PIZZA BASE - A KEEPER RECIPE



PIZZA BASE

Ingredients :

250g high protein flour/bread flour
30g sugar
a pinch of salt
1 whole egg
90ml chilled water from the fridge
50g margarine
4g instant dried yeast (Saf Instant)

For the topping :

Spagetti sauce
Mozarella cheese
Beef pepperoni
Sweet onion - sliced thinly
Olives - sliced
Green capsicum - julienned

Method : Using a mixer

1. Into the mixer bowl, add in high protein flour, sugar and salt. Turn on the mixer with dough hook attached, on low speed.
2. Add in the egg. Increase the speed to medium.
3. Add water a little at a time and knead till the dough is incorporated.
4. Add in the margarine. Continue kneading till well combined.
5. Add in yeast and knead till you get a soft and elastic dough with a window pane effect.
6. Remove the dough from the mixer and divide into two.
7. Roll the dough to a 1/2 cm thick and place them on a baking tray. Prick the surface of the rolled dough using a fork.
8. Spread the spagetti sauce and arrange the toppings to your liking.
9. Cover the baking tray with a clean plastic bag till the dough rises.
10. Bake in a preheated oven at 180C for 20 to 25 minutes. Different oven may have different settings.
11. Enjoy!

Sweet Bun




SWEET BUN
Adapted from : Tok Mak's Sweet Bun Raisins @tok.mak

Ingredients :

1 egg * 
2 tablespoon condensed milk* 
250 ml iced water * (egg + condensed milk + iced water = 300ml) 
100g sugar
1 teaspoon Cream Super
1 1/2 teaspoon salt 
350g high protein flour 
150g all purpose flour 
11g instant dried yeast (saf instant)
2 tablespoons margarine 
Glazing : 
Enough fresh milk

Bread Maker method :

1. Into the breadmaker pan, add in mixture of water, milk powder and egg. Add in cream super, sugar and salt.
2. Top it with high protein flour, all purpose flour and instant dried yeast.
3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine. Leave the bread maker to finish the cycle which will takes about 1 1/2 hour or so.
4. Remove the dough from the pan and divide the dough into 36 equal portions. Roughly about 24g each.
5. Form each portion into a ball. Arrange the rolls on a greased baking tray and leave to prove till double the size.
6. Brush the proved rolls with milk.
7. Bake in a pre-heated oven at 180c for 25 minutes or till golden brown.
8. Once out of the oven, brush with a bit of butter. Place on a wire rack to cool. Keep in an airtight container.

Ultimate Milk Bun




ULTIMATE MILK BUN

Ingredients 

275g high protein flour 
25g milk powder 
150 ml milk 
63g sugar ( original recipe :45 gr) 
25g butter 
10g yeast 
4g salt 
1/2 egg or 29 gr egg 
1/4 teaspoon cream super (I added) 

Method : 

1. Place milk, sugar, egg and cream super into the breadmaker pan. 
2. Top it with high protein flour and milk powder. Sprinkle the dried yeast on top of the flour. 
3. Turn on the breadmaker to Dough Setting, setting 13 on my Empress Breadmaker the old model. 
4. After 5 minutes, add in the butter and let the breadmaker finishes it's cycle which will takes about 1 1/2 hour to complete. 
5. Remove the dough from the breadmaker, round it and let it rest for 10 minutes before shaping it to your liking. 




TOPPING :

100g flour 
100g butter 
100g castor sugar 
25g cornflour 
1 egg white 
1 sachet instant coffee (I used Hazelnut white coffee) 
a pinch of salt 
a bit of mocca emulco 

 Method : 

1. Beat butter and sugar till light. Add in egg white. Continue beating. 
2. Add in flour, instant coffee, cornflour, salt and mocca emulco. Mix well. 
3. Pour the mixture into a piping bag and refrigerate for 30 minutes. 
4. Ready to use. 

 How I did the Roti Boy. 

