Sweet Things...

My 1st Painted Cake goes to my new Daughter-in-Law Chelsea Campbell!

I had so much fun painting this cake that I can't wait to paint another one.  My son likes to bake and suggested we go into business!  Said he'll bake and I paint.   The idea of a CFL (Cottage Food Operations License) has been tossed around this house for the last 6 months or so.   I took a cake decorating class "many many Moons ago" as my Dad would say.  (That's really the only Indian thing he has ever said now that I think about it. hahaha Another story for another time.) Anyway!  I enjoy decorating them but not so much baking them, I'm more of a cook than a baker, so it could work.   Cakes are swirling around in my head.  Pumpkins with Pumpkin Spice, Roses with Red Velvet,  Carrots with Carrot Cake, Poinsettia & Holly, Sunflowers, Hydrangea, Trumpets, Shamrocks, Robots,.............Angels!   (Did she say robots?)

I painted this cake with regular food coloring. I know there are cake paints on the market that are very much like acrylic paint,  but have never looked at them but be assured I will be getting some soon! I started with new paint brushes, a flat brush & a liner brush.  Watering down the food color a little and painting from light to dark just like water colors, adding layers of color worked out best & was less stress, too much color and your design could be done for, or at least your fondant.  I used the flat brush like a calligraphy pen for the writing and then went over the top with the liner brush. If your brush gets too wet and a lot of color goes on it's easy to fix though, just dry your brush to use it to mop up the extra color like a little sponge.   I learned a lot from this little cake.  Green & red make brown & black depending on the intensity of either color. So one box of ordinary food color will make just about any color that you need.  If ever I make another lemon cake I will stipple the little lemons on the bottom to give them some texture.  I chickened out when it came to writing on the cake. I folded under the pressure...I only had 1 box of fondant....I didn't want to ruin it... so I made the banner.

Of course I have already started a little book of cake illustrations & ideas. I did each of these in a matter of minutes, but if time was taken to properly draw them out,  I think these could be cool & fun to paint. Paintings of Painted cakes......

Channeling an Old Chapter...

... I started painting these not so typical southwest paintings and haven't stopped... Living in Tucson as a young teenager still holds fond memories. The heat was well worth enduring because I still have a friend in my life from that chapter! See the hidden XOXOs in them hills?

Keepin' It Real...

 ...fresh that is! Check out this cilantro that has been in the frig for 4 weeks and going.  I love this new trick and it works for other herbs too.  I used to buy cilantro and within a week it would be bad even though I kept it in water in the frig or washed & wrapped in paper towel like Rachel Ray.  Whichever, I always seemed to toss 1/2 of the bunch out eventually. Now I wash & dry it, put it in a dry clean jar and place it in the frig.  It stays fresh & ready to use!

I first tasted cilantro in salsa at my favorite Mexican restaurant a co-worker introduced me too back in the early 80's. (Louis's in Sacramento) I wasn't sure I liked it. It was not a flavor I was used to, it was weird, with an oily soapy taste, but this was no sissy salsa! They weren't shy with the Serrano peppers and that fire alone kept me coming back for more, so cilantro quickly grew to love it.  Sadly the old mom & pop run Louis's has been moved, he has passed and his son's have taken over & opened their own places with the same recipes.   There are so many ways I use it now besides salsa.  I use it when I make Thai, Vietnamese, Chinese, Indian curries, soups, sandwiches, sauces, & dressings. My frig can't be without it.
Now if I could only get it to grow....

4 weeks and going! Still fresh & usable.

5 C boiling water
3 TBS salt
3 TBS sugar
5 TBS white vinegar
6 cloves of sliced garlic
*
This brine covers approx. 20 jalapenos, unless they are Epic in size!

I'm a Dipper...

...but not a Double Dipper! I love dip. All kinds of dips. Dips intrigue me, so do sauces but that's another story. Actually, it's a love/hate relationship. haha I do feel a little less guilty eating this dip because there is some protein in it! I'm a tofu lover too. :) 


Yummy Garlic Ranch Tofu Dip
1/2 Block of Firm Tofu
(could use soft tofu if you prefer)
1/2 C Sour Cream
1 Tbsp Dry Ranch Seasoning Mix
1 green onion
1 clove garlic
2 Tbsp lemon juice ( may add more if too thick)
salt & pepper to taste
Put all in food processor and blend until smooth.
Serve Cold.

Hot off the Griddle...

...Just had to share this! I was craving hot water cornbread & I had a pot of kale and you know I have lots of garlic!...  These were so quick & easy, delicious & a little better for me than regular hot cornbread.  Crunchy & crispy on the outside, soft & creamy on the inside. Yum!

Crunchy Garlic Kale Cornbread Croquette
1 1/3 C boiling water
1 tsp salt
1 C cooked Kale (with all water squeezed out)
1 C Yellow Cornmeal
2 Cloves of Garlic
Oil for frying
*
Add cornmeal to boiling water & stir to remove lumps. Add salt, kale & garlic. Let sit for a few minutes to swell up.  Spoon into lightly oiled pan & fry until firm & golden brown.

A Song, A Service & A Show!...

... On Sunday I actually slept in late, which is rare. 
Must have been that cushy bed.
It was nice but at the same time I was very disappointed
that we missed church services at Grace Cathedral. 
We decided to take a walk down to Chinatown,
 just a few blocks at the bottom of the hill. 
While standing in front of a little tea shop,
a big man in a black suit, bowler hat & a
big beautiful husky baritone voice came up to me & 
sang me a joyful spiritual song! 
Unfortunately I didn't get his picture. 
After that Hubby was inspired & decided we should
walk up California Street & go visit the Cathedral anyway.

took every butt muscle we have. But Surprise!
(no pun intended) It was worth it!
When we got there they were having a special
Asia- America service!
So I got a song, a service & a show!
 
 
 
Satyr-1, a street artist we met by the park.
Of course I had to stop & watch for a second.
 I can't wait to go back & see his work finished.

After all the walking up & down hills,
and the beautiful Asian service;
Hubby said he was craving Japanese food!
So we popped into Sushi Toni
on the way back to our place and got a little bite.

Rollin' In Dough...

...real dough that is!   This is how my son & I spent the morning....


We even ground our own chicken & pork for the filling, which consisted of carrots, cabbage, bean sprouts, garlic, celery & green onions; then a little soy sauce, salt & pepper.  Some Chinese Five Spice was added to the pork dumplings.  We tested the filling by putting a little of it on a dish in the microwave for a minute.  We had fun!  Clean up was easy too because I laid out brown paper all over the counter tops before we started.  
*Dough Recipe*
2 Cups
1 Cup warm water
Put all in food processor and process until it clumps together & is a smooth ball.  Dust with flour, wrap in plastic and let rest 20 min. while you make your filling.  Divide dough in half, then roll into log about 10" long. Cut log into 1/2 pieces. Then flour & roll into 3" circles. Spoon about a tablespoon of filling into center, fold over, then crimp edges.

There's No Such Thing...


...as a bad photo. Well, ok, maybe there is, but I'm having fun learning to crop them before sending them to the bin. Just look how cropping these photos, one with bobbing strangers & one with lots of glare , are saved by a little cropping! I think the long skinny pictures would look cool on scrapbook pages.
