice tomorrow dawn. Then went upstairs and settled the clothes to be arranged in the cupboard. After that, I ironed a few slacks for hubby and Syahmi's uniforms. By the time I was done with that, it was 12 midnight. Took a quick shower and then only I managed to perform my Tarawikh. After that... MamaFaMi is history!

Thank God I managed to wake up this morning to fry rice for sehri...Alhamdulillah....

I had been wanting to try out this recipe eversince I saw it at Puan CT Delima's kitchen. But I guess, my laziness gets the best of me! Haha... It was only till last week that I managed to fight the laziness (that explaines the punctured blue power ranger photo in earlier entry... hahaha.. just kidding!) and made these donuts. Thank you CT for sharing this recipe with us.


DONUT WITH CUSTARD FILLING

Ingredients :

280 ml water
60g castor sugar
a pinch of salt
2 egg yolks
300g high protein flour
200g plain flour
20g milk powder
1/2 tablespoon baking powder
3 1/2 teaspoon instant yeast
50g shortening

Custard Filling :

1 tablespoon custard powder
1 tablespoon sugar
2/3 cup fresh milk
15g butter
2 teaspoon vanilla essence

Coating :

Enough snow powder

Method :

1. For the dough, I used my breadmaker to do the kneading and the proving. Pour water into the breadmaker pan, followed by sugar, salt and egg yolks.
2. Top it with the dried ingredients except shortening.
3. On the breadmaker and when the dough is just combined, add in the shortening and leave the breadmaker to finish it's job including proving.
4. Once the dough is double the size, remove from the pan and onto a floured surface. Roll to about 1/2 cm thick and cut using your prefered cutter. Arrange on a tray layered with a clean plastic sheet. Leave to rise for about 1/2 hour.
5. Fry the donut on medium heat till golden brown. Remove the donuts onto a kitchen towel to absorb access oil.
6. Make a small slit besides the donut and pipe the custard. Coat the donuts with snow powder.

To prepare the custard filling :

Put all the ingredients except for butter and vanilla essence in a pot and stir with a whisk over slow fire. Stir till the mixture thickens. Remove from heat and add butter and vanilla. Stir well and leave to cool. Ready to use.

Yummy Donuts!

....her arms swung around and hit her long bladed knife.. The knife slid down the counter, pointed end downwards and managed to scrape along her shin. (If I wasn't graphic enough: The knife is brand new). As luck might have it, the pointy end did not do any damage, but the blade did cut a 5cm long gash on her shin, blood gushing out, soaked towels, down to the bone...

What is your reaction when reading the above statement?
When I read each and every world, it sent shivers down my spine. That was what had happened to dear Rima according to her hubby. Get well soon Rima and have enough rest....tak de makna si Rima ni rest... dia dah buat 2 biji kek lagi dalam pada sakit sakit tu....

Tried this donut... or doughnut... recipe from Rima's blog after reading what her hubby said about the donut she made. He said.. "Sedap Ma!"..... and I second him! The donuts are really marvelous, so soft, so yummy! Otherwise, I won't ended up eating just ONE donut....didn't get to eat more though I managed to get about 20 pieces from half the recipe. My kids, surprisingly can't wait to gobble them. And surprisingly too, they came back for more!!! Then it's CONFIRMED DELICIOUS! I just hope that my nephew and nieces and also Sae and family thinks the same. Thank you Rima for sharing the lovely recipe with us. Allow me to repost it here for my future reference..at least....


 YUMMY DONUTS

Ingredients :
(A)
500g high protein flour - bread flour
100g sugar
11g instant yeast
4 egg yolks
200 ml water

(B)
100g butter / margarine
1 tsp salt

White Cooking Chocolate - melted
Cooking chocolate - melted
Sprinkles

Method :

Stir ingredients A, knead until lumpy, add ingredients B, continue to knead until smooth elastic.
Rest dough for 10 minutes.. divide dough into several balls weighing 40g each.
Rest for a further 20 minutes.
Punch a hole through the middle, then fry until cooked. Drain. Chill.
Dip one side surface of the donut in the melted chocolate, sprinkle almond.
Place donut in fridge to harden chocolate..

Rima's way :
I dumped everything in my BM accordingly of cos.. click on ON and after one hr and 10mins my dough was done.. gave my dough a light punch and divided my dough into several balls.. let it sit for another 20mins bef punching a hold thru the middle of the donut.. fry till cook..

My way :
I used my breadmaker to do the kneading and proving job. Once the dough is done, I rolled it to about 1 cm thick and cut using a donut cutter. Arrange the donut rings on a floured tray. Let it sit for another 20 - 30 minutes (depends on the weather), then fry till golden brown.