1. Divide the dough into a 50g ball. Flatten it and place a cube of cold butter in the middle. Secure it nicely and place it in a paper cup. Let the dough rise double the size. 
2. Pipe the topping like a coil pattern. MAKE SURE YOU DON'T GET HYPNOTISED WHILE DOING THAT! HAHAHA... just kidding! 
3. Bake in a preheated oven at 200°C for 20 minutes. Oven temperature and baking time may differ. So do get connected with your own oven. 
4. Ready to enjoy it with a cup of coffee. Heaven on earth!

3 keping wholemeal bread
1 keping keju cheesedale
Tuna chillie
3 hiris tomato
sedikit salad
Cheezy salad sos Lady's Choice

Cara :
1. Di atas sekeping roti, susunkan salad. 
2. Ratakan tuna chillie atasnya.
3. Tutup dengan tomato.
4. Paipkan cheezy salad sos.
5. Tutupkan dengan sekeping lagi roti. 
6. Letakkan sekeping cheesedale.
7. Tutup dengan sekeping roti lagi.
8. Potong 4. Siap.

CROISSANTS

300g tepung roti
7g yis (saf instant)
30g gula
4g garam
1 biji telur
150ml susu sejuk

30 g mentega (Ma guna Planta)
secukupnya Buttercup

CARA MAMA :

1. Mama guna #breadmaker untuk menguli. Tuangkan susu sejuk ke dalam breadmaker pan. Masukkan gula, garam dan telur.
2. Kemudian masukkan tepung roti dan akhir sekali yis.
3. On kan breadmaker ke setting Dough. Bila doh dah bersatu, masukkan 30g mentega. Biarkan BM menguli sehingga licin.
4. Keluarkan doh dari BM dan rehatkan sebentar. Roll doh menjadi segiempat dan masukkan ke dalam plastik. Simpan di dalam peti ais selama 30 minit.
5. Keluarkan doh dan roll menjadi segiempat tepat. Sapukan Buttercup secukupnya di 2/3 bahagian doh. Lipat dari bahagian yang tidak dioles buttercup ke tengah dan kemudian lipat 1/3 bahagian beroles ke atasnya. Simpan dalam plastik dan masukkan ke dalam peti ais selama 30 minit. Ulang proses ini 3 kali.
6. Keluarkan doh dan potong 2 bahagian. Simpan semula 1 bahagian ke dalam peti ais untuk mengelakkan buttercup cair.
7. Roll doh menjadi segiempat tepat yang nipis. Potong doh bentuk 3 segi.
8. Ambil sekeping doh 3 segi dan roll kan, bermula dari yang lebar ke yang tirus. Untuk lebih jelas, boleh tengok di Youtube.
9. Susun di atas dulang pembakar dan biarkan naik. Sapukan dengan kuning telur dan bakar di dalam ketuhar yang telah dipanaskan terlebih dahulu pada 200C selama 20 hingga 25 minit.

Burger Buns




BURGER BUN

Ingredients :

180ml chill water
1 teaspoon salt
2 tablespoons sugar
250g bread flour
50g all purpose flour
2 tablespoons milk powder
1 teaspoon instant dried yeast

40g margarine/butter

White sesame seeds

Bread Maker method :

1. Into the breadmaker pan, pour in the water, salt and sugar.
2. Top it with flour, milk powder and instant dried yeast.
3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine. Leave the bread maker to finish the cycle which will take about 1 1/2 hour or so.
4. Remove the dough from the pan and divide the dough into 6 equal portions.
5. Form each portion into a ball and arrange on a baking tray and place the greased rings. Spray with a bit of water. Leave to rise for another 30 minutes or so.
6. Sprinkle the top of the dough with enough sesame seeds. Brush with the mixture of milk powder and water.
6. Bake in a pre-heated oven at 180°C for 25 minutes or till golden brown

Easy Pizza Dough


EASY PIZZA DOUGH

Ingredients :

½ tablespoon caster sugar
1½ cups lukewarm water
11g instant dried yeast
4 cups bread flour
1¼ teaspoon salt
2 tablespoons olive oil
1 teaspoon dried oregano



Breadmaker method :

1. Mix sugar, lukewarm water and yeast in a small bowl and let it stand for 15 minutes or till frothy.
2. Pour the mixture into the breadmaker pan. Top it with flour, salt and dried oregano.
3. Set your BM to dough setting and turn it on. I used set 13 on my Empress Breadmaker (old model).
4. Once the dough is just incorporated, add in the olive oil. Let the BM do it's job which will take about 1½ hours on this setting.
5. Remove the dough onto a floured surface. Dough will be quite sticky so make sure you have enough flour to deal with the dough. It will be a great help if you have a dough cutter too.
6. If you want to make a regular size pizza, then divide the dough into 2 equal portions. I did one extra large sized pizza. Roll the dough to the thickness you please.
7. Place the dough onto a baking tray. Prick the surface of the piza with a fork. Grate some mozarella cheese on top.
8. Spread some spagetti sauce on top. Arrange the pepperoni on top, then the sliced black olives.
9. Grate more mozarella cheese on top.
10. Bake in a preheated oven at 180°C for 25 minutes.
11. Bring out the pizza from the oven, grate more mozarella cheese on top and bake for another 5 minutes just to let the cheese melts.
12. Ready to serve. Enjoy.

EnaZamri's Sweet Buns (a keeper)


ENAZAMRI'S SWEET BUNS

Ingredients :

400g high protein flour
100g flour
30g milk powder (not baby formula please)
75g caster sugar
1 packet instant dried yeast (11g)
80g whip cream (liquid)
2 egg yolks
8g salt
220g iced water
60g butter


Method :

1. In the bowl of a standing mixer fitted with a dough hook, add in the high protein flour, flour, milk powder, caster sugar, yeast, whip cream, egg yolks and salt.
2. Turn the mixer on, low speed. Pour in the iced water a little at the time till the mixture is incorporated. Add in butter.
3. Turn the speed up to medium high and keep kneading till a soft and shiny dough is formed. Roughly about 10 minutes or so.
4. Remove the dough from the bowl and onto your working sheet. Let it rest for 10 minutes.
5. Divide the dough to about 38g each. Should get 27 pieces.
6. Make the dough into round balls and arranged them in the well greased 6 inch round tins. Let it rest, covered for an hour or till doubled the size.
7. Milk wash to top of the buns.
8. Bake in a preheated oven at 180 C for 30 minutes.
9. Once baked, removed from oven and brush with a bit of margarine on top. Remove the buns from the tins and onto a wire rack to cool. Keep in an airtight container.

Charcoal Buns

Ingredients :

125ml chilled water
65g castor sugar
250g high protein flour
25g milk powder
5g edible charcoal powder (from Bagus Bakery Supplies)
6g instant dried yeast (I used Saf Instan)

40g margarine (I used Planta margarine)

Breadmaker Method :

1. Pour water and sugar into the bread maker pan. Top it with flour, milk powder, charcoal powder and yeast.
2. Set the breadmaker to Dough function.
3. Once the dough is just combined, add in margarine. Leave the Breadmaker to continue doing it's job. I just leave the dough for about 1 hour in the bread maker and it's ready to be shaped.
4. Divide the dough into 6 equal portions. Form each dough into a ball and rest for 10 minutes.
5. Flatten the dough slightly and place arrange on a baking tray.
6. Cover the buns and let it rise until double in size (it takes another 30 minutes, depends on the weather). Brush the buns with some milk mixture.
7. Bake in a pre-heated oven at 180 C for 20 - 25 minutes or till done.
8. Remove from the oven and place on a wire rack to cool.

Chicken Floss Bun

Ingredients :

135ml fresh milk (I used Dutch Lady Full Cream)
35g caster sugar
1/2 teaspoon salt
1/2 egg, lightly beaten
1 teaspoon instant dried yeast (I used Saf Instant)
250g high protein flour - sifted
30g margarine - softened

Filling :
Cold butter - diced

Topping :
1 tablespoon mayonaise
1 tablespoon condensed milk
Chicken Floss



Breadmaker Method :

1. Pour the fresh milk into the Breadmaker pan with the hook attached.
2. Add sugar, salt, egg. Sprinkle the yeast on top.
3. Add in the flour. Place the pan into the Breadmaker machine. Turn on to the dough setting. For my Empress Breadmaker from Cosway I used the number 13 setting.
4. After about 3 minutes or till the dough is just incorporated, add in the soften margarine and leave the Bread maker to do it's job. The process will takes about 1 1/2 hour.
5. Once done, remove the dough out of the pan and onto your working area. Divide the dough into 25g balls. Leave covered with damp clean cloth for 10 minutes.
6. Flatten each dough and place a dice of butter in the middle. Cover it nicely and place it in a papercup and arrange it in a tray. Leave to rise till double the size. Brush with a bit of milk powder and water mixture.
7. Bake in a preheated oven at 180 C for 25 minutes or till golden brown. Remove from oven.
8. Mix the mayonaise and condensed milk together. Brush the mixture on top of the buns and sprinkle with enough chicken floss.
9. Ready to serve. Enjoy!

Soft White Rolls

Ingredients :

250g bread flour
30g skimmed milk powder
30g butter
20g sugar
200g whole milk
3g salt
3g dry yeast

Method :

1. Knead everything together and proof until double in size.
2. Punch out gas and cut into 10 even balls of dough. Leave to rest for 15mins.
3. Shape the dough into round balls. Proof until about double in size.
4. Brush the top of the rolls with mixture of a teaspoon milk powder and a bit of water.
5. Bake in a preheated oven at 180 C for 20 minutes.
6. I brush with a bit of margarine once the rolls were out of the oven, hence the yellowish colour.

Buttermilk Banana Blueberry Bread (oven baked and Airfried)


BUTTERMILK BANANA BLUEBERRY BREAD

Ingredients :

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, at room temperature
1 cup sugar
2 large eggs
1/4 cup buttermilk
1/2 teaspoon vanilla extract
3 ripe bananas, mashed
1 cup blueberries

Credit to my hubby's nephew for this photo. I gave them these to try..


Method :

1. Preheat oven to 350 degrees F.
2. Lightly coat four 5 3/4-inch mini loaf pans with nonstick spray.
3. In a large bowl, combine flour, baking powder, baking soda and salt.
4. In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium-high until light and fluffy, about 2-3 minutes.
5, Beat in eggs, buttermilk and vanilla until well combined.
6. Beat in bananas until well combined.
7. Gradually add flour mixture to the sugar mixture at low speed, beating just until incorporated.
8. Add blueberries and gently toss to combine.
9. Scoop the batter evenly into the loaf pans.
10. Place into oven and bake for 30-35 minutes, or until a tester inserted in the center comes out clean.
11. Remove from oven and let cool for 15 minutes before inverting the cake onto a wire rack.



Baking in Phillips Airfryer :

Set the temperature to 160 C and turn on the Airfryer to 10 minutes. When the light indicator goes off, remove the Airfryer basket and place the baking pan into the basket. Place it back into the Airfryer and turn the timing knob to 20 minutes. After 20 minutes, remove the basket from the Airfryer. Cover the cake pan with a piece of aluminium foil. Shiny side down. Place it back in the Airfryer and set to another 5 minutes or so. When the timer goes off. Just leave the cake in the airfryer for another 5 minutes before removing to cool on a wire rack.

Garlic Bread



HOMEMADE GARLIC BREAD

Ingredients :

1 1/2 tablespoons margarine (I used Planta Margarine)
2 cloves garlic - minced
A dash of dried oregano

Method :

1. Slice the french baguettes. Make sure do not cut through. Place it on an aluminium foil.
2. In a small bowl, mix margarine, garlic and dried oregano.
3. Spread the mixture onto each sides of the sliced baguettes.
4. Wrap the baguettes.
5. Airfry the garlic bread for 8 minutes on 160 C. Remove from the Airfryer and open the foil. Airfry for another 2 minutes or so. Ready to serve.

* Note : I used Phillips Airfryer. You can also bake these in the oven.

Homemade French Baguettes

Yesterday, I had to hear to my daughter's nagging for a number of reasons.

1. Ma, why don't you rest? Why are you still in the kitchen? You are making me tired just by looking at you working non-stop.
2. Ma, why are you continuously experimenting new recipes? And why do they have to be so yummy?
3. Ma, why are you stuffing me with food? I think I am going to be fat if I stay longer in this house. THIS IS TORTURE!
4. Ma.... eat now and stop playing with your phone! (this was when her patience is running thin, waiting for me to eat and mama was busy trying to update her Instagram! Hahaha)

That was what I had to hear yesterday. And what did I do....continue baking and cooking! Hahaha...

Since her toothache is healing well after the minor surgery she had last Tuesday, I had prepared soft diet for her. Yesterday, I made these baguettes for her (Miss Bready). Made these baguettes into garlic bread to be enjoyed with homemade mushroom soup. Recipe to follow later on. I was in the kitchen doing the dishes when she had her dinner with her dad. And I could hear the umppssss and ahhhsss from the dining. And finally, she said... ma, it's delicious. Thank you!

HOMEMADE FRENCH BAGUETTES

Ingredients :

3/4 cup lukewarm water
1 tablespoon honey
1 teaspoon salt
5g instant dried yeast (I used Saf Instant)
2 cups all-purpose flour, plus more for dusting
1 teaspoon margarine (I added)

Breadmaker (BM) method :

1. Pour lukewarm water into the BM pan. Add honey and salt. Sprinkle the instant dried yeast on top.
2. Add flour. Place the BM pan into the breadmaker. Set to dough setting and turn on the BM.
3. Once the dough is just incorporated, add in margarine. Continue kneading and check the dough. If it is sticky, then add enough flour till you get a soft and smooth dough.
4. After the BM has finished doing it's job, which will roughly takes about 1 1/2 hour (kneading and proving), remove the dough from the BM onto a floured surface.
5. Divide the dough into two portions. Let them rest for 10 minutes.
6. Shape into 2 baguettes. Place on a baking tray. Cover with damp clean cloth and allow the dough to double in size.
7. Make deep diagonal slits 1/2 inch deep on top of the baguettes.
8. Bake in a preheated oven at 180 c for 20 minutes until golden brown.

Easy Super Soft Cinnamon Rolls

Yesterday morning, something happened which makes me sad, that I shed tears. Am I being over-sensitive or my hormone is not stable at that moment, I just don't know. What I knew I was sad.

I lost one of my Vision pot! Yeah you may say, it's only a pot mama. You can always buy another one to replace it. But no, this is not JUST a pot. It was my wedding present from my beloved late aunt. And how long have I been happily married? 24 years. So has that pot been with us. It is even older than my first born! Though I take it with open heart, but the sadness is still there...

The night before, I had placed this plastic bottle of salted fish in the cupboard. Next to it was this small glass bottle. I must have not put the plastic bottle properly that when I opened the cupboard yesterday morning, it toppled and knocked the glass bottle out of the cupboard. And where should the GLASS bottle landed? Yeah right on the back of my Vision pot, hence the crack! Why wasn't it the other way round? If the glass bottle had knocked over the plastic bottle and the plastic bottle is the one which knocks my Vision, then I will still have my pot with me today. Well, that's fate. Accept it because there is nothing I can do...

I told my hubby and kids about it on our family whatsapp, and of course adding a bit of drama into it (:D:D:D) as well. My girl said, no worry mom, dad will replace it with a new one. Which dad quickly replied OK. But mama said, well, I had enough. No more Vision Pots now. Whatever's left, I will keep for now. I will re-use the ones I've been using before I took out the Vision set. Why do i sound so traumatized? Because I have lost THREE Vision Pots in less than a year's time! That's why! Huwaaaaaaaa.......

EASY SUPER SOFT CINNAMON ROLLS

Ingredients :

For the Dough:
1/4 ounce package yeast (I used Saf-Instant)
1/2 cup warm milk
1/2 cup warm water (I used iced water)
1/4 cup granulated sugar
1/3 cup unsalted butter, melted
1 teaspoon salt
1 large egg
3 to 3 1/2 cups all-purpose flour

For the Filling:
1/2 cup melted butter
1/2 cup brown sugar
2 Tablespoons ground cinnamon

For the Glaze:
3 Tablespoons unsalted butter, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
3 Tablespoons milk



Method :

For the Dough:
In a small bowl, dissolve yeast in warm water and set aside.

In a large bowl, or the bowl of your stand mixer fitted with the paddle attachment, mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Pour in yeast mixture. Mix in remaining flour, 1/4 cup at a time, until dough is easy to handle. If mixture appears too dry, add 1 tsp. water at a time, mixing well after each addition.

Knead dough in your mixer with the dough hook, or by hand on lightly floured surface, for 5 to 10 minutes. Place in a well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.*

Once doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle.

For the Filling and Baking:
Combine melted butter, cinnamon and sugar, spreading all over dough. Beginning at the longest (15 inch) side, roll up dough and pinch edges together to seal. Cut into 12 to 15 slices.

Coat a baking pan with nonstick cooking spray and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes.

When ready to bake, preheat oven to 350 degrees F. Bake for 20-25 minutes, or until golden brown.

For the Glaze:
Mix butter, powdered sugar, and vanilla. Whisk in milk 1 tablespoon at a time until the glaze reaches desired consistency. (If you like a thinner consistency glaze, add more milk.) Spread over slightly cooled rolls.

Sweet Buns ConviBake

Just a short update today as I am not feeling too good today. Had headache since yesterday night. But alhamdulillah when I checked my blood pressure today, it is just slightly higher than my normal reading, nothing to worry... (ha ah..nak sedapkan hati sendiri! Hihihi...). Maybe I just need a bit of rest after a hectic one week I had been through. Busy but no complaints. I enjoyed it. :)

Yesterday, my darling little sister came to fetch my mom. So I cooked and baked for her somethings to take home. Didn't bake for her any cakes as she is now good in baking. Thanks to Laura Vitale. And oh, because of Mak Chu too, I was hooked to this Laura. But I am not obsessed to Laura as Mak Chu is *OMG* *OMG* Chill dear sister, you can't have EVERYTHING that Laura has okay. Just make do with whatever you can grab hold of. Chill bebeh!

One of the things that I made for her to bring home are these lovely sweet buns. Made this using the leftover sweet bun premix from Golden Republic Malaysia Sdn Bhd. This time round, I just made it plain and finish it off with some coarse sugar sprinkled on top.

SWEET BUN (ConviBake Premix)

Ingredients :

500g ConviBake Sweet a Bun
11g instant dried yeast (I used Saf Instant)
210g chilled water
1 tablespoon margarine (I added)

1 teaspoon milk powder
a bit of water
coarse sugar


Method :

1. In the bowl of a standing mixer fitted with a dough hook, mix the flour and yeast.
2. Turn the mixer on, low speed. Pour in the water a little at the time till the mixture is incorporated. Add in margarine.
3. Turn the speed up to medium and keep kneading till a soft and shiny dough is formed. Roughly about 10 minutes or so.
4. Remove the dough from the bowl and onto your working sheet. Let it rest for 10 minutes.
5. Divide the dough to about 36g each. Should get about 20 buns.
6. Make the dough into round balls and arrange in a well greased baking pan (8" x 11").
7. Cover the pan with plastic wrap and let it rise till double the size.
8. Brush the top of the buns with mixture of milk powder and water. Sprinkle with some coarse sugar.
9. Bake in a preheated oven at 200 C for 15 minutes or till done.
10. Let it cool for 5 minutes. Remove onto wire rack to cool. Enjoy. If there are any leftovers, keep in an airtight container.

Mexican Bun II

F.O.R  T.H.E   S.O.U.L

Tak perasan airmata ini menitis....
Dalam perjalanan balik dari mall. Aku menyelusuri lorong belakang mall. Hajatnya nak baiki kasut. Dah tercabut tapak.

Nampak seorang pakcik tua di kaki lima. Orang kurang upaya. Manusia normal seperti kita, cuma tanpa sepasang kaki. Beliau tengah mengilat kasut seorang lelaki bersut pejabat. Lelaki itu berdiri. Kakinya pada papan kasut yang disediakan. Pakcik tua tekun menjalankan kerjanya. Kami menghampiri pakcik tua tersebut. Tunggu giliran.

"Dah siap ke? Lambat betul la kiwi pun." Lelaki tu mengeluh-ngeluh.
"Dah siap, tuan." Pakcik tua memberhentikan gosokan. Lap kali terakhir kasut lelaki yang sedang berdiri tersebut.
"Tak nampak berkilat pun. Berapa?" Lelaki itu tanya harga.
"RM3.00." Pakcik itu senyum jawab.
"Gila mahal! Dahlah tak berkilat langsung!" Sambil dia mengeluarkan 3 keping note biru. Campak ke papan kasut. Baru saja pakcik mahu mengutipnya, diletakkan kembali kasut atas tangan pakcik tersebut. Pijak tangan pakcik! Pakcik mengaduh perlahan. Nampak berkerut mukanya yang berkedut seribu.
"Kalau buat kerja tak elok, ni lah makan dia!" Lelaki tu ketawa kemudian mengalihkan kasutnya. Berlalu dari situ.

Aku dan kawan panas hati melihat kejadian itu. Lantas aku berteriak, "Woi tua kutuk! Kau tak ada hati perut ke pijak tangan orang tua?" Lelaki itu berpaling. Kemudian, ketawa. Seraya angkat jari tengahnya pada kami. "Pergi mampus kau orang semua." Dia tak layan. Terus berlalu. Aku cuba kejar. Nak terajang beliau. Tapi segera dihalang pakcik tua. "Sabar, nak. Tak mengapa. Tak mengapa." Pakcik tua senyum sambil pegang sebelah kakiku. Bagaimana pakcik boleh bersabar sedangkan kami dah hilang sabar? Kami duduk bersila di sebelah pakcik di kaki lima.

"Allah dah banyak kali sebut Allah bersama-sama orang yang sabar dalam al-Quran. Biarlah Allah yang tunjuk amarah-Nya. Amarah pakcik, amarah kamu berdua tidak sebesar amarah Allah. Murka Allah itu lebih ganas. Lebih dahsyat." Pakcik senyum lagi.
"Tapi lelaki tu dah melampau!" Aku tak puas hati. Kawanku diam gigit bibir. Tahan marah agaknya.
"Jangan marah. Ingat. Ni cuma kesakitan kecil dibandingkan dengan umat Islam di Syria, Afrika, dan lain-lain. Di Afrika, kepala orang Islam dipijak hingga lumat. Di Syria, orang Islam disembelih hidup-hidup, disiat, dirogol. Apalah sangat sakitnya tangan pakcik ni. Tak luka pun. Dah, jangan marah ya. Ni nak baiki kasut ya?"

Aku mengangguk perlahan. Sambil serahkan kasutku. Pakcik tu segera menjalankan tugasnya. Tampal dan jahit mana yang patut. Dibersihkan kasutku hingga nampak baru. "Siap. RM5.00." Kawanku keluarkan note RM50. Dihulurkan pada pakcik. "Pakcik, ambillah, tak perlu berikan baki." Pakcik tu menolak.

"Walaupun untung pakcik sehari-hari tidak banyak. Tak sampai RM50 pun sehari, tetapi pakcik bersyukur. Yakin yang sikit itulah rezeki Allah yang bersih lagi halal. Makin banyak duit di tangan pakcik, makin gelisah hati pakcik. Lagipun pakcik tak sara sesiapa melainkan diri sendiri. Ramai orang dapat duit banyak. Dapat duit cara cepat. Dapat duit dari keuntungan modal orang bawahan, downline dan sebagainya. Tapi duit itu segera habis. Duit itu tidak berjaya menenangkan hati. Tidak berjaya melapangkan dada."

Nak tak nak, pakcik tu nak RM5 juga. Taknak RM50. Kami akur.

"Doakan pakcik. Anak-anak ni soleh. Doa orang soleh dimakbul Allah. Doakan pakcik bahagia di alam kubur. Doakan pakcik dikurnia Syurga. Pakcik bimbang, kerana pakcik tidak berdaya segera ke masjid tiap kali masuk waktu solat, selalu terlewat sebab pakcik berjalan dengan tangan. Bimbang Allah marah. Bimbang Allah hukum pakcik sebab lambat ke masjid. Tolong ya."

Pakcik senyum. Namun di matanya berkaca-kaca. Kawanku peluk pakcik tu erat-erat. "Insya-Allah pakcik. Amin, amin, amin."
Kami bersalam kemudian mengucapkan selamat tinggal pada pakcik tua.

Dalam perjalanan pulang, aku terasa sungguh ke dalam hati. Kami dikatakan soleh. Hanya kerana kami pakai kopiah.
Pakcik takut dihukum Allah kerana lambat ke masjid. Aku langsung tidak ke masjid kecuali solat Jumaat sahaja.
Pakcik sabar. Aku sebaliknya.
Akulah bahan api neraka yang sebenarnya. Aku.
Tak semena-mena air mata turun sendiri. Tak mampu ditahan lagi bertakung di empangan. Kolam air mata ini.

Last Ramadhan, I came across this Golden Republic Malaysia Sdn Bhd facebook via one of Saiful Nang's posting in his facebook. I was interested to get their product and since Mr Hubby had been super nice that weekend, he took me to this outlet and I bought 1 big plastic bag of their product. A packet each, to try. It was only yesterday that I managed to give this sweet bun premix a try.

Whenever I bake or cook, I can some how or rather predict the end product. If the mixture or the dough that I'm handling at that moment doesn't feel good, or if I have a mix feeling about it, then the end product will be disappointing. But yesterday, I had such a lovely time. Thanks to the premix dough. The dough rose nicely. Easy to handle and the taste is yummilicious.
*batting eyes* "Hubby darling... can we go again to Golden Republic again to get more"

I used the premix sweet bun flour for the dough. As for the filling and the topping, I used the one that I've baked before.

Ingredients (Dough) :

Method :

1. In the bowl of a standing mixer fitted with a dough hook, mix the flour and yeast.
2. Turn the mixer on, low speed. Pour in the water a little at the time till the mixture is incorporated.
3. Turn the speed up to medium and keep kneading till a soft and shiny dough is formed. Roughly about 10 minutes or so.
4. Remove the dough from the bowl and onto your working sheet. Let it rest for 10 minutes.
5. Divide the dough to about 50g to 52g each. Should get about 13 to 14 buns.
6. Make the dough into round balls and let it rest for another 40 minutes or so.
7. Flatten the dough and add filling in the middle. Cover the filling with dough.
8. Arrange the dough on your baking tray.
9. Cover with a clean kitchen towel. Let them rise.
10. Make a swirl on top of the rised buns with the topping.
11. Bake in a preheated oven at 200 C for 12 to 15 minutes or till done.

Ingredients (Filling) :

100g salted butter ~ softened
1/4 teaspoon vanilla essence
35 g brown sugar

Method :

1. Beat butter with an electric mixer on medium speed using the paddle attachment for three minutes. (I beat by the hand)
2. Add in vanilla essence and brown sugar. Beat till creamy.
3. Refrigerate the mixture until firm.
4. Divide mixture into 20g portion ball. Keep refrigerated until ready to use. (I just divide the mixture according to how many doughs I managed to get)

Ingredients (Topping) :

65 g butter ~ softened
55 g icing sugar ~ sifted
1 Grade A egg ~ lightly beaten
1/3 teaspoon coffee flavouring (available from bakery supplies shop) **or you can use 1 1/2 teaspoons instant coffee dissolved in 3/4 teaspoon water
A pinch of ground cinnamon can be added to the coffee flavouring for extra flavour
65 g low protein (high ratio) flour ~ sifted

Method :

1. Beat butter and icing sugar using an electric mixer with the paddle attachment on medium speed for 5 minutes until mixture is light and fluffy. (I beat by the hand).
2. Gradually beat in egg.
3. Add in coffee flavouring.
4. Sift flour into mixture and mix on low speed until combined.
5. Refrigerate until ready to use.
